3 (10 oz) bags frozen chopped spinach
2 tablespoons butter
1 medium yellow onion, diced
6 large cloves garlic, minced
4 oz cream cheese
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
salt and pepper, to taste

Steps:

  • Cook spinach in microwave according to package directions. Remove excess water (squeeze carefully using cheese cloth, a tea towel, or a colander) and set aside.
  • In a large skillet over medium high heat, melt butter. Add onion and sauté until translucent.
  • Add garlic and cook for 30 seconds. Add cream cheese and cook, stirring, until melted.
  • Add heavy cream and cook for 2 minutes. Add mozzarella cheese, parmesan cheese, salt and pepper. Stir till combined.
  • Fold in spinach into cream sauce and cook for an additional minute to reheat spinach.
  • Serve immediately or store in an airtight container in the fridge for up to a week. The leftovers reheat great and you can also freeze it!

20-24 ounces fresh spinach ((about 1 1/2 pounds))
5 tablespoons butter
1 onion (finely chopped)
4 cloves garlic (crushed)
1/4 cup flour
2 cups half and half ((or whole milk))
kosher salt (to taste)
ground black pepper (to taste)
1/2 cup Parmesan cheese ((fresh, shredded-- not the powdered kind))
1/2 cup Mozzarella cheese
5 wedges Creamy Swiss (Laughing Cow) ((or 4 oz. cream cheese))

Steps:

  • Bring a large stockpot of water to a boil. Add spinach and cook down for about 2-3 minutes or until spinach is wilted but not soggy.
  • Drain spinach well and then wring out using cheesecloth (preferred) or a kitchen towel. You can also press spinach in a fine-mesh strainer to try and remove excess water. Note: the spinach may be VERY hot, handle with care and allow to cool if needed.
  • Note: you may be surprised to find that you only have 1-2 cups of spinach. This is totally normal.Set spinach aside.
  • In a large skillet over medium heat, melt butter. Add onions and garlic and cook until onions become soft and transparent.
  • Sprinkle flour over the onions and stir until flour is cooked (about 3 minutes).
  • Pour in half and half a little at a time, whisking constantly making a beschamel sauce. You want it to be the consistency of a thin gravy. Add more half and half or milk if needed.
  • Add salt and pepper to taste.
  • Add spinach and stir until spinach is well mixed in.
  • Add Parmesan cheese, Mozzarella cheese, and creamy Swiss cheese (or cream cheese). Stir until all cheeses are melted and completely mixed in.
  • Serve immediately.

My Favorite Creamed Spinach image

I love this creamed spinach even though I don't care for most cooked spinach dishes. I worked on this until it tasted like the one in a favorite restaurant of ours.

1/4 cup(s) onions, diced
2 - garlic cloves, small to medium, minced
1 tablespoon(s) butter
1 tablespoon(s) flour
1 1/4 cup(s) half and half
2 ounce(s) cream cheese, cut into small cubes
1/8 teaspoon(s) nutmeg
1/2 teaspoon(s) salt
16 oz. package(s) frozen spinach, thawed and sqeezed
1/4 cup(s) plus 1 tablspn parmesan cheese, shredded

Steps:

  • Saute the onion and garlic in the butter until tender. Stir in the flour.
  • Slowly whisk in half and half. Bring to a boil using medium heat.
  • Stir for a couple of minutes until slightly thickened.
  • Add the cream cheese, nutmeg and salt. Stir until cream cheese is melted.
  • Stir in the spinach and 1/4 cup of the Parmesan cheese until throughly heated. (save the 1 Tablespoon cheese for next step)
  • Top with the reserved 1 Tablespoon Parmesan cheese and serve!

FAVORITE CREAMED SPINACH



Favorite Creamed Spinach image

This recipe is made with a white sauce, and has lots of garlic in it. I came up with this recipe after making several other creamed spinach recipes that were overcooked, flavorless, and dull. I wanted something bright green, garlicky, and creamy. This is the only creamed spinach dish that my husband will eat now. Feel free to use all butter or all olive oil or substituting cream for the milk depending on your taste. I think this combination is big on flavor and cuts a lot of fat. I have even had success serving this dish to people who claim they do not like spinach. Enjoy!

1 lb frozen spinach, thawed and drained well
1/2-1 medium onion, chopped
5 -7 garlic cloves, minced well
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons flour
2 teaspoons salt
2 cups milk
2 tablespoons parmesan cheese

Steps:

  • 1) sautée onions in butter and 1 t of salt on medium heat.
  • 2) when onions begin to become translucent add garlic and olive oil.
  • 3) add flour to make a thick paste, all liquid should be absorbed, you can add more flour or olive oil if needed, cook for 2 to 3 minutes to cook flour thoroughly.
  • 4) let cool slightly and whisk in milk, stirring continuously to avoid lumps while bringing to mixture to a boil, when finished the sauce should be thick enough to cover the back of a spoon, (be careful not to burn the sauce on the bottom of the pan).
  • 5) Add spinach (with as much water removed as possible) and the remaining 1 t of salt (or to taste) and Parmesan, stir thoroughly to combine, bring back to a simmer and remove from heat.

There are lots of creamed spinach recipes on Zaar, but this one is different in that it uses not only fresh spinach and real cream, but also chicken broth. If you don't care for sweet onions, use regular white onion. Recipe adapted from a version found in the Steak Lover's Coobook.

2 (10 ounce) bags fresh spinach, washed (I prefer baby spinach leaves)
1/2 cup chopped sweet onion (such as Vidalia or Wala Walla)
1/4 teaspoon freshly grated nutmeg, to taste
1/8 teaspoon ground cinnamon
1/8 teaspoon salt (to taste)
1/2 cup reduced-sodium chicken broth
1/2 cup heavy cream

Steps:

  • Rinse off spinach well and shake to dry, but there should be some water still on the leaves (this residual water will help steam the spinach).
  • Remove any tough stems from the spinach, then place spinach leaves into a large saucepan, cover, and cook over medium heat just until wilted- approximately 4 minutes, checking once halfway through to flip the leaves over to ensure even cooking.
  • Have ready a mesh strainer, so that as soon as the spinach leaves have wilted, you can strain them over the sink, while running cold water over them to prevent overcooking.
  • Make sure the spinach is cooled down very well from the water, then set aside to drain.
  • Mix together onion, spices,salt,chicken broth,and cream in a small pan.
  • Bring to a boil (uncovered) over medium heat and let reduce to about 3/4 cup, this will take some time- approximately 15-20 minutes, stirring occasionally and adjusting heat as needed to keep from burning.
  • Meanwhile, squeeze the spinach dry using your hands- get out all the excess liquid you can.
  • Chop spinach coarsely and then add to the reduced cream mixture.
  • Taste and season to taste.
  • If making this in advance, cover and chill then reheat in a saucepan until bubbling, stirring, for about 4 minutes or until warmed through.
