Thimble Cookies image

Amish women will use a thimble to make the tiny holes in the center for filling with jam. If you don't have a thimble, you can use the back of a small spoon or our thumb. From The Amish Cook's Family Favorite Recipes.

Number Of Ingredients 6

1 cup(s) unsalted butter, softened
1/2 cup(s) sugar
4 large eggs
1 teaspoon(s) vanilla
2 cup(s) all purpose flour
1/2 cup(s) jam, any flavor

Steps:

  • Preheat oven to 325F. In a large bowl, cream the butter and sugar until well blended. Beat in the eggs and vanilla. Work in the flour until a firm dough forms. If the dough seems too sticky, let it chill for a few hours in the refrigerator.
  • Form the dough into 1-inch balls and place two inches apart on an ungreased baking sheet. Use a clean thimble to press a hole in each one. Fill the hole with a small amount of jam (easy if you put the jam in a pastry bag or a ziploc with the tip cut).
  • Bake until the edger of the cookies are golden brown and the jam begins to bubble, about 25 minutes. Cool the cookies on a wire rack. Store in a sealed container. They will stay fresh for up to 5 days.
