Coconut Curried Cauliflower image

Number Of Ingredients 8

1 head cauliflower, cut into florets
1/2 sweet onion, diced
1 can chick peas, rinsed and drained
1 can coconut milk
1 teaspoon curry powder, to taste
1/4 pinch red pepper flakes
1/4 pinch salt & pepper, to taste
1/2 teaspoon olive oil

Steps:

  • Heat olive oil in a large skillet.
  • Add in the onion and cauliflower and cook until cauliflower is just getting tender.
  • Add in the salt, pepper, red pepper flakes and curry. Stir to combine.
  • Add in the chick peas and coconut milk. Simmer until the cauliflower is cooked through.
  • Garnish with fresh basil. You can serve this as is or serve over jasmine rice.
