½ cup onion, chopped
1 tablespoon prepared yellow mustard

Steps:

  • Place pickle slices in a food processor; pulse until pickles resemble relish. Spoon relish into a bowl and set aside. Rinse and dry food processor bowl. Add onion and pulse until it is the same size as the relish. Stir onion and mustard into the relish with a spoon until well-blended.

2 medium cucumbers
1 large bell pepper
2 medium onions
1/4 cup white vinegar
1 -2 teaspoon horseradish
2 teaspoons French's mustard
1 teaspoon salt
1 teaspoon celery seed
1/2 teaspoon ground ginger
2 cups white sugar
3/4 ounce powdered fruit pectin

Steps:

  • Peel and seed cukes and finely chop.
  • Finely chop onions and peppers.
  • Place in a colander and drain for 1 hour-squeeze and toss into a large pot.
  • Add vinegar, mustard, horseradish, salt, celery seed and ginger.
  • Add pectin and mix WELL.
  • bring to a full rolling boil and all the sugar.
  • Bring to a hard boil again and boil for 1 minute-your doing a lot of stirring also.
  • Remove from heat, skim and ladle into hot sterilized jars leaving 1/8 inch head space.
  • Process for 10 minutes at altitudes up to 1000 feet.

2 pounds fresh tuna steaks, finely chopped

Green Chile-Pickle Relish, recipe follows
3 poblano chiles, grilled, peeled, seeded and finely diced
3 dill pickles, finely diced
1/4 cup finely chopped red onion
3 tablespoons fresh lime juice
2 tablespoons honey
3 tablespoons finely chopped cilantro leaves
3 tablespoons olive oil
Salt and freshly ground pepper

Steps:

  • Combine the pineapple juice, vinegar, ginger, soy sauce and brown sugar in a small saucepan and bring to a boil. Reduce the heat to low and simmer until the volume is reduced by half, about 30 minutes. Whisk in 2 tablespoons mustard, remove from the heat, and add the lime juice and white pepper. Let cool.
  • Combine the tuna, 2 tablespoons Dijon, chipotle pepper puree, honey, oil, and green onions in a large bowl, and season with salt and pepper. Shape the ground tuna firmly into 8 round uniform patties about 1 1/2-inches thick. Refrigerate for 30 minutes; the burgers must be very cold to hold their shape when cooking. Grill burgers for 3 minutes on each side for medium doneness, basting often with the glaze. Serve the burgers on buns with the watercress and the Green Chile-Pickle Relish.
  • Combine all ingredients in a medium bowl and season, to taste, with salt and pepper. Let sit at room temperature for 30 minutes before serving so that flavors meld.

1 small shallot, coarsely chopped

3 tablespoons packed light brown sugar
2 tablespoons soy sauce
2 tablespoons Dijon mustard
3 tablespoons fresh lime juice
Kosher salt and freshly ground black pepper
GREEN CHILE-PICKLE RELISH
2 poblano chiles
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
3 medium dill pickles, finely diced
1/4 cup finely chopped red onion
3 tablespoons fresh lime juice
1 tablespoon honey
3 tablespoons finely chopped fresh cilantro leaves
3 tablespoons extra-virgin olive oil
TUNA BURGERS
1 1/2 pounds fresh tuna
4 tablespoons canola oil
2 tablespoons Dijon mustard
1 tablespoon honey
2 teaspoons pureed canned chipotle chile in adobo
2 green onions (green and pale green parts), thinly sliced
Kosher salt and freshly ground black pepper
4 hamburger buns, split; toasted (see page 15), if desired
Pickled Red Onions (page 116), for garnish (optional)

Steps:

  • To make the glaze, combine the pineapple juice, vinegar, shallot, and ginger in a small nonreactive saucepan and cook over medium heat until reduced by half, about 10 minutes. Transfer to a blender and blend until smooth.
  • Return the mixture to the saucepan, add the brown sugar, and cook over high heat, stirring occasionally, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the soy sauce, mustard, and lime juice and season with salt and pepper. Transfer to a bowl and let cool to room temperature. The glaze can be made 1 day in advance and stored in a container with a tight-fitting lid in the refrigerator. Bring to room temperature before serving.
  • Meanwhile, to make the relish, preheat the oven to 375 degrees F.
  • Put the chiles on a rimmed baking sheet, rub them with the oil, and season with salt and pepper. Roast in the oven until the skins of the chiles are blackened, about 15 minutes. Remove the chiles from the oven, place in a bowl, cover with plastic wrap, and let the chiles steam for 15 minutes. Peel, stem, and seed the chiles and then finely dice them.
  • Combine the chiles, pickles, onion, lime juice, honey, cilantro, and oil in a medium bowl and season with salt and pepper. Let sit at room temperature for 30 minutes before serving so that the flavors meld. The relish can be made 8 hours in advance and stored in a container with a tight-fitting lid in the refrigerator. Let come to room temperature before serving.
  • Cut the tuna into large pieces and then coarsely chop in a food processor. Do not overprocess. (Alternatively you can chop it by hand with a sharp knife.)
  • Whisk together 2 tablespoons of the oil, the mustard, honey, and chipotle in a large bowl. Add the tuna and green onions and gently fold to combine. Divide the tuna mixture into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Place on a plate, cover with plastic wrap, and let chill in the refrigerator for at least 30 minutes before cooking.
  • To cook the burgers, heat the remaining 2 tablespoons oil in a sauté pan or griddle (nonstick or cast iron) until it begins to shimmer. Season both sides of each burger with salt and pepper. Cook the burgers until golden brown on the bottom sides, about 3 minutes. Turn over, brush with some of the glaze, and continue cooking until medium, about 3 minutes longer.
  • Place the burgers on the bun bottoms, drizzle with more of the glaze, and top with the relish and pickled red onions, if using. Cover with the burger tops and serve immediately.

REALLY GOOD, SIMPLE, FRESH POTATO SALAD- NO MUSTARD- NO RELISH



Really Good, Simple, Fresh Potato Salad- No Mustard- No Relish image

This recipe was given to me by an elderly woman who had brought lunch to another elderly woman that I was taking care of. I don't know know the origin of this type of potato salad, and tried to search Zaar to make sure I wasn't duplicating, but admit that I did not search all 1200 potato salad recipes. I have never tasted a potato salad that was so good, so I got the recipe from her. The amounts are approximate as she just told me the ingredients, and I eyeball it, of course it also depends on how much you want to make, so adapt it accordingly. She did insist however that you have to use Hellmann's mayo. My husband, who Never eats potato salad eats and actually enjoys it. It has a nice mellow flavor and texture with-out the typical relish and mustard, I'm sure all of the eggs contribute to that. I took it to a church potluck and got raves about it. It is definitely not low fat, not sure how it would adapt. Another example that sometimes simple IS better. Hope you enjoy!

12 -15 medium potatoes (any kind)
1 dozen hard-boiled egg
2 -2 1/2 cups Hellmann's mayonnaise
1 sweet onion
1 tablespoon celery seed
salt & pepper

Steps:

  • Peel and dice potatoes, Boil in salted water until tender.
  • Hard boil eggs, peel, chop. (obviously lol).
  • Finely chop onion.
  • *1-2 ribs of finely diced celery is nice, but was not in the original recipe.
  • A dash of garlic powder or garlic salt is nice too.
  • Judge the amount of Mayo to your taste and # of potatoes, but do add it until it is nice and creamy.
  • Mix all ingredients together when warm, serve fresh with-out chilling, if you can, it is good chilled too, but particularly creamy when warm-to room temperature.
  • It is also best to use the hardboiled eggs right after cooking, it's ok if they are slightly cooled from peeling, but best in this, if they are freshly cooked.
  • Most of the prep time is attributed to the peeling and chopping of the potatoes.
  • *Of course, because of the Mayo you won't want to leave it out too long.
  • I have also heard (unknown it it's true, but I never take the chance) not to serve anything that has Mayo in it, with Sterling Silver servers.

(The burgers must be very cold to hold their shape when cooking) Brush both sides of the burgers lightly with the pineapple glaze and season with salt and pepper to taste. Preheat grill. Grill burgers for 3 to 4 minutes on each side for medium doneness, basting often with the glaze. Serve burgers on rolls with watercress.
  • To prepare the relish: Combine all ingredients in a medium bowl and season with salt and pepper to taste. Let sit at room temperature for 30 minutes before serving.
  • To prepare the gaufrettes: Heat oil to 365 degrees F in a deep fryer. Fry potato in batches and remove to large plate lined with paper towels. Season immediately with salt and ancho chile powder.

1 cup butter, softened
1/2 cup confectioners' sugar
2 cups all-purpose flour
1 teaspoon vanilla
red food coloring
green food coloring
3 teaspoons flaked coconut
yellow decorator's frosting

Steps:

  • Cream butter and sugar together.
  • Beat in flour and vanilla.
  • Remove 1 cup dough.
  • Add red food coloring and knead until well mixed.
  • Cover and chill remaining dough for 1 hour.
  • For hot dogs, divide red dough into 16 portions.
  • Shape into 2 1/2 inch hotdog shapes, rounding ends.
  • Set aside.
  • Divide plain dough into 16 portions.
  • Shape into 3" bun shapes.
  • Make a very deep length-wise groove in the center of each.
  • Smooth edges to form buns.
  • Place 3 inches apart on an ungreased baking sheet.
  • Place hotdogs in buns.
  • Bake at 350 degrees for 12 to 15 minutes or until edges are browned.
  • Cool.
  • Meanwhile, for pickle relish, place the coconut and some green food coloring into a plastic bag.
  • Shake well to color the coconut.
  • Sprinkle the relish around the hotdogs in the buns.
  • For mustard, pipe a curvy stripe of yellow frosting down the middle of each hotdog.

Steps:

  • Toss pumpkin with sugar and a pinch of salt in a large bowl. Let stand at room temperature, stirring occasionally, 1 hour. Chill, covered, 8 hours. (Sugar will liquefy.)
  • Simmer pumpkin mixture, water, and wine in a wide 6-quart heavy pot until pumpkin is just tender, about 10 minutes. Transfer pumpkin with a slotted spoon to a bowl and stir in raisins, then boil cooking liquid until reduced to about 1 cup, about 10 minutes. Transfer syrup to a measuring cup, then slowly whisk into mustard in a small bowl until smooth. Stir into pumpkin mixture. Cool, then chill, covered, at least 8 hours for flavors to meld. Serve at room temperature.

2 1/2 lbs green beans, sliced 1/4 inch (two quarts)
2 cups chopped onions
1 1/2 cups chopped celery
3 cups white distilled vinegar
2 cups firmly packed light brown sugar
1/4 cup flour
1/4 cup dry mustard
1 1/2 teaspoons ground turmeric
1 1/2 cups cold water
1 1/2 teaspoons celery seeds

Steps:

  • Cook vegetables in lightly salted boiling water until tender, about 30 minutes.
  • Drain and discard liquid.
  • In separate saucepan combine vinegar and sugar and bring up to a boil.
  • Meanwhile combine flour, mustard and tumeric with cold water and stir slowly into hot vinegar mixture.
  • Add celery seed and simmer 20 minutes, stirring occasionally.
  • Add vegetables and simmer 10 minutes, stirring occasionally.
  • Continue to simmer while you pack into prepared (sterilized) jars filling to within 1/2" of the top making sure vinegar solution covers the vegetables.
  • Cap.
  • Process in boiling water bath five minutes.

3 onions, peeled and sliced
1 garlic clove, minced
3 tablespoons dark brown sugar (Muscovado)

1/2 cup honey
2 tablespoons prepared horseradish
1/4 cup poppy seeds
1/4 cup sesame seeds
1/4 cup dried garlic
1/4 cup dried onion
1 tablespoon coarse sea salt
2 teaspoons cracked black pepper
4 links smoked sausage or kielbasa (about 2 pounds)
1 package puff pastry (2 sheets)
1 egg, lightly scrambled

Steps:

  • For the relish: Add the cherry peppers, garlic, honey, cider vinegar, olive oil and salt to the bowl of a food processor. Pulse to combine. (Makes 2 cups.)
  • For the mustard: Add the whole-grain mustard, yellow mustard, honey and horseradish to a small bowl. Stir to combine. (Makes 2 cups.)
  • For the everything spice: Add the poppy seeds, sesame seeds, dried garlic, dried onion, salt and pepper to a small bowl. Stir to combine. (Makes 1 cup.)
  • For the pigs-in-a-blanket: Preheat the oven to 400 degrees F.
  • Cut each piece of puff pastry in half, and roll each half around a sausage link, using a bit of egg wash to adhere. Place the piggies seam-side down, brush with egg wash, and sprinkle each with 1 teaspoon of the everything spice. Transfer to a parchment-lined baking sheet and bake until golden and puffy, 15 to 20 minutes.

1 head Bibb lettuce, leaves separated

Steps:

  • Preheat the oven to 350 degrees F. Preheat the grill to high heat.
  • Start by forming the meat into 4 patties about 3/4-inch thick. Refrigerate until ready to grill.
  • For the relish: Combine 2 cups water, the vinegar, seeds, honey and salt in a medium saucepan. Bring to a simmer and cook over medium-high heat until the liquid has reduced to a creamy consistency, about 12 minutes. Heat the oil in a medium skillet over medium heat. Add the onions and cook, stirring occasionally until caramelized and golden brown, about 20 minutes. Add the veal stock and cook until the skillet is dry, about 3 minutes. Stir the onions into the mustard seed mixture and reserve until needed.
  • Meanwhile, lay the pancetta on a baking sheet and bake until golden brown and crispy, 12 to 15 minutes.
  • Sprinkle the burgers liberally with salt and pepper and grill until medium rare, 4 minutes per side. Toast the buns on the grill and place 1 ounce of the cheese on top of each burger. Close the lid until the cheese melts and becomes gooey, about 30 seconds.
  • Place the burgers on the buns and top each with the relish and 2 slices of pancetta. Garnish with the tomatoes and lettuce and serve.

You know how the cheese sometimes oozes out of a grilled cheese while it's cooking and gets all brown and crunchy when it hits the skillet? Well, this open-face sandwich recipe is dedicated to making that happen on purpose.

1/3 cup leftover cranberry sauce
3 tablespoons whole grain mustard
1/2 teaspoon crushed red pepper flakes
4 (1/2-inch-thick) slices Pullman or other white bread
4 tablespoons unsalted butter, divided
8 ounces aged white cheddar, grated (about 3 cups), divided
8 ounces thinly sliced ham, divided
2 teaspoons vegetable oil
4 large eggs
Kosher salt, freshly ground pepper

Steps:

  • Preheat oven to 350°F. Mix cranberry sauce, mustard, and red pepper flakes in a small bowl. Spread relish over 1 side of each slice of bread.
  • Melt 1 Tbsp. butter in a medium ovenproof nonstick skillet over medium heat. Place 1 slice of bread, plain side down, in skillet and cook until just golden on bottom side, about 2 minutes.
  • Scatter 3/4 cup cheese over and slightly around bread (the cheese in contact with the pan will begin to melt immediately). Transfer skillet to oven and bake until cheese is golden brown around edges, about 2 minutes. Remove skillet from oven and top bread with a few slices of ham; let sandwich cool slightly in pan 1 minute. Using a rubber spatula, carefully loosen edges of cheese and transfer sandwich to a plate. Repeat with remaining butter, bread, cheese, and ham to make 3 more sandwiches. Wipe out skillet.
  • Heat oil in same skillet over medium. Crack eggs into skillet, cover, and cook until whites are just set but yolks are still runny, about 3 minutes. Top each sandwich with a fried egg; season with salt and pepper.

PICALLILI/MUSTARD PICKLE RELISH

I found this recipe in a Trini recipe book but did have to adjust the amount of vinegar and added a little more hot peppers.

4 ounce(s) cauliflower, small florets
4 ounce(s) carrots, chopped
4 ounce(s) green papaya, chopped
4 ounce(s) bell peppers, green or red, chopped
4 ounce(s) yellow onions, chopped
4 ounce(s) cucumbers, chopped
2 ounce(s) celery stalks, chopped
1/4 cup(s) flour
1/2 cup(s) prepared mustard or 1/8 cup powder
1/4 cup(s) granulated sugar
2 tablespoon(s) salt
1 teaspoon(s) turmeric, ground
1 1/2 cup(s) apple cider vinegar
2 tablespoon(s) jalapeno peppers, finely chopped
1 cup(s) water

Steps:

  • Break cauliflower into small florets. Chop the carrots, papaya, bell peppers, onions, cucumber and celery into small pieces. Scald the vegetables in a mixture of water and 1 tablespoon for 10 minutes; drain well.
  • Combine the flour, mustard, remaining salt and turmeric; add one cup of water. Cook over medium heat, stirring constantly until the mixture thickens. Add the vinegar slowly and bring to a boil. Add the finely chopped jalapeños, then add the other vegetables and remove from the heat, stirring well. Pack into jars and seal immediately.
