1 1/2 pounds ground beef sirloin
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
1 shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons finely chopped parsley leaves
1/2 teaspoon ground mustard
2 tablespoons panko bread crumbs
1/4 cup all-purpose flour
Kosher salt and freshly ground pepper
1 tablespoon canola oil
1 tablespoon butter
2 tablespoons butter
8 ounces crimini mushrooms, cleaned well and quartered
1 small onion, minced
1 teaspoon finely chopped thyme leaves
Salt and freshly ground black pepper
1/4 cup all-purpose flour
1/2 cup brandy
2 cups low-sodium beef stock

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the ground beef, egg, Worcestershire, shallots, garlic, parsley, ground mustard, bread crumbs, flour, and salt and pepper, to taste, in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.
  • Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 3 to 4 minutes per side. Transfer the patties to a 13 by 9-inch baking dish. Drain all of the fat from the pan but leave any browned bits.
  • Return the pan to medium heat and melt the butter for the gravy. Add the mushrooms, onion, and thyme and season with salt and freshly ground black pepper, to taste. Cook, stirring rarely, until the mushrooms are slightly browned and soft, about 4 minutes. Sprinkle in the flour and mix until fully incorporated. Stir occasionally, until the flour is lightly toasted, about 3 minutes. Add the brandy and stir, scraping up any browned bits from the bottom of the pan. Slowly pour in the stock and stir until smooth. Let the mixture come to a boil and cook until sauce is reduced and thickened, about 8 minutes.
  • Taste and add salt and freshly ground black pepper, if needed. Lots of pepper is good in this dish! Pour the sauce over the patties in the baking dish and cover with aluminum foil. Bake until the meat is tender and slightly pink in the middle, about 20 minutes. Remove the dish from the oven and serve.

1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

1 tablespoon dried marjoram
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup water
1 teaspoon salt
½ teaspoon ground black pepper
1 onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a small amount of oil in a large skillet, add chops and brown on both sides. When chops are almost done, sprinkle marjoram on both sides.
  • Stir together half the can of soup, water, salt and pepper. Pour into a foil-lined 9x13 inch baking pan.
  • Put the onions and then the browned chops on top of the soup mixture. Spoon the remaining soup over the top of chops so they are covered. Cover with foil and bake for 40 minutes. Take off foil and bake another 20 minutes. Let stand 5 minutes before serving.

1 cup milk
1 eggs, lightly beaten, divided
1 teaspoon garlic powder
½ teaspoon onion powder
1 cup all-purpose flour
¼ cup fine dry bread crumbs

½ teaspoon baking powder
2 teaspoons salt
1 teaspoon fresh ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika

½ teaspoon ground thyme
¼ teaspoon cumin
1 teaspoon dried parsley
½ cup olive oil
3 tablespoons butter
1 small onion, diced
5 large mushrooms, diced
2 tablespoons all-purpose flour
1 cup milk
1 cup evaporated milk
1 teaspoon instant chicken bouillon granules
salt and pepper to taste

Steps:

  • Rinse frog legs and pat dry. Separate the legs at the joint if desired. Set aside. In a medium bowl, mix together 1 cup milk, half of the beaten egg (about 1 tablespoon), garlic powder, and onion powder. Place the frog legs into the mixture, cover and refrigerate for about one hour, stirring occasionally.
  • In a large bowl, stir together 1 cup flour, bread crumbs, cornmeal, baking powder, 2 teaspoons salt, 1 teaspoon pepper, cayenne, paprika, oregano, thyme, cumin and parsley. Mix well and set aside.
  • Heat the olive oil and butter in a large skillet or electric skillet set to medium heat. For an electric skillet, set to 325 degrees F (165 degrees C). Dip each frog leg portion into the flour and spice mixture, packing on as much of the dry mixture as you can. Place the coated frog legs into the pan so they are close but not touching. Cook for about 15 minutes, until browned and crispy, turning often to prevent burning. Take care, they will become more fragile as they cook. Remove from pan, and place on paper towels to drain.
  • Add the chopped onion and mushrooms to the skillet, and sprinkle them with chicken bouillon. Cook, stirring frequently until onions and vegetables are soft. Sprinkle the last 2 tablespoons of flour into the skillet, and stir to blend in. Cook, stirring constantly until the flour is browned. Mix together the remaining 1 cup milk, evaporated milk, and the other half of the beaten egg. Gradually mix into the skillet. Whisk or stir constantly until the gravy is thick and bubbly. Season to taste with salt and pepper. Add the frog legs, and serve them smothered with gravy.

1 teaspoon dried parsley

½ pound lean ground pork
2 tablespoons avocado oil
1 large onion, thinly sliced
1 (8 ounce) package sliced cremini mushrooms
¼ cup dry red wine
2 cups beef broth
1 tablespoon tomato paste
1 teaspoon salt
½ teaspoon ground black pepper
4 tablespoons beef broth
2 tablespoons cornstarch

Steps:

  • Combine bread crumbs, onion, egg, parsley, Worcestershire sauce, and garlic in a large bowl. Stir well and add beef and pork. Mix gently and form 8 equal portions. Place patties on a plate, cover with plastic wrap, and refrigerate 1 hour. Remove from the refrigerator 30 minutes before cooking.

1 Tbsp oil
1 lb ground sirloin
1/4 c minced onion
2 Tbsp worcestershire sauce
1 tsp garlic powder
1/4 c panko or dry bread crumbs
1 egg, slightly beaten
salt & pepper to taste
MUSHROOMS & ONIONS
2 Tbsp butter
8 - 12 oz sliced portobella mushrooms
1 large sweet onion, rough chopped
1 Tbsp red wine or bourbon
GRAVY
1/4 c each - butter & flour
1 tsp onion powder
2 c beef broth
4 tsp better than buillion beef paste
1/4 tsp pepper
1/2 tsp kitchen bouquet - optional

Steps:

  • 1. In a bowl, mix beef ingredients. Make into 4 patties. Salt & pepper. In a large skillet, over medium heat - add oil. Once hot, add the beef patties. Fry on one side about 5 minutes, then turn and brown the other side, About 5 minutes. Remove from pan and set aside. Remove any excess fat from skillet - melt butter and add onions and mushrooms - salt & pepper - cook and stir until onions are tender and mushrooms have lost most of their moisture. Add the wine and stir until evaporates. Remove from skillet. In a bowl, mix the beef broth with the bouillon and kitchen bouquet. Warm in microwave for a minute or so. Set aside. In the same skillet, add the 1/4 cup butter and as it melts, scrape any tid bits that might be sticking to the pan from the mushrooms and onions. Add the flour, pepper and onion powder, stir and cook for 1 minute. Slowly whisk in the broth. Bring to a boil, then reduce to simmer and cook 1 minute. To the gravy add the mushrooms and onions and any juices that may have accumulated. Top with the steaks and cover. Simmer for 15 minutes or until steaks are completely cooked. Serve each steak, topped with onions, mushrooms and gravy. These go well with mashed potatoes.

1 cup potato, grated
1 cup mashed potatoes
1 cup flour
1 cup milk or buttermilk

  • BANGERS, MASH, AND GRAVY: Heat the oil in a pan over medium high heat. Add the sausage and cook until golden brown, about 2 to 4 minutes per side, and set them aside, slicing them as desired. 2 tablespoons olive oil
1 red onion, thinly sliced
1/2 cup mushroom, thinly sliced
2 garlic cloves, finely chopped
4 pork loin chops
1/2 cup self rising flour
salt and pepper
2 cups chicken stock (cube is fine)
2 tablespoons cold water
1 tablespoon flour (leftover from dredging)

Steps:

  • Heat olive oil in large fry pan.
  • Add onion and cook 5 minutes then add mushrooms and cook 2-3 minutes.
  • Add garlic and cook 1 minute.
  • In the meantime, mix the self rising flour with salt and pepper to taste in a shallow dish and dredge the chops. Save 1 tablespoon of the flour for later.
  • With a slotted spoon, remove the veggies from the pan and set aside.
  • Brown the chops about 2-3 minutes each side and remove from the pan.
  • Return the veggies to the pan, add the chicken stock and place the chops on top, moving them around so they become immersed in the liquid.
  • Bring to a boil then lower the heat. Cover and simmer 10-15 minutes until pork is tender.
  • Remove pork to a plate and keep warm.
  • Mix the leftover tablespoon of dredging flour with the cold water and stir into the pan until thickened.
  • Spoon gravy over chops to serve.

1 tsp garlic powder
1 tsp onion powder
4 Tbsp olive oil
salt and pepper
1 large onion
1 pkg sliced fresh portobello mushrooms
4 clove garlic
4 Tbsp butter
2 Tbsp flour
1 pkg raw petit carrots
2 Tbsp brown sugar

Steps:

  • 1. Salt and pepper Brisket and brown on all sides in 2 tablespoons Olive Oil
  • 2. Place in crock pot, add onion and garlic powder and the can of Guinness set on low for at least 8 hours
  • 3. When done remove Brisket from crock pot and let rest on a plate saving the liquid in the pot for gravy.
  • 4. While meat is resting in a saute pan med high heat melt 2 of the tablespoons of butter and brown sugar add baby carrots and turn to low, cover and simmer for 20 minutes. Making sure to move around so carrots don't get browned.
  • 5. In another large saute pan heat the other two tablespoons olive oil and saute' Onion mushrooms and garlic. When tender add 2 tablespoons of butter and 2 tablespoon flour in pan to make a roux. cook for several minutes and add 2 cups of the reserved liquid from the crock pot. Cook until thickened. Salt and Pepper to taste. Serve on top of sliced brisket.
  • 6. Cut brisket in half and slice the half for meal and serve with mushroom gravy. Reserve the other half of Brisket for Round 2 meal (Tex Mex black bean and brisket) to be posted in seperate recipie

1 teaspoon Worcestershire sauce
1/3 cup white wine
fresh ground black pepper, to taste
1/4 teaspoon crushed dried thyme leaves
6 slices deli roast beef, 1/8-inch slices, cut in half
2 English muffins, split and toasted

Steps:

  • Slice English muffins and toast them until light brown.
  • In a 10" nonstick skillet, melt butter over medium heat.
  • Add onion and mushrooms; cook and stir 3-4 minutes or until onion is crisp-tender.
  • Then add garlic and saute for 30 seconds to 1 minute longer.
  • Reduce heat to medium-low; stir in gravy, white wine, Worcestershire sauce, thyme, and black pepper to taste.
  • Add beef slices to gravy mixture.
  • Cook over medium-low heat 2-3 minutes or until hot.

STEAKS
1 pound lean ground beef
1 egg
1/4 cup bread crumbs
1/8 teaspoon black pepper
1/4 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon worcestershite sauce
1 tablespoon vegetable oil
GRAVY
1 cup onion, thinly sliced
1 cup mushrooms, sliced
2 tablespoons all-purpose flour
1 cup low-sodium beef broth
1 tablespoon cooking sherry
1/4 teaspoon seasoned salt

Steps:

  • 1. In a large bowl, mix together ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 5 balls, and flatten into patties.
  • 2. Heat oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove patties to a plate, and keep warm.
  • 3. Saute onion and mushrooms in hamburger skillet until onions are transparent. Sprinkle flour over the mushroom-onion mixture. Stir in with a fork. Gradually mix in beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat, scrapping the bottom, until gravy thickens. Turn heat to low, return patties to the gravy, cover and simmer for another 10 minutes.

1 ounce dried porcini mushrooms
4 cups water
4 tablespoons olive oil
2 large onions, thinly sliced
1 tablespoon balsamic vinegar
2 cups dry red wine
3 lbs beef brisket, trimmed
salt and pepper, to taste
2 garlic cloves, smashed
1 teaspoon dried thyme
2 bay leaves

Steps:

  • Place the mushrooms in a small bowl. Bring 1 cup of the water to a boil. Pour over the mushrooms. Let stand for 30 minutes to soften.
  • Remove the mushrooms from the soaking liquid, squeezing as much liquid as possible back into the bowl. Coarsely chop the mushrooms.
  • Strain the soaking liquid through a coffee filter or 2 layers of cheesecloth. Set aside.
  • Preheat the oven to 400 degrees.
  • Heat 2 tablespoons of the oil in a heavy large Dutch oven over medium heat. Add the onions and saute for about 10 minutes, until translucent.
  • Reduce heat to low. Cook for about 15 minutes, until the onions begin to brown, stirring from time to time.
  • Add the vinegar and cook, stirring, for about 10 minutes, until the onions turn a deep golden brown.
  • Add the wine and bring to a boil, scraping up any browned bits in the pot. Transfer the mixture to a bowl.
  • Heat the remaining 2 tablespoons oil in the same Dutch oven over high heat. Season the brisket with salt and pepper. Brown well on all sides. Transfer the meat to a platter.
  • Add the mushroom-soaking liquid to the Dutch oven and bring to a boil, scraping up any browned bits.
  • Return the brisket to the pot, along with the onion-wine mixture, the remaining 3 cups water, the mushrooms, garlic, thyme and bay leaves. Bring to a boil.
  • Tightly cover the pan. Place in the oven and cook for about 3 hours, until the brisket is very tender.
  • Transfer the meat to a platter and tent with foil.
  • Remove the bay leaves from the cooking liquid. Working in batches, puree the cooking liquid in a processor until smooth. Transfer to a large saucepan. Adjust seasoning and rewarm, if necessary.
  • Cut the brisket across the grain into thin slices. Arrange on a platter. Spoon the sauce over the meat.

I combined the Salisbury steak from one recipe and the gravy from another and made this hearty, filling, easy meal. Mashed potatoes make a great accompaniment, I suggest making extra gravy for the potatoes.

1 lb ground beef
1/3 cup finely chopped onion
1/4 cup cracker crumb
1 egg, slightly beaten
1 1/2 tablespoons prepared horseradish
1 teaspoon salt
1 teaspoon pepper
2 tablespoons butter
1 medium onion, sliced, into, rings
8 ounces fresh mushrooms, sliced
3 tablespoons butter
3 tablespoons flour
salt
pepper
1/2 cup cream
3/4 cup chicken broth
1 dash Worcestershire sauce
1 dash hot sauce

Steps:

  • Combine ground beef, chopped onions, cracker crumbs, egg, horseradish, salt and pepper. Shape into patties.
  • Heat 2 tablespoons butter in skillet.
  • Cook patties till no longer pink inside - approx 8 minutes each side.
  • In separate pan, melt 3 tablespoons butter. Sauté onion rings and mushrooms til tender.
  • Remove patties from pan.
  • Stir flour into pan, scraping bottom of pan. Add dash of salt and pepper. Cook 2 minutes. Stir in cream to form a thick paste.
  • Slowly stir in chicken broth - stir till thick.
  • Add a few dashes of Worcestershire sauce and hot sauce. Stir till mixed well.
  • Simmer 5 minutes Add mushrooms, onions and patties.
  • Heat 10 minutes.

2 -3 lbs boneless chuck roast, trimmed
1/2 teaspoon fresh ground black pepper
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 (1 ounce) package dry onion soup mix
2 beef bouillon cubes
2 cups water
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Sprinkle roast evenly with pepper. Place in 6-quart or larger pressure cooker.
  • Add mushroom soup, onion soup mix, beef bouillon cubes and 2 cups water.
  • Secure lid. Over medium-high heat, bring to HIGH pressure (2nd bar,15 psi). Adjust heat to stabilize just at high pressure. From moment high pressure was reached, cook 20 minutes. (Check recommended cooking time in your manufacturer's manual.).
  • Remove from heat and use quick pressure reduction method recommended by your manual. The recipe recommended running cold water over the lower edge of the cooker.
  • Remove lid, directing steam away from you.
  • Remove roast, and keep warm.
  • Stir together cornstarch and 2 tablespoons water. Add to liquid in pressure cooker. Bring to a boil, then cook for 1 minute.
  • Serve gravy with roast.

  • DO NOT ADD canned condensed Cream of Mushroom Soup during Step 2. The safety sensors of the new electric pressure cookers will give a "Burn" error if you do. (We'll add the condensed soup after pressure cooking.).
  • For an electric pressure cooker, cook at High pressure for 40 minutes.
  • DO NOT RUN COLD WATER OVER THE LID of an electric pressure cooker for quick release! Allow pressure to reduce naturally for 12 minutes, then you can do a quick release of remaining pressure.

1 pound sausage (Irish or English bangers if you can get them)
1 tablespoon oil
1 large onion, sliced
8 ounces mushrooms, sliced
1 clove garlic, chopped
1 teaspoon thyme, chopped
2 tablespoons flour (or rice flour for gluten-free)
1 (12 ounce) bottle Guinness (or 1 1/2 cups beef broth)
1 tablespoon dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 cup potato, grated
1 cup mashed potatoes
1 cup flour (or rice flour for gluten-free)
1 cup milk (or buttermilk)*
salt and pepper to taste
butter or oil for frying

Steps:

  • Heat the oil in a pan over medium high heat.
  • Add the sausage and cook until golden brown, about 2-4 minutes per side, and set them aside, slicing them as desired.
  • Add the onions and mushrooms and saute until tender, about 5-7 minutes.
  • Add the garlic and thyme and saute until fragrant, about a minute.
  • Sprinkle in the flour and let it cook for a minute.
  • Add the Guinness, mustard, Worcestershire sauce and brown sugar along with the sausage and simmer for 10 minutes.
  • Mix the grated potatoes, mashed potatoes, flour and enough milk to make a nice thick pancake like batter.
  • Heat the butter in a pan over medium heat, add the batter and cook until golden brown on both sides, about 4 minutes per side.

4 lb beef chuck roast (other cuts of beef do not work as well)
1 pkg (1 envelope) lipton dry onion soup mix
1 can(s) campbell's cream of mushroom soup
2 Tbsp a-1 steak sauce (or your favorite steak sauce)

Steps:

  • 1. Line a 9X13 pan with enough heavy duty aluminum foil to cover the bottom and wrap completely around the roast. Place the roast in the center of the foil and spread steak sauce over the top.
  • 2. Sprinkle dry onion soup mix over top of roast and pour the can of mushroom soup over it.
  • 3. Wrap the foil over entire roast and seal tightly. place in preheated 350 degree oven for 4 hours (don't peek). Remove from oven and let stand for 10 minutes before opening and be careful of escaping steam. This recipe can be increased to serve more people and you can experiment with Beefy dry onion soup, Beefy mushroom soup, etc.
