With an abundance of potatoes in our garden each summer, I often make this easy recipe. We love the combination of parsley and spices, and the lemony butter sauce. They make a great accompaniment to grilled fish. -Sandra McKenzie, Braham, Minnesota

12 small red potatoes
1/3 cup butter, cubed
3 tablespoons lemon juice
1 teaspoon salt
1 teaspoon grated lemon zest
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
2 tablespoons minced fresh parsley

Steps:

  • Peel a strip from around each potato. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or just until tender., Meanwhile, in small saucepan, melt butter. Stir in the lemon juice, salt, lemon zest, pepper and nutmeg. Drain potatoes and place in a serving bowl. Pour butter mixture over potatoes; toss gently to coat. Sprinkle with parsley.

3 lbs tiny new potatoes
3/4 teaspoon salt
1/2 cup butter
3 tablespoons lemon juice
2 tablespoons parsley or 1 tablespoon dried chives

Steps:

  • Scrub potatoes.
  • Pare a thin strip of skin about 1/2" wide around centre of each potato.
  • Add boiling water to a depth of 2 inches, and 1/2 tsp salt.
  • Bring to a boil.
  • Cover and boil gently for about 20 minutes or until potatoes are tender.
  • Drain off water.
  • Return to heat for a short time to dry them off.
  • Melt butter.
  • Stir in lemon juice, chives, and 1/4 teaspoons salt.
  • Pour over potatoes, turning them to coat with the butter.

3 tablespoons unsalted butter, softened
1/2 cup 1/2-inch pieces fresh chives
freshly ground black pepper to taste
3 pounds small new potatoes (about 1 to 1 1/2 inches in diameter), scrubbed

Steps:

  • In a large bowl, combine butter, chives, pepper, and salt to taste.
  • If desired, with a channel knife, cut two intersecting strips around middle of each potato.
  • In a large saucepan, combine potatoes with salted water to cover by 1 inch and simmer until just tender, 15 to 20 minutes. Drain potatoes in a colander and add to butter mixture, tossing to combine.
  • Serve potatoes warm.

2 tablespoons fresh chives, minced
1 1/2 lbs Red Bliss potatoes, small size, scrubbed, unpeeled
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • .Combine lemon zest and chives in a small bowl.
  • If using small potatoes (1 1/2 - 2 inches in diameter) halve each potato. If using medium potatoes (2-3 inch in diameter) quarter each potato to create 3/4 - to 1-inch chunks. Rinse potatoes in cold water and drain well; spread on clean kitchen towel and thoroughly pat dry.
  • Heat oil in heavy-bottomed 12-inch nonstick skillet over medium-high heat until shimmering. Add potatoes, cut side down in single layer; cook without stirring, until golden brown (oil should sizzle but not smoke), 5-7 minutes. Using tongs, turn potatoes skin side down if using halved potatoes, or second cut side down if using quartered potatoes; cook without stirring until deep golden brown, 5-6 minutes longer. Stir potatoes, then redistribute in single layer. Reduce heat to medium-low, cover and cook until potatoes are tender (Paring knife can be inserted into potatoes with no resistance), 6-9 minutes.
  • When potatoes are tender, sprinkle with salt and pepper, and lemon chive mixture, and toss or stir gently to combine Serve immediately.

1 pound small red potatoes
2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup shredded Parmesan cheese
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil. Cook, covered, until tender, 10-15 minutes; drain. In the same pan, heat oil over medium-high heat. Add potatoes; cook until browned, 4-6 minutes. Add garlic; cook 1 minute longer. Remove from heat. Stir in remaining ingredients.

1-1/2 pounds medium red potatoes
1/4 cup water
1/4 cup butter, melted

1/2 cup butter
1/4 cup vegetable oil or 1/4 cup olive oil
6 tablespoons lemon juice
3 tablespoons fresh chives, finely minced
2 tablespoons fresh parsley, finely minced
1 tablespoon grated lemon rind
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon grated nutmeg
1/8 teaspoon ground mace

3 cups canned low-salt chicken broth
1 1/2 pounds small red-skinned potatoes, rinsed
2 bay leaves
1/4 cup dry white wine
1/2 cup chopped fresh chives or green onions

Steps:

  • Combine broth, potatoes and bay leaves in heavy large saucepan. Bring to boil. Reduce heat, cover partially and simmer until potatoes are tender, about 15 minutes. Using slotted spoon, transfer potatoes to large bowl. Add wine to broth and boil until reduced to 1/3 cup, about 12 minutes. Discard bay leaves. Return potatoes to pot. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Stir potatoes over medium heat until heated through, about 4 minutes. Stir in chives. Season to taste with salt and pepper. Transfer to bowl and serve.
