ELEGANT BAKED SEAFOOD NEPTUNE

One of the most elegant & delicious seafood dish you can ever make. It's a lot of ingredients, but turns out REALLY good!

6 large tomatoes
1/4 cup chopped green pepper
1/4 cup grated carrot
2 tablespoons minced onions
1/4 cup melted butter
1/4 cup flour
2 teaspoons salt
2 teaspoons sugar
1/4 teaspoon pepper
3/4 cup coarsely chopped shrimp or 1 (7 ounce) package frozen shelled shrimp
1 (8 ounce) package frozen king crab meat, flaked
1 cup coarsely chopped cooked lobster
3 tablespoons dry sherry (optional)
2 tablespoons chopped parsley
2 tablespoons fine breadcrumbs
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Cut 1/4-inch stem from each tomato.
  • Scoop out pulp to make a shallow cup; be sure to reserve pulp.
  • Saute green pepper, carrots and onion in 1/4 cup melted butter for about 5 minute.
  • Stir in the flour, salt, sugar, and pepper.
  • Add reserved pulp.
  • Cook and stir over medium heat until mixture thickens & boils.
  • Add seafood, sherry (optional), and parsley.
  • Pile into tomato cups.
  • Place in shallow baking pan.
  • Sprinkle with bread crumbs and dot with butter.
  • Bake at 375°F until thoroughly heated.

I'm not exactly sure where I found this recipe, but has become a family favorite. Everyone who I've served it to, ask for the recipe.

1/2 cup cream cheese
1 cup crabmeat, defrosted and well drained (canned works well too)
1/4 cup chopped almonds (optional)
1 teaspoon garlic, finely chopped
1 tablespoon lemon juice
2 tablespoons finely chopped parsley
1 teaspoon Worcestershire sauce
salt
1/2 cup fresh breadcrumb
24 medium mushroom caps
1 cup melted butter
2 tablespoons lemon juice
1 teaspoon grated lemon rind
2 tablespoons parsley
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400°F.
  • Combine together cream cheese, crabmeat, almonds, butter, garlic, lemon juice, parsley, Worcestershire sauce and hot pepper sauce in a bowl. Season to taste and stir in bread crumbs.
  • Remove the stems from mushrooms and cut thin slices from the rounded side of the cap, to make sure it stands securely. Fill each cap with 1 to 2 tsp of the crab mixture.
  • Place in 4 individual baking dishes. Combine the butter, lemon juice, rind and parsley and season well. Drizzle ¼ cup of butter mixture over each dish of mushrooms.
  • Bake for 12 to 15 minutes or until caps are cooked.

This recipe was found online by a friend from work and it immediately became one of our favorites. The casserole is so creamy and perfectly flavored. It makes a very elegant presentation served in individual ramekins.

3 tablespoons butter
1/4 cup flour
2 cups heavy cream, divided
2 ounces parmesan cheese, grated
2 tablespoons dry sherry
1/2 teaspoon paprika
1/2-1 teaspoon Old Bay Seasoning
1/8-1/4 teaspoon cayenne (optional)
4 ounces sliced mushrooms (optional)
1 teaspoon onion, minced
2 cups crabmeat, picked and cleaned
1 cup shrimp, peeled
1 1/2 cups garlic-flavored croutons
1/4 cup fresh parsley
4 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Melt 3 T butter over medium heat in a large saucepan; remove from heat and whisk in flour.
  • Whisk in 1/2 c of heavy cream and return to heat.
  • Add in the parmesan cheese; stir until creamy.
  • Remove from heat and add in the remaining cream.
  • Add in the sherry, paprika, Old Bay, cayenne, mushrooms, minced onion, crabmeat and shrimp.
  • Spoon the mixture into 6 ramekins.
  • In a food processor, blend the croutons and parsley together.
  • Top each casserole with this mixture and drizzle with the 4 T of melted butter.
  • Bake for 20-30 minutes or until the top is browned and bubbly.
