MY FAMILY'S FAVORITE CHILI
This is so easy and everyone loves it. Set out some bowls of sour cream and shredded cheese to top the chili. We like to serve it in bread bowls. Enjoy!

- Ina large pot, brown the beef, onions and garlic for about 8-10 minutes.
- Drain fat and add the remaining ingredients.

THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
MY BEST KID-FRIENDLY CHILI
The husband and I love chili, and love it spicy! But cooking for 3 little children requires me to tone it down for their taste buds. We like to add a few dashes of Sriracha® or fresh chopped jalapeno and onion to make up for the missing heat. The kids are partial to goldfish crackers on top! But as with any chili, feel free to top it with your favorites. If you are lucky enough to live near an Italian market, the salsiccia is best in our opinion. If not, then you can sub another kind of ground Italian sausage. It may be light on spice, but full of flavor!

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Place green bell pepper on the prepared baking sheet.
- Broil bell pepper in the oven, turning every 5 minutes, until skin is blackened and bubbling, about 20 minutes. Transfer roasted pepper to a resealable plastic bag; seal and set aside.
- Heat a Dutch oven over medium-high heat. Cook and stir ground beef and ground sausage in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground meat to a bowl.
- Heat olive oil in the same Dutch oven over medium-low heat; cook and stir onions and garlic in the hot oil until onions are translucent, 5 to 10 minutes.
- Carefully remove roasted pepper from the plastic bag and peel off the blackened layer; chop the pepper. Add chopped bell pepper, ground meat mixture, chili beans, coffee, green chiles, cocoa powder, cumin, and chili powder to the onion mixture; stir well. Simmer, stirring frequently, until warmed, about 5 minutes.
- Stir crushed tomatoes and water into chili; season with salt. Bring to boil. Cover Dutch oven, reduce heat, and simmer, stirring occasionally, until flavors have blended, at least 30 minutes. Remove cover and simmer until chili is thickened, about 30 more minutes.

- IN a large pot put all ingredients in it except for the shredded cheese. Mix well, cook on low to medium-low heat for 8 hours, stirring every couple of hours.

FAMILY FAVORITE CHILI
The name says it all...this has always been my family's favorite, even though there are a lot of shortcuts. It is simple to make, tasty and fast. What else can you ask for? To serve, I ladle it into a large bowl and garnish it with lots of shredded cheddar cheese and jalapenos. I insert tortilla chips all around the edge of the bowl for either scooping up some of the chili with (nacho-style) or eating along with the chili itself.

FAMILY FAVORITE CHILI
I found this recipe several years ago at the service meat counter in our local supermarket and tweeked it a little. I also call it 'Really Good Chili That's a Whole Lotta Work' but my guys love it so what can I do? It can be 1/2 diced beef and 1/2 ground beef but we like it all diced. It's pretty mild so add more chili powder and chopped chilis if you like it hot. I also use trimmed stew beef instead of a roast, costs a bit more but its quicker to cut up. Prep time includes browning the beef and onions. It's good left over also.

- Heat oil in a large saucepan over high heat; add the beef in small batches and brown till no longer pink, 3-5 minutes per batch; set beef aside after browning.
- Reduce the heat to medium, add the onions and garlic to the pan; cook for 3-5 minutes or till translucent.
- Return the beef to the pan and stir in the cumin, oregano, sugar, salt, and tomatoes.
- Cover and bring to a boil; reduce heat and simmer for 2 hours.

MY FAVORITE CHILI
This is the only chili recipe I've used for the last 8 years or so. I think its pretty outstanding. I vary the hot ingredients depending on who will be eating it and the mood I'm in. I've also used ground venison and it was just as good.

- In a large kettle, stir fry the onion, green pepper, celery and garlic in the vegetable oil for about 8 minutes or until tender.
- Add the ground beef and cook until done.
- Drain.
- Return meat to kettle, add remainder of ingredients (and kidney beans) and enough water to come to the top of the chili ingredients.
- Stir til mixed completely.
- Simmer on low heat, uncovered for at least 3 hours.
- Top with cheddar cheese and sour cream if desired.
