OLD-FASHIONED ICE CREAM SODAS
I keep the ingredients for these ice cream sodas on hand so I can enjoy a treat anytime I want. You can easily make more when feeding a crowd. -Anna Erickson, Terrebonne, Oregon

Steps:
- Place 3 tablespoons chocolate syrup in each of four 16-oz. glasses. Add 1/4 cup milk and 1 cup carbonated water to each; stir until foamy. Add two scoops of ice cream to each glass. Top with whipped cream if desired.

NECTAR SODAS
A traditional Nectar Soda recipe. Cooking time does not include cooling time. (The calories calculated includes the entire 1 gallon of ice cream).

Steps:
- In large saucepan bring to a boil sugar and water.
- Boil for 10 minutes then cool completely.
- Add next 4 ingredients.
- Place 2 scoops vanilla ice cream in tall glass.
- Pour approximately 1/2 cup nectar syrup over ice cream.
- Fill remainder of the glass with chilled sparkling water.
- Refrigerate unused nectar.
NEW ORLEANS NECTAR SYRUP
Growing up in New Orleans, we used to go to the K&B for a nectar ice cream soda. Make this syrup and add it to some seltzer water with a giant scoop of vanilla ice cream! I think you'll love it, a different ice cream soda.

- Bring sugar and water to a boil over medium heat.
- Let boil about 10 seconds and remove from the heat, let it cool.
- Add vanilla, almond extract, and coloring, stir well.
- Keep in the refrigerator.
HERBAL SODAS
Don't let an abundance of herbs go to waste. Pluck several types of sprigs -- we used basil, mint, and thyme -- and we use them to flavor a basic sugar syrup. Mix the concoction with ice and sparkling water, then garnish the drinks with additional sprigs.

Steps:
- Put sugar and 1 cup water into a medium saucepan over medium heat. Bring to a simmer, stirring until the sugar has dissolved. Remove from heat; add herbs. Cover; let cool completely.
- Pour syrup through a fine sieve into a small bowl; discard herbs. Stir in lemon juice. Refrigerate at least 30 minutes.
- Fill glasses with ice. Add 2 to 4 tablespoons syrup; top with sparkling water or club soda, and stir.
