This is an old classic Christmas cookie that will bring back many fond memories to those who eat these delightful cookies

3 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
⅔ cup butter, softened
¾ cup packed brown sugar
¾ cup white sugar
2 eggs
⅓ cup milk
1 teaspoon vanilla
1 ¾ cups raisins
1 cup packed brown sugar
1 cup water
1 pinch salt
1 teaspoon lemon juice
1 ½ tablespoons cornstarch
2 tablespoons water
½ cup chopped walnuts

Steps:

  • To Make The Dough: Sift the flour, baking powder, and salt together; set aside.
  • Cream the butter with 3/4 cup of the brown sugar and the white sugar. Beat in the eggs, milk and vanilla. Mix at high speed for 2 minutes, then reduce speed and gradually blend in the flour mixture. Cover and refrigerate dough for at least 3 hours.
  • To Make Raisin Filling: Grind the raisins. In a medium saucepan combine the ground raisins, 1 cup brown sugar, 1 cup water, salt and lemon juice. Bring to a boil, and simmer for 3 minutes.
  • Combine the cornstarch and 2 tablespoons of the water and mix until smooth. Add to the raisin mixture and continue to simmer until thick. Remove from heat and let cool. Once cool, stir in the chopped nuts.
  • Preheat Oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  • On a floured surface, roll out the chilled dough to 1/8 inch thick. Cut into 2 3/4 inch rounds. Place rounds on the prepared baking sheet. Place a heaping teaspoon of the raisin filling on the cookie round and top with another round. Crimp the edges closed.
  • Bake at 350 degrees F (175 degrees C) for 8 minutes. Allow cookies to cool on sheet until just barely warm.

2 cups raisins, chopped
2/3 cup sugar
2/3 cup water
1 tablespoon lemon juice
1 tablespoon butter
1 cup sugar
1 cup butter
1 egg, beaten
3 cups sifted flour
3 teaspoons baking powder
1/4 teaspoon salt
1/3 cup milk
2 teaspoons vanilla

Steps:

  • Filling:.
  • Cook raisins with sugar and water for 10 to 15 minutes, or until thick, stirring occasionally.
  • Remove from heat and add lemon juice and butter.
  • Let cool while preparing dough.
  • Cookie Dough:.
  • Cream sugar and butter; add egg and mix well.
  • Combine flour, baking powder, and salt, and add alternately to sugar mixture with milk and vanilla extract.
  • Roll out a portion of the dough to 1/8-inch thickness and cut into rounds with a biscuit cutter.
  • Place a teaspoonful of filling on the center of a round, then cover with another round and press edges together.
  • Bake at 350 degrees F until golden brown (10 to 15 minutes).

These cookies are my husband's favorite and are a must-have on four-wheeling trips because his grandma used to bring an ice-cream bucket full of them when they went out for a ride in the hills. I've tried other recipes I found on line, and they weren't what he remembered, so I finally tracked down Grandmas recipe and it's great. The vinegar in the filling gives it a tang rather than syrupy sweetness, and the cookie crisps up nicely.

1 lb raisins, washed and ground
1 dash salt
1 cup sugar
1/2 teaspoon nutmeg
2 tablespoons vinegar
1/4 cup butter
4 teaspoons cornstarch, dissolved in
1/2 cup water
1 1/2 cups shortening
1 1/2 cups sugar
2 eggs, beaten
1 teaspoon salt
1 teaspoon vanilla extract (lemon or almond could be used)
3/4 cup milk
1/2 teaspoon nutmeg
5 cups all-purpose flour

Steps:

  • For filling, mix raisins, salt, sugar, nutmeg, and vinegar in a sauce pan. Put on to boil and when boiling, add cornstarch dissolved in water. After it comes to a full boil again, remove from heat and set aside to cool.
  • For dough, cream the shortening, sugar, and eggs, and then add the salt, extract, milk, and nutmeg. Add enough flour (about 5 cups) to make the dough easy to handle.
  • Roll dough on a floured surface to a thickness similar to pie crust (about 1/8 inch). Use a cookie cutter to cut circles about 3 inches across. Drop a teaspoon of filling on a circle and cover with another, pressing out all air and press around the edges to seal.
  • Optional: Brush top surface with milk and sprinkle with granulated sugar.
  • Place on a cookie sheet and bake at 350 F for 18-20 minutes.

1/2 cup unsalted butter
3/4 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1 1/2 cups unbleached all-purpose flour
2 cups raisins or 2 cups currants

Steps:

  • Preheat the oven to 425°; lightly grease (or line with parchment) two baking sheets.
  • In a bowl, beat together the butter, sugar, vanilla, baking powder, and salt.
  • When smooth, beat in the egg.
  • Add the flour and raisins, stirring until well combined.
  • Drop the dough by the tablespoonful onto prepared baking sheets.
  • Using the bottom of a glass dipped in sugar, flatted the dough to a scant 1/2 inch thick.
  • Bake the cookies for 9 minutes, until they are barely set and just starting to brown around the edges.
  • Remove them from the oven, let them rest on the pan until you can move them without them breaking, then transfer to a rack to cool.

1/2 cup(s) butter or margarine softened
1 - egg
1/2 cup(s) milk
3 1/2 cup(s) flour
1 teaspoon(s) baking soda
2 teaspoon(s) baking powder

1 teaspoon(s) vanilla
FILLING MIXTURE
1 cup(s) seedless raisins
1/2 cup(s) water or orange juice
1 teaspoon(s) lemon juice
1/2 cup(s) walnuts or pecans
1 cup(s) sugar
1/4 teaspoon(s) salt
1 1/2 cup(s) flour

Steps:

  • Directions for filling mixture: Combine all ingredients and cook. Stirring over medium heat until thick. Cool before using.
  • Blend sugar, butter and eggs until smooth.
  • Add dry ingredients which have been sifted together, alternate with the milk.
  • Mix thoroughly and roll out thinly on floured board cut into rounds with a 3" cookie cutter. I take my thumb and make an indent. Put 1 teas filling on each cookie and place another round on top. Crimp edges together. Make small vents.
  • Bake in 375 degree oven about 12 to 15 minutes or until lightly browned.

My Grandmother always had these on hand whenever we would come to visit. We always gobbled them up. I never truly appreciated them tho, until I finally was given the recipe and realized the TIME that went into them. I recommend making the filling one day and the cookies the next.. just saves you that much time. I also like to just underbake a hair... I'll probably be strung and hung for sharing her recipe..:)

1 1/2 lbs raisins
2 cups sugar
1/2 teaspoon salt
1 1/2 cups water
1/2 cup flour
6 cups flour

2 1/2 cups sugar
4 large eggs, beaten
1 cup milk
2 tablespoons vanilla

Steps:

  • Raisin Mixture: Soak raisins in hot water.
  • When plumb and soft, drain water and grind.
  • Put in saucepan and add sugar, salt, and water.
  • Mix the flour with just enough water to make smooth paste, then add to raisin mixture.
  • Let come to boil, then set off to cool.
  • Cookie: In large mixing bowl, cream together butter& sugar.
  • Beat in eggs.
  • Add milk and vanilla.
  • Mix until well blended.
  • Combine dry ingredients together and add to butter mixture.
  • Roll out onto flour surface to about 1/4 inch thickness.
  • Cut with round cutter.
  • Lay on cookie sheet, and add 1 Tablespoon (about) ground raisin mixture to each cookie.
  • Top with another round cookie, pinch sides together.
  • Bake@ 350 8-10 minutes or until just starting to brown.

GRANDMA'S OLD FASHIONED FILLED COOKIES

Grandma made these cookies but Grandpa Carr handed them out to kids. He had a rule: If 2 cookies stick together you get them both. I usually make these with cherry or apricot filling now, but Grandma almost always used raisins.

COOKIES:
2 c sugar
2 eggs
1 c plus 2 tsp. shortening
1 tsp vanilla extract
6 c flour
4 tsp cream of tartar
2 tsp baking soda
1 tsp salt
1 c milk
FILLING:
3 c raisins, dates, or dried apricots or cherries
2 tsp flour
1 c sugar
1 c water
1/2 c finely chopped nuts (optional)

Steps:

  • 1. Cream together sugar, eggs, shortening, and vanilla. Sift together 5 cups flour, salt, cream of tartar, and soda. Add alternately with milk. Add last cup flour gradually. Dough should be soft. Chill thoroughly.
  • 2. Combine ingredients for filling in saucepan. Cook for 10-15 minutes, stirring, until thickened. Cool. After dough and filling are chilled, roll dough 1/4 inch thick on floured board. Use a 2-inch cookie cutter dipped in flour. Cut out cookies and place on lightly greased cookie sheet 2 inches apart. Place 1 heaping teaspoon of filling on cookie circle, then top with another cookie circle. Press edges together with a fork and prick top of cookies to allow steam to escape. Bake at 350 degrees for 10-15 minutes until golden brown. Time will vary by thickness of cookies and amount of filling used so watch closely while baking..

1-1/4 cup dark raisins
1/3 cup walnuts, finely chopped
1/2 tsp cinnamon
1-1/2 Tbsp sugar
1/3 cup apple jelly
Cookie Dough:
2-1/3 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 oz unsalted butter, softened
2 oz cream cheese, softened
1/2 cup brown sugar, packed
1/2 cup sugar
1 egg
1 Tbsp vanilla extract
1-1/2 Tbsp milk

Steps:

  • To prepare the filling, add the filling ingredients to a medium-size bowl and mix with a spatula until evenly incorporated. Place the mixture into an airtight container and refrigerate for 8 hours, or overnight. To prepare the cookie dough, combine the flour, baking powder, baking soda, and salt. Set aside. With a stand or hand mixer, cream the butter, cream cheese, and both sugars. Add the egg and vanilla and mix until incorporated. Add the flour mixture in two batches, alternating with the milk. Remove the dough from mixing bowl and form it into a disc. Wrap the dough in plastic wrap and refrigerate for 6 hours, or overnight. To bake the cookies, preheat the oven to 350°F. Line two cookie sheets with parchment paper and set aside. On a lightly floured surface, roll out the now-chilled dough until it's 1/8" thick. Lightly flour two round cookie cutters, one 2-1/2" and one 3". Press them into the dough to shape your cookies. Place the 2-1/2" cut circles onto the prepared cookie sheets. Spoon one heaping Tbsp of the filling and place it in the middle of each circle. With a little bit of water, lightly wet the edges of the cookie with your fingers. Top each with a 3" round cutout. Seal the edges together, pressing with your fingers and cut a small slit right over the filling of each cookie. Bake for 14-16 minutes, or until lightly browned. Move the cookies to cooling racks.

1 1/4 c lard or butter
1 c milk
3 c sugar (reserve 1 c for filling)
2 eggs
2 tsp baking soda
1 1/2 tsp cream of tarter
2 tsp vanilla
7 c plain flour (not self-rising)
2 Tbsp plain flour or 1 tbsp cornstarch - for filling
2 c raisins for filling

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Make Filling: 2 cups raisins covered with 1 inch of water. Cook for 15 minutes. Then add: 1 cup sugar 2 tablespoons plain flour or 1 tablespoon cornstarch Stir until thickened and remove from heat to cool.
  • 3. Mix ingredients for cookie dough while raisin filling is cooling.
  • 4. Roll out dough and cut out cookies with a biscuit cutter, a clean empty vegetable can, a jar or drinking cup (depending on how big you want your cookies). Spoon 1 tsp to 1 tbsp filling(depending on the size of your cookie)onto center of cookies and top with another cookie that has a slit cut in the center for steam to escape. Seal the cookies around the edges. Bake in 350° oven until golden brown.
