1 ⅛ cups water
2 tablespoons molasses
1 tablespoon vegetable oil
1 teaspoon salt
2 cups all-purpose flour
1 ½ cups rye flour
3 tablespoons packed brown sugar
1 tablespoon unsweetened cocoa powder
¾ teaspoon caraway seed
2 teaspoons bread machine yeast

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
  • Select the Basic cycle, and press Start.

This is excellent bread, so good it melts in your mouth!

Number Of Ingredients 9

1 ½ (0.6 ounce) cakes compressed fresh yeast
1 ½ cups warm water
1 ½ cups warm milk
1 tablespoon salt
6 cups bread flour
¼ cup molasses
1 cup packed brown sugar
⅓ cup melted shortening
3 cups rye flour

Steps:

  • Dissolve yeast in warm water.
  • Scald milk. Transfer milk to a large bowl, and add salt, molasses, brown sugar, and melted shortening. Cool to lukewarm, and add dissolved yeast. Add rye flour, beating with mixer. Gradually beat in white flour. Place dough in a greased bowl, and turn to coat the surface. Cover with a damp towel, and allow to rise till double in bulk in a warm place.
  • Punch down the dough, and place on a lightly floured board. Knead until dough becomes elastic, and does not stick to the board. Allow to rest for 5 minutes. Divide into 3 equal portions, and shape into loaves. Place in greased 9 x 5 inch bread pans. Let rise until double in bulk.
  • Bake at 375 degrees F (190 degrees C) for 35 to 40 minutes.

This bread has a slightly sweet flavor for a nice change of pace from the traditional rye. It's also wonderful toasted.

Number Of Ingredients 11

2 packages (1/4 ounce each) active dry yeast
3-1/3 cups warm water (110° to 115°), divided
1/2 cup evaporated milk
1/2 cup butter, melted
2/3 cup packed brown sugar
1/2 cup dark corn syrup
3 tablespoons molasses
1-1/2 teaspoons salt
3 cups rye flour
9 to 10 cups all-purpose flour
Melted butter

Steps:

  • In a large bowl, dissolve yeast in 2 cups water; let stand for 15 minutes. Add milk, butter, sugar, corn syrup, molasses, salt and remaining water. Stir in rye flour. Gradually add enough all-purpose flour to form a soft dough. Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into four loaves; place in a greased 8x4-in. loaf pans. Cover and let rise until doubled, about 1 hour. Bake at 325° for 40-45 minutes. Remove from pans to cool on wire racks. Brush with melted butter.

1 cup milk, scalded
1/2 cup molasses
1/2 cup brown sugar
1 tablespoon salt
3 teaspoons yeast
4 tablespoons butter
1 1/2 cups rye meal
2 cups white flour
1 egg white
1 tablespoon water
1 teaspoon caraway seed

Steps:

  • Combine hot milk, molasses, brown sugar and salt. and butter.
  • Cool mixture to lukewarm; . Add yeast to cooled milk.
  • Add flours to make a stiff dough.
  • Let double; punch down.
  • Put cornmeal under.
  • Brush with egg white and 1 tablespoon water.
  • Sprinkle with caraway seed.
  • Slash the dough before baking.

This is a very good bread and its really not that hard to make. I got this recipe from an old cook book called Favorite Recipes of Home Economic Teachers dated back from 1965. This recipe was submitted by a teacher named Sylvia Quie of Rosemount Jr. High in Rosemount , Minnesota. This is a net picture.

1/3 cup(s) molasses
1/3 cup(s) white corn syrup
1/2 cup(s) brown sugar
2 cup(s) milk
2 tablespoon(s) shortening
1 tablespoon(s) salt
2 package(s) yeast
1/2 cup(s) warm water
2 cup(s) rye flour
2 cup(s) white flour
- cream

Steps:

  • Scald and cool molasses , corn syrup , brown sugar , milk and shortening ; Add salt.
  • Dissolve yeast in warm water and add molasses mixture.
  • Stir in flour to make a stiff dough. Let rise until double in bulk.
  • Knead well using as little flour as possible.
  • Shape into 2 loaves and place in greased loaf pans.
  • Cover and let rise until doubled in bulk.
  • Bake @ 425° for 30 minutes.
  • Reduce heat to 325° for 35 minutes.
  • Place on rack to cool , brush with cream while still warm.

  • In a large bowl, dissolve yeast in warm water. Beat in the flour, dry cake mix and salt (do not knead). Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; divide in half. Roll each portion into a 12-in. circle; cut each circle into 12 wedges. Roll up, beginning at the wide end; place point side down on greased baking sheets. Brush with butter.
