GRANDMA'S NOODLE PUDDING (KUGEL)

My grandma gave me her recipe for this family favorite. We always ate this at Hanukkah dinner, but I could really eat it for any meal, anytime!

1 (8 ounce) package broad egg noodles
2 tablespoons butter
3 eggs, separated
1 cup white sugar
1 ½ teaspoons ground cinnamon
2 apples - peeled, cored and chopped
¼ cup raisins
½ cup chopped almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the egg noodles, and return to a boil. Cook uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well. Place cooked noodles into a mixing bowl.
  • With an electric mixer, beat egg whites in a bowl until they form stiff peaks; set egg whites aside. Whisk the egg yolks together in a bowl until smooth, and mix in the sugar until well combined. Pour egg yolk mixture over the noodles, and mix in the cinnamon, apples, raisins, and almonds. Gently fold in the beaten egg whites, trying to keep as much volume as possible. Pour the kugel into the prepared baking dish.
  • Bake in the preheated oven until the kugel is browned and the center is set, about 30 minutes.

8 ounces broad egg noodles
1/4 cup butter
2 large eggs, lightly beaten
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt
8 ounces ricotta cheese (if you can find it, pot cheese is more authentic) or 8 ounces pot cheese (if you can find it, pot cheese is more authentic)
1 cup sour cream or 4 ounces soft cream cheese
1/2 cup raisins
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350. Grease an 8-inch square baking dish.
  • Cook noodles until tender, drain.
  • Put noodles in a large bowl, add the butter, and stir until butter is melted.
  • Beat together eggs, sugar, vanilla and salt. Stir in the ricotta and sour cream or cream cheese. Stir into the noodles and add the raisins.
  • Pour into prepared baking dish. Sprinkle with cinnamon.
  • Bake until golden brown, about 45 minutes.
  • Serve warm.

3 tablespoons butter (plus extra to grease dish)
5 large eggs, beaten
½ cup heavy cream
¼ cup sugar

  • Heat oven to 350 degrees F.
  • Butter a large 13x10-inch (4 quart) baking dish; set aside.

6 onions, diced
⅛ cup vegetable oil for frying

An old-time noodle custard dessert recipe with a bit of a modern twist. Layered egg noodles with apples, pears and dried cranberries baked in sweet custard. It has a warm grandmotherly taste and feeling to it. Simple yet rich in flavor with little effort in preparation sure to please many in the autumn. It takes advantage of apples and pears harvested in the fall along with tangy sweet dried cranberries.

1 large apple - peeled, cored, and chopped

1 (16 ounce) bag egg noodles, fine baby style
2 (8 ounce) cream cheese, room temperature
1 cup butter
1 pint sour cream
1 pint heavy cream
2 cups sugar
10 -12 eggs
1 teaspoon vanilla
cinnamon

Steps:

  • Boil noodles according to directions on package and drain.
  • In seperate pot melt butter, once melted, take off the heat and add cream cheese and heavy cream.
  • Beat the eggs in a separate bowl. Add sugar and vanilla to the eggs.
  • Combine the eggs and cream mixture and pour into a large Pyrex baking dish.
  • Add the noodles and mix. Sprinkle with cinnamon to taste.
  • Bake at 350 degrees F. for 1 hour.

SWEET NOODLE PUDDING/KUGEL (NUT TOPPING)

I like the way this sounds but haven't tried it yet. It's from Marcia Saltzman in Pingry Cooks. It has chopped nuts in the topping which is a bit different from the usual. If making for company, make sure there are no peanut allergies! You need to have this in the refrigerator all day or or night before baking so plan accordingly.

1/2 pint sour cream

Steps:

  • Cook noodles shorter time than stated on the package; drain and stir in next 6 ingredients and mix well.
  • Put into a baking dish.
  • Mix topping ingredients and spread over noodles.
  • Cover and refrigerate all day or all night before baking.
  • *You may freeze this when ready to refrigerate and then thaw slightly before cooking and bake longer.
  • When ready to bake, place in a preheated 350 degree F. oven for 1 hour.
  • Topping should be golden brown.

One 16-oz. package thin egg noodles
1/2 cup canola oil
1 cup sugar
6 eggs, beaten
1 1/2 teaspoons kosher salt
1 tablespoon finely ground black pepper

Steps:

  • Preheat oven to 350°F. Cook noodles according to package directions; rinse and drain well. In a heavy skillet, combine oil and sugar over medium heat. Cook, stirring constantly, until sugar is very dark but not burnt, about 11-12 minutes. Remove from heat. In a large bowl, quickly combine drained noodles and caramelized sugar. Stir to incorporate. Let cool at least 10 minutes, then add eggs, salt, and pepper and stir to combine. Grease the bottom and sides of a 6-quart soup pot or Dutch oven and pour noodle mixture into pot. Do not cover pot. This is a very sweet noodle pudding. Serve this as a sweet side dish like you would a Thanksgiving sweet potato casserole. You may halve this recipe if you like, in which case use 3 medium eggs. Please use mild curry powder in this.

4 cups freshly cooked egg noodles, cooked according to pkg directions & drained, measured after cooking
2 tablespoons unsalted butter or 2 tablespoons margarine
1 1/2 cups ricotta cheese, drained well
1 (8 ounce) package cream cheese or 1 (8 ounce) package low-fat cream cheese, softened to room temperature
1/2 cup granulated sugar
5 eggs, lightly beaten
4 -5 raw carrots, peeled and sliced into 1/4 inch thick coin shapes (measuring 2 cups once sliced)
1/2 teaspoon granulated sugar
2 tablespoons brown sugar
1 teaspoon butter
1 pinch salt
3/4 teaspoon mild curry powder (do not use spicy!)
1/2 cup raisins
3/4 cup chopped pecans
1/2 cup butterscotch chips
1 tablespoon brown sugar

Steps:

  • Preheat oven to 350F and lightly grease a 9x13" glass casserole dish.
  • Prepare noodles according to package directions, drain and return to pot (off of the heat.) Add butter to noodles and stir gently to coat; set aside to cool slightly.
  • Meanwhile, place cut carrots and 1/2 tsp granulated sugar into a small saucepan and cover with cold water.
  • Bring to a boil, then lower heat to medium-ish heat and cook until fork tender (about 10-15 minutes).
  • Drain carrots and return to same pot (but off of the heat).
  • To the carrots, the 2 Tbsp brown sugar,the curry powder, the raisins, and a teaspoon of butter and stir until combined and butter has melted; set aside.
  • Get a large mixing bowl and using a spoon (not a mixer!), stir together the drained ricotta cheese and the cream cheese until well blended.
  • Add the 1/2 cup sugar and the eggs and mix until smooth.
  • Slowly add the cooled noodles, stirring to combine the egg mixture with the noodles.
  • Spread half of the noodle mixture into the prepared casserole dish.
  • Pour the carrot mixture over the noodle layer, evenly distributing the raisins& the carrots.
  • Top with remaining noodle mixture, spreading with a rubber spatula.
  • Combine topping ingredients and sprinkle over the surface.
  • Bake, uncovered, in the center of the preheated oven for 35-40 minutes or until golden and set.
  • Remove from oven and let cool 10-15 minutes before cutting into squares and serving.

6 tablespoons butter, melted
1 pount broad egg noodles
2 cups (1 pound) lowfat cottage cheese
2 cups sour cream
4 eggs, lightly beaten
1/2 cup sugar
1 teaspoon salt
1/2 cup raisins
1 granny smith apple, peeled and minced
1 cup plain bread crumbs
1 teaspoon cinnamon
1 teaspoon brown sugar

Steps:

  • Preheat oven to 350 degrees. Use some of butter to grease 9 inch Pyrex dish. Cook noodles in boiling salted water for 8 to 10 minutes. Drain well. In a large bowl, combine cottage cheese, sour cream, eggs, sugar, salt, raisins and apple. Mix well. Add drained noodles and mix further. Turn into baking dish. Combine breadcrumbs with all but 1 tablespoon of remaining melted butter, cinnamon and brown sugar. Cover top of kugel with this mixture and drizzle the remaining butter over top. Bake for 45 minutes to 1 hour.
