Categories     dessert

Time 1h30m

Yield 10 servings

Number Of Ingredients 7

1/2 leftover 9-inch cheesecake, chilled
8 ounces chocolate candy melts
1 1/2 teaspoons vegetable oil
1/4 cup finely chopped chocolate-covered peanut butter candy, such as Reese's Pieces
1/4 cup finely chopped candy-coated chocolate, such as M and Ms
1/4 cup finely chopped salted peanuts
1/4 cup crushed toffee brickle

Steps:

  • Use a small cookie scoop or a rounded tablespoon to make balls out of the leftover cheesecake. After you scoop out the balls, roll them in your hands to make the rounds neater. Place on a parchment-lined baking sheet and insert a lollipop stick in the top of each. Squeeze the cheesecake around the base of each lollipop stick to ensure it will stay put. Pop into the freezer for 1 full hour.
  • Set up a double boiler by bringing a medium saucepan of water to a simmer. Place a small bowl over the top, making sure the bottom doesn't touch the water. Add the candy melts to the bowl and stir until smooth and melted. Stir in the vegetable oil until smooth.
  • Quickly dip the cheesecake balls into the melted chocolate and twirl to coat. You may need a knife to help cover the balls. Sprinkle the cheesecake balls before the chocolate dries with your choice of chopped candy, peanuts or toffee brickle and place back on the baking sheet. Refrigerate to set up, about 5 minutes.

This is a recipe from my Aunt Nancy. Every Christmas we would gather at her house and she would have this awesome cheese ball. When I got married and had a family of my own, I asked her for her recipe. I touched it up with some red and green peppers. I love this cheese ball! its my all time favorite.

1950'S CHEESE BALL

1950's Cheese Ball image

This recipe was in a Beaumont, Texas, utility company Christmas recipe leaflet from 1951. We've been making it in our family ever since then. I broke many a wooden spoon over the years trying to mix it all together - now the food processor makes it a snap to mix in 15 minutes or less!

Time 15m

Number Of Ingredients 8

2 - 8 oz pkg shredded sharp cheddar cheese
4 oz softened cream cheese
1/2 c mayonnaise
3 green onions, roughly chopped
2-3 tsp minced garlic
1/4 c sweet pickle relish
1 small jar(s) diced pimento
1/2 c chopped nuts (pecans or walnuts)

Steps:

  • 1. Mix all ingredients except cheddar in bowl of food processor until smooth. Add cheddar and pulse until well combined. Chill at least overnight in plastic container (a Cool Whip container is a perfect fit) that has been sprayed with Pam. After chilling, unmold and cover top with chopped parsley or nuts. Allow to come to room temperature before serving to be able to spread on crackers. (P.S. After years of experimenting, we find the perfect cracker complement is Nabisco Sociables!)
