1 tablespoon all-purpose flour
¾ cup white sugar
1 tablespoon mustard powder
1 cup milk
2 egg yolks
½ cup tarragon vinegar

Steps:

  • In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. Stir in the vinegar. Whisking constantly, bring the mixture to a boil over medium heat, reduce heat to low, and simmer until thickened.

The elegantly sharp flavors of Dijon mustard come together with chicken stock, heavy cream, and Worcestershire to form a velvety pan sauce perfect with seared meats, seafood, and poultry! This sauce is perfect for a quick weeknight meal, family gathering, or holiday event.

2 tablespoons unsalted butter (omit if using pan drippings )
1½ cups chicken stock
1 tablespoon Dijon mustard
1 cup heavy cream
¼ teaspoon Worcestershire sauce
sprinkle Fresh thyme (garnish, optional )

Steps:

  • In a medium-sized skillet, melt 2 tablespoons of butter (omit this step if using pan drippings - see notes). Once the butter is melted and foaming, whisk in chicken stock and heavy cream.
  • Add Dijon mustard and Worcestershire sauce and whisk through to combine. Bring the sauce to a boil, then reduce the heat to medium and simmer, uncovered, for 15 minutes or until the sauce has thickened slightly.
  • If serving with a main protein, such as pork chops, you can add them back to the pan to cook in the sauce.
  • Garnish with fresh thyme and serve immediately.

2 shallots , finely chopped
150ml white wine
1 bay leaf
2 tsp light soft brown sugar
2 tbsp English mustard
1 tbsp wholegrain mustard
200ml crème fraîche

Steps:

  • Put the shallots, wine, bay leaf and sugar in a pan and set over a medium heat. Simmer until the wine has reduced by half and the shallots have softened. Stir in the 2 mustards and crème fraîche. Serve warm or cold.

1/4 cup Dijon mustard
1 teaspoon dry mustard
3 tablespoons sugar
2 tablespoons white vinegar
1/3 cup light vegetable oil
1 small bunch of fresh dill, finely chopped

Steps:

  • Combine in the bowl of a food processor fitted with the metal blade, the mustards, sugar, and vinegar. Add the oil drop by drop until the mixture is thick. Remove sauce to a small bowl. Stir in dill. Refrigerate until ready to use.

4 T. vinegar
1 T butter
2 beaten eggs

Steps:

  • Mix first set ingredients together. Add beaten eggs and beating constantly cook over hot water until quite thick. Strain if necessary. Thin with cream
