1 1/2 lb ground beef
1 medium onion, chopped
1 1 lb. can of whole tomatoes, chopped (don't drain, you'll need the juice)
1 15 or 16 oz. can tomato sauce
2 qt water
3-4 beef bouillon cubes
1/2 tsp garlic powder
2 Tbsp fresh parsley or dried parsley flakes
1/2 tsp celery seed
1/8 tsp black pepper
1-1/2 c dry macaroni

Steps:

  • 1. In dutch oven, brown hamburger and onions. When done, spoon off drippings and discard. Add tomatoes and juice, tomato sauce, water, bouillon cubes and seasonings. Bring to a boil, then turn down to simmer. Simmer for 1-1/2 to 2 hours. When done, add macaroni and cook over medium heat 20 additional minutes or until macaroni is done.

MY MOM'S TOMATO AND BEAN 15 MINUTE STOUP

A stoup is thicker than soup and thinner than stew. I called my mom one rainy day from the road. I was getting a cold and I really wanted soup for supper. She said she didn't know what she had on hand to make it with, but she'd come up with something. This was it. (Oh, you don't have to be sick to enjoy it.)

2 tablespoons extra-virgin olive oil, 2 turns of the pan
3 cloves garlic, chopped
1/2 teaspoon crushed red pepper flakes
1 medium onion, chopped
2 carrots, peeled and thinly sliced
2 ribs celery, chopped
1 small zucchini, sliced
2 cups vegetable or chicken stock
1 (15-ounce) can diced tomato
1 (15-ounce) can tomato sauce
1 (15-ounce) can small white beans or cannellini beans
1 (10 ounces) box, cut frozen green beans
Salt and pepper
1 cup fresh basil, torn or shredded
Grated Parmigiano or Romano, to pass at table
Crusty bread, to pass at the table

Steps:

  • Add extra-virgin olive oil to the pot, 2 turns of the pan. Add garlic and crushed red pepper flakes, stir then stir in the onions, carrots, celery and zucchini. Cook 10 minutes, then add in the stock, tomatoes and beans. Bring soup up to a bubble and season with salt and pepper, to your taste. Simmer 5 minutes. Turn off the heat and wilt the basil into the soup. Ladle up the soup and serve with grated cheese and bread.

Spaghetti Lover's Soup: All the flavors we love in Spaghetti, loaded up with lots of extra veggies, and sure to be a family favorite!

2 cups spaghetti sauce
1 cup cooked ground beef (Optional, I just use leftover prepared spaghetti sauce that I've already added meat to.)
2 15 oz cans diced tomatoes (undrained)
2 15 oz cans kidney beans (undrained)
2 large carrots
1 stalk celery (optional)
dry spaghetti noodles (I use enough to make spaghetti for one person)
2 cups water
1 tablespoon Italian Seasoning (optional)

Steps:

  • In a large pot, place sauce, beef (if using), tomatoes, kidney beans, and water into pot. Peel and chop carrots and dice celery, add to pot. Add seasoning if desired.
  • Bring to a boil and then reduce heat, simmering until vegetables are tender. Break spaghetti noodles into one or two inch segments and add these as well. Continue cooking until pasta is tender.

MY MUM'S SPAGHETTI SOUP

A gorgeous, Italian style heart warming soup made with tomatoes, potatoes, spaghetti and the special secret ingredient....marrow from a marrow bone. Both myself and my brother have been brought up with this delicious soup, and I have made it ever since. Marrow bones are available from your butcher very cheaply, sometimes even for free. If the bone is very large, ask your butcher to cut it in half for you, so it will fit into the pot comfortably. You can use a can of cannellini beans if you prefer. Serve this soup with a sprinkle of freshly grated Parmesan cheese.

1 (1 pound) beef marrow bone
1 tablespoon tomato puree
1 large onion, chopped
3 cloves garlic, minced
2 bay leaves
2 quarts water
2 potatoes, diced
2 (14.5 ounce) cans diced tomatoes
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh oregano
1 teaspoon chopped fresh rosemary
1 tablespoon Worcestershire sauce
1 (14 ounce) can baked beans (such as Heinz®)
1 cup uncooked spaghetti, broken into 1 inch pieces
salt and ground black pepper to taste

Steps:

  • Place the marrow bone, tomato puree, onion, garlic, and bay leaves into a large pot. Pour in the water, and bring to a boil over high heat. Reduce the heat to medium, and simmer 45 minutes. After 45 minutes, stir in the potatoes, diced tomatoes, parsley, oregano, and rosemary. Cook, stirring occasionally until the potatoes are just tender, 15 to 20 minutes.
  • Stir in the Worcestershire sauce, baked beans, and spaghetti. Return to a simmer, and cook until the spaghetti is tender, 15 to 20 minutes. Season to taste with salt and pepper before serving.

2 tablespoons extra virgin olive oil
1 large onion
2 minced garlic cloves
1 1/2 lbs ground beef
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 cups water
1/4 cup dried parsley
2 teaspoons italian seasoning
1 teaspoon salt
1 teaspoon pepper
2 tablespoons sugar

Steps:

  • Heat oil in large pot. Add onions and garlic and cook for 2 minutes. Add ground beef and cook until completely brown. Add tomatoes, paste, water, parsley, italian seasoning, salt, pepper, and sugar. Mix thoroughly. Let come to a boil and then turn down heat to a simmer. Let simmer at low heat for at least one hour. If it becomes too thick you made add a little water as needed. That's it. Serve over your favorite pasta and your done.

1 egg
1/4 cup milk
1 cup soft bread crumbs
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon minced fresh parsley
1 pound ground beef
SAUCE:
1 pound Italian sausage links, cut into 2-inch pieces
1 large onion, chopped
1 medium green pepper, chopped
2 cans (28 ounces each) diced tomatoes, drained
2 cans (8 ounces each) tomato sauce
1 can (14-1/2 ounces) beef broth
1 can (6 ounces) tomato paste
2 garlic cloves, minced
2 teaspoons each dried basil, oregano and parsley flakes
2 teaspoons sugar
Salt and pepper to taste
Hot cooked spaghetti
Grated Parmesan cheese

Steps:

  • In a bowl, combine the first six ingredients. add beef and mix well. Shape into eight meatballs. Brown in a Dutch oven over medium heat; drain and set meatballs aside. , In the same pan, cook sausage, onion and green pepper until vegetables are tender; drain. Add the tomatoes, tomato sauce, broth, tomato paste, garlic and seasonings. Add meatballs; stir gently. Bring to a boil. Reduce heat; cover and simmer for 2-3 hours. Serve over spaghetti; sprinkle with Parmesan cheese.
