2 tablespoons country-style dijon mustard
2 garlic cloves, large, pushed through a press
1/2 teaspoon dried rosemary, crumbled
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
4 lbs rib eye steaks, 4 steaks or 4 lbs boneless top loin steaks, 1-inch thick
salt

Steps:

  • Combine mustard, garlic, rosemary, thyme, oregano and pepper. Spread mixture on both sides of steaks.
  • Grill steaks over medium coals, turning occasionally, 11 to 14 minutes for medium-rare to medium (if using top loin steaks, grill a little longer), turning halfway through cooking time. Season with salt to taste.

3 tablespoons ground dry mustard
3 tablespoons kosher salt
1-1/2 tablespoons brown sugar
2 teaspoons pepper
2 teaspoons paprika
1/4 teaspoon cayenne

Steps:

  • Mix all the ingredients in a bowl, using your fingers to break up any lumps. Pat the meat dry with paper towels, then sprinkle the rub all over, using your fingers to pat the spices into the meat. Wrap the meat in plastic wrap and refrigerate for up to 24 hours.

2 Tbsp balsamic vinegar
1 Tbsp olive oil, extra virgin
1 Tbsp Zatarains or other Creole mustard
1/2 tsp thyme, dried
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 1/2 lb pork loin roast

Steps:

  • 1. Mix the vinegar, oil, mustard and spices together.
  • 2. Rub this all over the roast, pour whatever is left on the roast and let it marinate for about 20 minutes, or while the coals are getting hot.
  • 3. When the coals are hot, sear the roast on each side about 5 minutes, then put in indirect heat, cover and roast about 20 minutes or until an instant-read thermometer reads 165. Remove from the grill, and let rest a few minutes before cutting.
  • 4. If you are going to be doing this indoors, then heat an iron skillet on the stove top, brown all sides of the roast, then put in the oven for the rest of time, about 20 minutes.

1 1/4 teaspoons salt
1 teaspoon ground pepper
1/2 teaspoon ground cumin
1/4 teaspoon ground mustard
4 salmon fillets, 6 oz each
1 teaspoon olive oil

Steps:

  • Mix together sugar, salt, pepper, cumin and mustard.
  • Press mixture onto fish.
  • Heat oil in cast iron skillet over medium heat. Add fish, skin side up and cook about 4 minutes. Make sure the rub does not burn. Flip fish and cook to medium doneness, about 1 more minute.
  • Serve.

This is a wonderful dry rub used for any cuts of lamb. Sprinkle the lamb and let marinate for up to 24 hours. I have included a variation for a wet rub. This rub is also excellent for chicken and pork.

2 tablespoons dried rosemary
1 1/2 tablespoons garlic flakes, dried
1 tablespoon coarse salt (kosher or sea salt)
1 1/2 teaspoons black pepper, freshly ground
1 1/2 teaspoons brown sugar
1 teaspoon mustard powder

Steps:

  • Coarsely grind the mustard seed in a blender.
  • Rub the rosemary in your fingers until well crushed. Add the mustard seed, garlic, salt, pepper, sugar and mustard powder and combine.
  • Transfer to a jar, cover and store away from heat and light. This rub will keep for several months.
  • Variation: For a web rub, stir 1 T Worcestershire sauce and 1 T olive oil into the rub. Spread the paste over the lamb and let marinate for several hours.

1/2 cup fresh herb (any combination of parsley, sage, rosemary, thyme, tarragon, dill and savory)
2 tablespoons Dijon mustard
2 tablespoons grainy mustard
2 tablespoons olive oil

1 tablespoon white wine vinegar
1/2 teaspoon black pepper, coarsely ground

1/3 cup grainy mustard
2 teaspoons orange zest
1/4 cup fresh orange juice
1 garlic clove, finely chopped

Steps:

  • Preheat oven to 450°F with rack in middle position.
  • Cut tenderloins into 6 serving pieces, pat dry, then sprinkle with 1 1/4 teaspoons salt and 3/5 teaspoons pepper (total). Stir together mustard, zest, juice and garlic.
  • Heat oil in a 12-inch heavy oven proof skillet over medium-high heat until it shimmers, then sear pork until browned on 1 side, about 5 minutes. Turn pork over and spoon mustard mixture over browned sides.
