I love this recipe because when I get bored I go to my kitchen. What I do there is bake yummy treats.

¾ cup firmly packed brown sugar
½ cup butter, softened
1 teaspoon vanilla extract
2 cups all-purpose flour
1 (14 ounce) can sweetened condensed milk
½ cup miniature semisweet chocolate chips
1 cup finely chopped pecans
1 ½ pounds chocolate almond bark (chocolate confectioners' coating)

Steps:

  • Line baking sheets with waxed paper.
  • Beat brown sugar and butter together in a large bowl using an electric mixer until smooth and creamy; add vanilla extract and beat until smooth. Gradually beat flour into creamed butter mixture until smooth; add sweetened condensed milk and beat until smooth. Fold chocolate chips and pecans into cookie dough mixture; shape into 1-inch balls and place on prepared baking sheets. Refrigerate cookie dough balls until chilled, about 2 hours.
  • Melt chocolate bark in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Dip each cookie dough ball into melted chocolate using 2 forks to hold the ball. Place dipped ball onto the waxed paper and repeat with remaining balls and chocolate. Chill in refrigerator until set, at least 1 hour.

1 cup soft butter
1 1/2 cups brown sugar, packed
2 teaspoons vanilla extract
1/2 teaspoon salt
2 cups all-purpose flour
1 tablespoon water
1 (6 ounce) package mini chocolate chips

Steps:

  • Cream butter and sugar together.
  • Add remaining ingredients and mix well by hand.
  • Roll into bite-size balls.
  • Freeze until firm, about 45 minutes.
  • Store in a plastic zip-type bag in the freezer.
  • Let stand at room temperature 5 minutes before eating.

1 cup dried pitted dates, 4-ounces, chopped
1 cup water
1 tablespoon fresh lemon juice
2 tablespoons honey or agave syrup
2 tablespoons reduced-fat or no-stir natural chunky peanut butter
2 tablespoons unsweetened cocoa powder
1 tablespoon unsalted butter
1/4 teaspoon kosher salt
8 full sheets whole wheat graham crackers, finely ground, about 1 1/4 cups
1/2 cup old-fashioned rolled oats, not instant
Cooking spray
For coating: unsweetened coconut flakes, crushed graham crackers, finely chopped peanuts, low-fat granola, about 1/2 cup of each, optional

Steps:

  • 1. Combine the dates, water, and lemon juice in a medium saucepan. Simmer over medium heat breaking up any large pieces of dates with a spoon, until the mixture resembles a thick paste, 15 to 20 minutes. Stir in the honey, peanut butter, cocoa powder, butter and salt until evenly combined. Stir in the graham crackers and oats. Remove from heat.
  • 2. Lightly mist a baking sheet with cooking spray. Drop level tablespoons of the cookie mixture onto the prepared pan. Refrigerate until just chilled and set, about 20 minutes.
  • 3. Put desired optional toppings in small bowls. Roll each cookie in desired topping and flatten slightly into a plump disk. Cover and refrigerate until firm. Serve chilled.

1 (9 oz) package Girl Scout Thin Mint Cookies (or Keebler Grasshopper cookies)
4 ounces cream cheese (softened)
1 (12 oz) bag Guittard's Green Mint Chips (I just found these at the grocery store)*

Steps:

  • Blend cookies in a blender or food processor until fine crumbs form. Set aside 1/4 cup crumbs to sprinkle on top of truffles, if desired.
  • Place cookie crumbs and softened cream cheese in a large mixing bowl and mix until well combined.
  • Roll mixture into 1-inch sized balls and place on a baking sheet lined with parchment or wax paper.
  • Place baking sheet in the fridge for 30 minutes.
  • Melt mint chips (or white chocolate chips) in a microwave-safe bowl in the microwave in 30-second increments, stirring each time, until melted (about 2 minutes).
  • Add food coloring to melted white chocolate chips if using white chocolate.
  • Dip each ball into melted chocolate until completely covered using two forks. Lift ball out of the chocolate and scrape off excess chocolate before placing on baking sheet.
  • Sprinkle on cookie crumbs for garnish, if desired.
  • Place truffles in the fridge for a few minutes to set up.

These Lemon Cookie Truffles are one of my favorite go-to treats- only three simple ingredients, no baking required, and everyone who tries them needs the recipe.

1 (16 ounce) package lemon sandwich cookies (I used a generic store brand)
1 (8 ounce) package cream cheese
1 (16 ounce) package almond bark (or white chocolate candy coating)
Yellow jimmies (or any sprinkles of your choosing)

Steps:

  • Place cookies in a processor or high-powered blender and crush until they are fine crumbs (if you don't have a food processor, you can put cookies in a resealable plastic bag and smash with a rolling pin until they are crumbs).
  • Place crumbs in a medium bowl. Add cream cheese and mix until well-blended. Roll cookie mixture into 1 inch balls (makes about 48 balls). Place balls on a cookie sheet lined with aluminum foil or wax paper and stick in the fridge for about 45 minutes.
  • Melt almond bark according to directions on package. Dip each cookie ball in almond bark and place back on lined cookie sheet. Top with yellow sprinkles (if desired - just be sure to put sprinkles on as soon as you dip them because they ). Repeat with remaining cookie balls and place back in the fridge for about 30 minutes.
  • Store leftover truffles in a covered container in the fridge.
