EASY CHICKEN NOODLE SOUP RECIPE

This easy Chicken Noodle Soup recipe is exactly what you imagine when you think of homemade chicken noodle soup - soothing, warming, comforting and rich in flavor. It is loaded with juicy chicken and tender noodles.

4 chicken thighs (skins removed (bone-in or boneless))
8 cups chicken broth (we used low sodium)
6 cups water
2 Tbsp olive oil (to saute vegetables)
1 medium onion (finely chopped)
2 medium celery sticks (finely chopped )
2 carrots (sliced into rings)
6 oz rotini pasta
3 Tbsp fresh or frozen dill
1 tsp Mrs. Dash (or your favorite salt-free seasoning)
1 Tbsp sea salt (or to taste)
1 garlic clove (pressed)

Steps:

  • In a large soup pot, combine 6 cups water with 8 cups chicken broth and 1 Tbsp sea salt. Bring to a boil then add chicken thighs and boil partially covered 20 min while you prep the vegetables, skimming off any foam that rises to the top.
  • In a large skillet over medium/high heat, add 2 Tbsp olive oil and sauté onion and celery until softened then transfer to the pot.
  • Add pasta and sliced carrots to the soup pot and continue cooking for 15 min at a low boil or until pasta is at the desired softness.
  • While pasta is cooking, remove chicken thighs from the pot and use either forks or your hands to shred the chicken, discarding any bones and fat which should come off easily. Return shredded chicken to the pot.
  • Season soup with 1 tsp Mrs. Dash (or your favorite seasoning) and more salt to taste if needed. Press in 1 garlic clove. Finally, add 3 Tbsp dill and remove from heat. Enjoy!

2 boneless skinless chicken breasts
1 carrot
4 cups water
1 (14 ounce) can fat free chicken broth
1 (10 1/2 ounce) can cream of chicken soup
1 (12 ounce) package dry fettuccine, broken up in 2-inch pieces

Steps:

  • Grate carrot and cook with chicken in chicken broth and 4 cups water.
  • Cook chicken about 10 minutes then add noodles and cook till done.
  • Add cream of chicken soup and cook about 5 minutes longer.
  • Mmm mmm good.

QUICK AND EASY GLUTEN FREE CHICKEN NOODLE SOUP



Quick and Easy Gluten Free Chicken Noodle Soup image

I came up with this when I started making Chicken soup and decided to add the Tapioca and it tasted just the same, if not better! This will make somewhat of a smaller batch of soup, so this can easily be doubled if need be. Just as a note, I have found the Brown Rice Pasta noodles at Trader Joe's. I just recently found that Wal-Mart also have a couple of varieties of Brown Rice Pasta Noodles, which may be more convenient and available than Trader Joes.

2 chicken breasts
4 tablespoons butter
1/2 onion, diced
3 -4 tablespoons tapioca flour
1 (14 ounce) can gluten-free chicken stock (Make sure to check label to be sure that it is gluten free)
2 cups water
1 (10 ounce) can evaporated milk
2 teaspoons sage
salt and pepper
1 1/2 cups brown rice pasta
1 1/2 cups frozen peas and carrots

Steps:

  • In a large pot, melt 2 tablespoons of the butter. Salt and pepper the chicken breasts and sauté for about 5 minutes, turn and sauté for about 3 minutes more. Remove the chicken from the pan. They will not need to be cooked through, as you will continue to cook them in the soup.
  • Add the remaining two tablespoons of butter and add the chopped onions and cook them for about 5 minutes or so. Add the tapioca flour and stir in until the onions are thickened. You may need to add some more of the flour if it needs it. Add the chicken broth and the water and stir well with a whisk. Season the broth with the sage and the salt and pepper. You may not need to add the salt if the broth has enough.
  • Return the chicken back to the pot and put a lid on the pan and continue to cook in the broth for about 10 minutes or so.
  • Remove the chicken and cut the chicken into good bite size pieces. Add the frozen vegetables and the cut up chicken to the pot and cook for another 5-10 minutes or so.
  • Add the canned milk and stir in well. Serve hot. I usually love to eat my soup with some fresh rolls, so if you have any gluten free rolls, dip them into the soup and enjoy!

When I first served this wonderful brunch casserole at a family reunion a few years ago, I think I wrote out at least a dozen copies of the recipe! My husband and I enjoy country living in the beautiful Blue Ridge Mountains.

8 ounces day-old Italian bread or French bread, sliced
1 pound bulk pork sausage, cooked and crumbled
8 large eggs
2 cups milk
1/2 teaspoon pepper
8 ounces sliced Swiss cheese
1/4 cup minced fresh parsley

Steps:

  • Line a greased 13x9-in. baking dish with bread. Sprinkle with sausage. Beat the eggs, milk and pepper; pour over sausage. Press bread down with a spatula to absorb egg mixture. Top with cheese and parsley. , Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.
