The recipe for this easy salad came from my grandma, who made it in the summers with fresh dill and cucumbers from her garden.

½ cup reduced-fat sour cream (such as Daisy®)
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill
3 cucumbers, halved lengthwise and thinly sliced crosswise
½ cup thinly sliced red onion
coarse salt and ground black pepper to taste

Steps:

  • Mix sour cream, lemon juice, and dill together in a bowl. Add cucumbers and onion; stir to combine. Season with salt and black pepper.

CREAMY CUCUMBER SALAD



Creamy Cucumber Salad image

Number Of Ingredients 8

4 hothouse cucumbers, thinly sliced (3 to 4 pounds)
2 small red onions, thinly sliced in half rounds
Kosher salt
4 cups (32 ounces) plain whole-milk yogurt
1 cup (8 ounces) sour cream
2 tablespoons champagne vinegar or white wine vinegar
1/2 cup minced fresh dill
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl. Pour them into a colander and suspend it over a bowl. Wrap the bowl and colander with plastic wrap, and place in the refrigerator to drain for at least 4 hours or overnight. Discard the liquid that collects in the bowl.
  • Pour the yogurt into a sieve lined with a paper towel and suspend it over another bowl. Wrap the bowl and sieve in plastic wrap and refrigerate for at least 4 hours or overnight. Discard the liquid that collects in the second bowl.
  • When the cucumbers are ready, roll them up in paper towels or a kitchen towel and press the towel lightly to remove most of the liquid. Place the cucumbers and yogurt in a large bowl with the sour cream, vinegar, dill, 2 teaspoons salt, and the pepper. Toss well and refrigerate for a few hours to allow the flavors to blend. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper and serve chilled.

GRANDMA'S CUCUMBER AND ONION SALAD



Grandma's Cucumber and Onion Salad image

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

7 cups sliced cucumbers
salt as needed
1 cup sliced onions
1 cup sliced green bell pepper
2 cups white sugar
1 cup white vinegar
1 tablespoon celery seed
2 teaspoons salt, or to taste

Steps:

  • Place cucumber slices in a colander and liberally sprinkle salt over cucumbers; set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.
  • Mix cucumbers, onions, and green bell pepper together in a bowl.
  • Whisk sugar, vinegar, celery seed, and 2 teaspoons salt together in a bowl until dressing is smooth; pour over cucumber mixture and stir until evenly coated.

NANA'S CUCUMBER SALAD



Nana's Cucumber Salad image

My German grandmother used to make this for every family occasion. She always had some set aside for me to take home.

Number Of Ingredients 6

3 - 4 - cucumbers
1 medium onion
- mayonnaise or lite mayonnaise
- apple cider vinegar
- salt and pepper
- sugar

Steps:

  • Peel the cucumbers and onion. Slice both very thin. I use a food processor.
  • Blend together the mayo & vinegar. Add salt & pepper to taste. Add sugar to cut the tartness if you would like it a little sweeter.
  • In a large bowl combine everything together. I like to make this a day early so that the cucumbers soak in the flavor of the sauce.
  • Enjoy!
