1 medium eggplant
2 red bell peppers, seeded
1 red onion, peeled
2 garlic cloves, minced
3 tablespoons olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1 tablespoon tomato paste

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the eggplant, bell pepper, and onion into 1-inch cubes.
  • Toss them in a large bowl with the garlic, olive oil, salt, and pepper.
  • Spread them on a baking sheet; roast for 45 minutes, until the vegetables are lightly browned and soft, tossing once during cooking.
  • Cool slightly.
  • Place the vegetables in a food processor fitted with a steel blade, add the tomato paste, and pulse 3 or 4 times to blend.
  • It should still have a lot of texture left, and not completely pureed.
  • Taste for salt and pepper.

2 medium eggplants
1/4 cup olive oil, plus more if needed
2 tablespoons lemon juice, plus more if needed
1 small onion, finely chopped
2 heaping tablespoons light mayonnaise, plus more if needed

Dill, chopped, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Pierce the eggplant skins in several places with a fork. Set the eggplants on a baking sheet and roast until soft and the skin is charred, 30 to 45 minutes, turning a few times for even roasting.
  • When done, cut off the stems and peel the eggplants. Cut a slit along the side of each eggplant and transfer the eggplants to a strainer for a couple of minutes to allow the juices to drain.
  • Finely chop the eggplants with a knife until they form a smooth puree. Add the eggplant puree to a bowl and stir in the olive oil and lemon juice until well-blended; taste and add more olive oil and lemon juice if desired. Add the onion and mix in the mayonnaise, adding more if needed. Season with salt and pepper. Garnish with dill and refrigerate for at least one hour to chill.

4 slices eggplants, peeled (1/2-inch thick slices)
2 teaspoons extra virgin olive oil
1 garlic clove, crushed through a press
1/4 cup jarred roasted red pepper, chopped rinsed and drained
1/2 teaspoon small caper, rinsed
fresh ground pepper

Steps:

  • Heat oven to 425°F (220°C).
  • Arrange the eggplant in a single layer on a nonstick coated baking sheet.
  • Stir the olive oil and garlic together in a small bowl and lightly brush on both sides of the eggplant.
  • Roast eggplant slices until lightly browned, turning once, about 20 minutes per side. Cool slightly.
  • Coarsely chop the eggplant and combine with the red peppers and capers; add black pepper to taste.

Found this recipe on the box of Melba toast. It's good on crackers (or Melba toast) or as a salad, surrounded by chopped tomatoes.

2 medium eggplants
2/3 cup vegetable oil
1 medium white onion, chopped
4 tablespoons light mayonnaise
1 teaspoon Dijon mustard
1 pinch salt

Steps:

  • Preheat oven to 400 degrees.
  • Place eggplants on cookie sheet and bake for 80 minutes, turning every 20 minutes or so.
  • They will be very soft.
  • Cover eggplants for about 20 minutes, or place in plastic bag.
  • Peel eggplants and let the pulp drain in a strainer for at least 10 minutes.
  • Chop eggplant pulp on cutting board until it resembles mashed potatoes.
  • Stir in oil with wooden spoon.
  • Add mayo and mustard; stir until blended.
  • Stir in chopped onion, add salt to taste.
  • Refrigerate for at least 2 hours to allow flavors to blend.
  • Serve chilled.

3 medium eggplants, peeled and sliced thinly (1/8-inch)
2 1/2 teaspoons salt
10 garlic cloves, peeled
2 tablespoons lemon juice
3 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
roasted bell pepper, slices (optional)

Steps:

  • Sprinkle eggplant slices with 2 1/2 tsp salt and let stand for 30 minutes.
  • Preheat oven to 450°F Rinse eggplant and place on oiled baking sheets; add garlic.
  • Bake 25 minutes or until the eggplant edges are crispy and the garlic us tender.
  • Cool slightly so it can be handled; chop eggplant and garlic.

3 -4 flask eggplants (the common kind found everywhere)
1 small grated onion
1 -2 garlic clove, crushed
1 1/2 tablespoons tahini
1/2 cup olive oil
1 -2 tablespoon red wine vinegar
3 -5 drops liquid smoke (optional)
salt and pepper

Steps:

  • Wash eggplant, place in baking pan and bake in at 375F for about one hour, or until soft when pierced with a fork and the eggplant has sort of collapsed into itself.
  • allow the skin to turn black and charred so as to give a smoky flavour to the salad (you can also grill the eggplant by putting them directly on the grate- whole- on your bbq. Grill until skin is blackened and charred and eggplant is very soft and starting to deflate. If you use the grill method- leave out the liquid smoke).
  • Skin eggplant when cool enough for you to stand it and chop in small pieces. Mash it up a bit with a fork.
  • Mix well with onion, garlic, tahini, oil, vinegar (start with 1 tblsp of vinegar and if you want it sharper, add more, a bit at a time), salt and pepper (to taste).
  • Note: I kind of beat this around with a fork to incorporate the oil well into the eggplant spread- you don't want it looking oily at all, but creamy.
