Taco Dip Casserole image

I will never make tacos again! This recipe takes the stress out of assembling a taco, and is a spinoff of walking tacos. Super easy and delicious. Serve with bite-sized tortilla chips and sour cream.

cooking spray
1 pound ground beef
¾ cup water
1 (1.25 ounce) package taco seasoning mix
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
2 tablespoons taco sauce, or to taste
1 (16 ounce) can refried beans, warmed
1 (8 ounce) container sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8- or 9-inch square pan with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in water and taco seasoning mix and bring to a boil. Reduce heat and simmer, stirring occasionally, for 5 minutes.
  • Transfer ground beef to the prepared pan. Layer with diced tomatoes and green chiles, taco sauce, warm refried beans, sour cream, and Mexican cheese.
  • Cook, uncovered, in the preheated oven for 20 minutes. Let sit for 10 minutes before serving.
