Fresh Cucumber Dip image

I got this recipe from a good friend of mine. She loves to cook and so do I. This is one of those recipes where you can make it your own. I love the smell of fresh cucumber as you are grating this up ,and this is a wonderful spread/dip for salmon or crab cakes.

Number Of Ingredients 8

2 small cucumbers de--seeded and slightly processed
1/4 c red onion finely chopped
8 oz package cream cheese-softened
1/4 c mayonnaise like hellmann's
1 Tbsp lemon juice
2 tsp dried parsely
2 tsp dried dill
salt and pepper to taste

Steps:

  • 1. Place de-seeded cucumbers in processor and process slightly. You don't want to puree, just get it chopped nicely. If you want to, chop it by hand. Finely chop the red onion or you could use your processor.
  • 2. Place in a bowl and blend with other ingredients To get a smooth consistency use a hand mixer.
  • 3. Salt and pepper to taste. Chill in the refrigerator for several hours. Chill overnight is even better. It gives a chance for all the flavors to come together.
