This recipe was given to me by my Aunt V, and I found it so easy and it was just full of flavor and so different-tasting than what we were used to. It was something new to my family and we love it! It is pretty versatile; you can add more or less of an ingredient to your taste.

1 (8 ounce) package egg noodles
10 slices bacon, chopped
1 small onion, chopped
1 (14 ounce) can sauerkraut, drained
1 (10.75 ounce) can condensed cream of mushroom soup
¼ cup milk, or more to taste
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in noodles and return to a boil. Cook, uncovered, stirring occasionally, until barely tender and firm to the bite, about 6 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until barely crispy and fat is rendered, 6 to 7 minutes. Reserve 3 tablespoons fat in the pan; drain bacon slices on paper towels.
  • Drain noodles. Cook onion in the skillet until softened, 4 to 5 minutes. Mix in noodles to coat.
  • Transfer noodle mixture to a casserole dish. Toss in sauerkraut, bacon, and mushroom soup. Measure milk into the soup can, shake, and pour into the dish. Mix to combine; season with salt and pepper.
  • Bake in the preheated oven until heated through and bubbling, 20 to 30 minutes.

1/2 pound (2 sticks) butter
1 large onion (coarsely chopped)
1 (32-ounce) container sauerkraut (drained; rinsed or unrinsed, as desired)
1 pound kluski-style noodles (cooked and drained)
1 (14-ounce) can mushrooms (stems and pieces, undrained)

Steps:

  • Gather the ingredients. Pre heat oven to 350 F.
  • In a Dutch oven, sauté onion in butter until translucent. Add kraut and cook over medium-low for 15 minutes, stirring frequently.
  • Add cooked noodles to the sauerkraut mixture in the Dutch oven. Add undrained mushrooms, mixing thoroughly. Adjust seasonings if necessary.
  • Transfer to a large casserole dish that has been coated with cooking spray.
  • Bake 45 minutes or until top just starts to brown. Serve hot.

I sampled this recipe at a 25th anniversary party and was told it was a family favorite, courtesy of a Polish grandmother. I shared the recipe with my sister-in-law's family and she told me her five-year-old son loved it so much that he would eat it cold for breakfast! Every time our family gathers now, someone brings this dish.

2 cups uncooked egg noodles
1/4 cup butter, cubed
1/4 cup chopped onion
1 cup sauerkraut, rinsed and well drained

Steps:

  • Cook noodles according to package directions; drain. , In a small skillet, melt butter. Add onion; saute until tender. Add noodles and sauerkraut; cook and stir over medium heat for 2 minutes. Reduce heat; simmer, uncovered, for 10-15 minutes, stirring occasionally.

8 oz uncooked egg noodles
1 1/2 lb lean (at least 80%) ground beef
1 small onion, chopped (1/4 cup)
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (32 oz) sauerkraut, undrained
2 cans (10 3/4 oz each) condensed cream of chicken soup
2 cups shredded Swiss cheese (8 oz)
Chopped red onion, if desired

Steps:

  • Heat oven to 350°F. Cook and drain noodles as directed on package.
  • While noodles are cooking, cook beef, onion, salt and pepper in 10-inch skillet, over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • In ungreased 3-quart casserole, mix noodles, beef mixture, sauerkraut, soup and 1 cup of the cheese.
  • Bake uncovered 45 minutes. Sprinkle with remaining 1 cup cheese. Bake uncovered 5 to 10 minutes or until cheese is melted. Sprinkle with red onion.

1-1/2 pounds pork stew meat
1 medium onion, chopped
2 celery ribs, chopped
1 can (14 ounces) sauerkraut, undrained
8 ounces egg noodles, cooked and drained
1 can (10-1/2 ounces) condensed cream of mushroom soup, undiluted
1 jar (4-1/2 ounces) whole mushrooms, drained

  • Preheat oven to 350°. In a large skillet, heat oil over medium heat. Brown pork. Add onion and celery; cook until vegetables are crisp-tender. 1 1/2 lb sausage
16 oz noodles, cooked
28 oz sauerkraut, canned
2 Tbsp butter/margarine

Steps:

  • 1. Brown sausage, break up as it cooks, drain off grease. Cook Noodles according to package, DO NOT over cook.
  • 2. Layer in a 13 X 9 baking pan. Half of the noodles, half of the sausage, half of the sauerkraut (no need to heat kraut) Repeat layers in order again, then dot with the butter.
  • 3. Bake in 350 degree over for 30-40 min. or until heated through and the top is starting to brown. This is an old depression recipe that my Grandmother would make.

12 ounces egg noodles, cooked
1/3 cup flour
1/3 cup butter, melted
1/4 teaspoon pepper
1/2 teaspoon dry mustard
3 cups milk
1 cup cheddar cheese, shredded
2 cups sauerkraut, drained
16 ounces kielbasa, ring
1/2 cup breadcrumbs

Steps:

  • Cook egg noodles as per directions on package. I really like the Pennsylvania Dutch Kluski noodles as they add great texture to this dish, but I'm sure any thick egg noodle will work. Set aside.
  • Slice or cube kielbasa - we cube as we like it spread throughout the casserole more thoroughly.
  • Heat butter in dutch oven until melted, stir in flour and seasonings. When mixture is well combined add milk. Bring to a boil for one minute, stirring constantly.
  • Add 3/4 cup of cheese, stir until melted.
  • When sauce is ready stir in sliced kielbasa, drained sauerkraut and pre-cooked egg noodles.
  • Pour into a 3 quart casserole.
  • Mix remaining cheese with bread crumbs and sprinkle over casserole.
  • Bake at 375° for 20 minutes or until heated through.

3 fresh minced garlic cloves (optional)
2 stalks celery, chopped

8 ounces noodles, cooked and drained (any kind is good)
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 1/2 cups canned mushroom stems and pieces, drained
salt and pepper

Steps:

  • Set oven to 350 degrees.
  • Grease a 2-quart casserole dish.
  • In a large skillet, brown the pork pieces.
  • Add in the onions garlic (if using) and celery, cook until soft but not brown.
  • Stir in the sauerkraut (with the juice), cooked noodled, undiluted soup and mushrooms; season with salt and pepper to taste; mix well to combine.
  • Spoon into a greased casserole dish.
  • Cover, and bake for 1-1/2 hours, or until the meat is tender, stirring occasionally.
