1 c sugar
6 Tbsp butter
1/2 c heavy whipping cream

Steps:

  • 1. FIRST POUR THE SUGAR IN A SMALL POT OVER LOW HEAT. AS THE SUGAR BEGINS TO MELT, STIR CONSTANTLY WITH A WHISK.
  • 2. ONCE THE SUGAR HAS MELTED, YOU WILL HAVE LIQUID SUGAR. THEN ADD BUTTER TO MELTED SUGAR AND WHISK BUTTER UNTIL IT HAS MELTED.
  • 3. ONCE THE BUTTER HAS MELTED TAKE THE POT OFF THE HEAT, SLOWLY POUR IN THE CREAM, AND WHISK AS YOU POUR.
  • 4. CONTINUE TO WHISK UNTIL CARAMEL SAUCE IS SMOOTH. LET IT COOL IN THE POT FOR A FEW MINUTES, THEN USE ON CAKES OR POUR OVER ICE CREAM.

⅓ cup water
1 ½ cups white sugar
2 tablespoons unsalted butter
1 ¼ cups heavy cream
½ teaspoon vanilla extract
1 pinch salt

Steps:

  • Bring the water, sugar, and butter to a simmer in a saucepan over medium heat. Do not stir the mixture until the sugar has completely dissolved in the water. Cook uncovered, stirring occasionally, until the caramel has turned golden brown, 5 to 10 minutes.
  • Carefully pour in a slow, steady stream of cream into the caramel while stirring constantly. The hot caramel will boil vigorously when the cream is added and solidify in areas. Add the vanilla extract and salt. Continue stirring over low heat until the caramel is smooth and creamy, 5 to 10 minutes more. Allow to cool for at least half an hour before using.
