Pinto Bean Pie is one of her favorite recipes to make, especially when she's planning special holiday meals. If you'd like to dress up each slice, top them with a dollop of whipped cream and a pecan. -Valerie Elijah, Dayton, Ohio

Number Of Ingredients 9

1/2 cup canned pinto beans, rinsed, drained and mashed
1/3 cup butter, melted
1 teaspoon vanilla extract
1-1/4 cups sugar
1/2 cup sweetened shredded coconut, finely chopped
2 eggs, lightly beaten
1 unbaked pastry shell (9 inches)
1/2 cup chopped pecans
Whipped topping, optional

Steps:

  • In a large bowl, combine the beans, butter and vanilla. Stir in the sugar and coconut. Add eggs; stir well. Pour into crust. Bake at 350° for 30 minutes. , Sprinkle with pecans; bake 15-20 minutes longer or until a knife inserted in the center comes out clean but moist. Cool on a wire rack. Serve with whipped topping if desired. Refrigerate leftovers.

1 (16 ounce) box confectioners' sugar
1 cup peanut butter
4 tablespoons hershey's cocoa
1 teaspoon vanilla
1/2 lb butter

Steps:

  • Melt butter, let cool. Mix peanut butter, vanilla and butter by hand. Add cocoa, add 10x sugar, mix well by hand. Place in a square pan. In 15 minutes its ready! Cut into squares and enjoy~.

This is a delicious protein packed, yet low fat candy recipe. You have to taste it to believe it. And its fun to ask people to guess the secret ingredient.

1 c cooked pinto beans, unseasoned
3/4 c cocoa
1/2 c melted butter
1 Tbsp vanilla (yes 1 tablespoon)
2 lb powdered sugar
1 pinch salt (do not add if beans have any salt in them)
1/2 c chopped pecans

Steps:

  • 1. Mash the beans. Mix them with the margarine, cocoa and vanilla. Stir in the sugar and pecans.
  • 2. Butter a 9 by 13 inch pan and spread the bean mixture in this. Put into the refrigerator and chill thoroughly. Cut into squares, serve.

My neighbor gave me this recipe. She found it on a Dole website. Haven't tried it yet but it sounds tasty!

Number Of Ingredients 7

1 large ripe banana
2/3 cup butter or 2/3 cup margarine
2 teaspoons vanilla extract
2 1/2 cups rolled oats
1/2 cup packed brown sugar
1 cup semi-sweet chocolate chips
1/2 cup peanut butter

Steps:

  • Finely chopped banana (1-1/4 cups).
  • Melt butter in large skillet over medium heat; stir in vanilla.
  • Add oats and brown sugar.
  • Heat and stir 5 minutes.
  • Set aside 3/4 cup oat mixture.
  • Press remaining oat mixture into greased 9-inch square baking pan.
  • Sprinkle banana over crust.
  • Melt chocolate chips and peanut butter together over low heat.
  • Pour and spread over banana.
  • Sprinkle with reserved oat mixture; press down lightly.
  • Chill 2 hours before cutting.
  • Store in refrigerator.
