1 cup leftover chili or canned refried beans
8 ounces cream cheese, softened
1 cup chopped tomato
1/2 cup coarsely chopped jalapenos
1/2 cup finely chopped red onion
1 cup shredded cheddar cheese
1/2 cup sliced scallions

Steps:

  • Preheat oven to 375 degrees F.
  • Spread chili or beans over bottom of baking dish. Spread softened cream cheese on top. Layer tomatoes, jalapenos, red onion and cheese. Bake for 20 minutes or until bubbly. Top with scallions and serve with chips

i put this dip together when I had a craving for nachos and left over chili. This is easy to prepare and always good in a pinch.

2 pkg philly cream cheese (room temp)
2 pkg taco seasoning mix
2 can(s) chili (with or without beans/or meat) or refried beans
1 1/2 c shredded mexican chese

Steps:

  • 1. Preheat over to 350. Mix together cream cheese and taco seasoning. Spread into casserole dish.
  • 2. Top cream cheese mixture with your choice of refried beans or chili.
  • 3. Sprinkle shredded cheese over the top and bake for about 20 minutes or until cheese is melted and bubbling.

1 lb ground beef
1 -1 1/2 cup Mexican blend cheese (shredded)
1 -1 1/2 cup lettuce (shredded)
2 (16 ounce) cans refried beans
2 -3 cups sour cream
1 1/4 ounces taco seasoning
1/2-1 cup taco sauce
tortilla chips
onion (optional)
bell pepper (optional)

Steps:

  • fry ground beef in skillet until well cooked/browned, add taco seasoning(follow directions on taco seasoning packet)cover and set aside.
  • heat refried beans in large saucepan on low/medium heat, until warmed. cover and set aside.
  • in large bowl or casserole dish, layer ground beef in bottom of pan/bowl.add shredded cheese on top of beef.
  • pour refried beans over cheese, make even.
  • sprinkle lettuce onto beans.
  • with table spoon, add globs of sour cream to top of dish. for looks, leave a 1/2 inch space on all sides.
  • pour taco sauce on top of sour cream. sprinkle shredded cheese over sour cream and taco sauce.
  • serve immedietly while beef and beans are still warm. enjoy!
