I found this while thumbing through a magazine and it sounded good to go alone with the pork chops I had planned on that evening. I was right, it was good! And very simple to put together.

4 medium potatoes, sliced
1 cup cream of mushroom soup
1/2 cup green pepper, diced (optional)
1 cup milk
1/2 cup onion, diced
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Place the thinly sliced potatoes in a greased baking dish.
  • Combine the remaining ingreadients and pour over the potatoes.
  • Bake covered for 35 minutes. Makes about 6 servings.
  • Make sure you slice the potatoes thinly, or you may have a harder time getting the pototes cooked in the 35 minute time frame.
  • I had to cook mine longer the first time, as I had sliced them a bit wide.

8 tablespoons unsalted butter, plus more for greasing
5 pounds russet potatoes, peeled and halved
1 cup milk
1/2 cup sour cream
4 ounces cream cheese, at room temperature
Kosher salt and freshly ground black pepper
1 cup heavy cream
2 cups grated sharp white Cheddar
1/4 cup finely grated fresh horseradish

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9-by-13-inch casserole dish with butter.
  • Place the potatoes in a large pot and cover completely with water. Bring to a simmer and cook until the potatoes are tender and easily pierced with the tip of a sharp knife, about 20 minutes. Drain and mash the potatoes in a large bowl. Add the butter, milk, sour cream, cream cheese and some salt and pepper, then fold to combine. Transfer the potatoes to the prepared casserole dish.
  • In a medium bowl, whisk the heavy cream until medium peaks form. Fold in the cheese and horseradish, and season with salt and pepper. Spread the whipped cream over the potatoes evenly to cover. Bake until the potatoes are heated through and the top is light brown, about 1 hour 30 minutes.
  • Rest the potatoes for 10 minutes, and then serve.

3 c cold mashed sweet potatoes (yams out of can o.k. too)
1/2 c sugar
1/4 c milk
1 tsp vanilla
1/3 stick margarine, melted
2 eggs
TOPPING
1/2 c coconut
1/2 c chopped pecans
1/3 stick margarine, melted
1/3 c brown sugar, packed
1 Tbsp all-purpose flour

Steps:

  • 1. Mix sweet potatoes, sugar, milk, vanilla, melted margarine, and eggs together with an electric mixer. Grease a 9x9" pan (glass o.k. too).
  • 2. Mix topping ingredients (coconut, pecans, melted margarine, brown sugar, and flour) altogether.
  • 3. Pour sweet potatoes into the greased baking dish.
  • 4. Evenly sprinkle topping mixture over sweet potato mixture.
  • 5. Bake at 300 degrees for 45 minutes uncovered.

2 cups sour cream
1 teaspoon salt
¼ teaspoon ground black pepper
2 cups shredded Cheddar cheese

1 (30 ounce) package Ore-Ida® Shredded Hash Brown Potatoes
2 cups crushed corn flakes cereal
¼ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F. Coat 13x9 baking dish with nonstick cooking spray.
  • In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and hash browns until well mixed. Spoon evenly into baking dish.
  • In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of hash brown mixture.
  • Bake uncovered for 45 to 50 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Season with additional salt and pepper to taste if desired. Garnish with additional sliced green onion if desired.
