Round Italian bread, whole
1 1/2 cups Muffuletta Olive Salad, recipe follows
6 ounces fontina cheese, sliced
8 ounces mortadella, thinly sliced
1 bunch arugula, washed and dried
8 ounces capicolla, thinly sliced
2 roasted red peppers
8 ounces salami, thinly sliced
1/2 cup coarsely chopped green olives with pimento
1/2 cup pitted and coarsely chopped black olives
1/2 cup coarsely chopped pickled cocktail onions (sour)
1/4 cup extra-virgin olive oil
1 tablespoon red wine vinegar
1 1/2 teaspoons garlic, minced
1/4 cup roughly chopped roasted red peppers
1/4 cup roughly chopped roasted yellow peppers
1/4 cup basil chiffonade, see Cook's Note*
2 tablespoons finely chopped parsley leaves
1 teaspoon finely chopped oregano leaves
1/8 teaspoon chili flakes

Steps:

  • Insert your knife 1 inch from the top edge of the loaf at a 45 degree angle and cut around the loaf until the lid comes off. Set lid aside. Pull excess bread out of the center of the loaf to create a hollow effect. Level off the inside of the lid and begin assembly. Brush the lid with some of the oil mixture from the olive salad. Spread the olive salad on the bottom half of the bread and begin to layer the sandwich, starting with the fontina cheese, mortadella, arugula, capicolla, red peppers, and finishing with the salami. Wrap the sandwich tightly with plastic wrap and put on a plate. Place a cast iron skillet on top of the sandwich to weigh it down and put it in the refrigerator overnight. Bring to room temperature before serving. Cut into wedges.
  • Combine all ingredients. Serve at room temperature.

1 cup sliced marinated artichoke hearts
1/2 cup shredded carrot
1/2 cup shredded inner stalks celery

For the muffuletta
8- inch round muffuletta bread, split open
2 ounces provolone, sliced
2 ounces deli ham, sliced
2 ounces capicola, sliced
2 ounces mortadella, sliced
2 ounces low-moisture mozzarella, sliced
2 ounces Genoa salami, sliced

Steps:

  • To prepare either version of the olive salad, mix all the ingredients in a bowl. Cover, and refrigerate several hours or overnight, to let the flavors develop. This makes more salad than you need for one 8-inch sandwich. Extra olive salad will keep for a week or more and can be used in salads, sandwiches, etc.
  • Lay the bottom of the muffuletta bread on a work surface, cut side up. Layer half of the cheeses and meats on the bread, then spread with 1/2 cup of the olive salad. Top with the remaining meats and cheeses.Finish with another 1/2 cup olive salad. Place top of bread on olive salad, and press down. Cut into four wedges.

  • Olive Salad:.
  • Combine all ingredients and mix well.
  • Place in tightly covered container in refrigerator and marinate for at least 12 hours before using.
  • SANDWICH:.
  • Split your loaf lenghtwise then spread with olive salad.
  • Place meats and cheeses evenly on bottom half Close. Cut into quarters.

4 sourdough buns, Sourdough Sandwich Buns (Schlotzsky Style)
3/4-1 cup creole olive salad
4 ounces mortadella, thinly sliced
4 ounces italian ham, thinly sliced
4 ounces mozzarella cheese, thinly sliced
4 ounces provolone cheese or 4 ounces fontina, thinly sliced
pickled pepperoncini pepper, garnish

Steps:

  • Combine all the olive salad ingredients and mix well.
  • Chill for at least 30 minutes.
  • Spread a couple tablespoon of olive salad in the inside of top of the bun.
  • Alternating layers of meats and cheese on the bottom half (alternating).
  • Carefully close the sandwich.
  • Can be eaten hot or cold.
  • To heat, wrap in foil and place in 350 degree oven for 8 minutes, or lightly grill until cheese is melted.
  • Serve garnished with pepperoncini pepper.

Olive Salad:
1 cup each pitted green and black olives, coarsely chopped
1 tablespoon tiny capers
1/3 cup diced (1/4 inch) roasted red bell pepper
1/4 cup diced (1/4 inch) celery, with leaves
2 tablespoons chopped flat-leaf parsley
2 teaspoons finely minced garlic
2 tablespoons red-wine vinegar
2 tablespoons olive oil
Salt and pepper, to taste
Sandwich:
1 round peasant bread (about 7 inches in diameter, 5 inches high), halved crosswise, insides pulled out
4 ounces each thinly sliced Genoa salami and mortadella (found in the deli section)
4 ounces thinly sliced provolone cheese

Steps:

  • 1. Prepare the Olive Salad ahead of time: Combine all the ingredients and set aside in the refrigerator for 4 hours or longer.
  • 2. Assemble the sandwich: Spread half of the Olive Salad on the bottom half of the bread. Layer with salami, provolone and mortadella, then top with the remaining Olive Salad. Cover with the top of the bread, press down and let stand for 10 to 15 minutes. Wrap the sandwich in plastic wrap and let stand for 1 hour.
  • 3. Unwrap, cut into 6 wedges using a serrated knife, then wrap them for the road. Be sure to hollow out the bread so the salad can fit inside. Doing so also cuts carbs and calories.

3 garlic cloves, pressed
1 cup pimento stuffed olive, chopped
1 cup pitted ripe olives, chopped
1 cup roasted red pepper, chopped
1 cup olive oil
3 tablespoons fresh parsley, chopped

8 ounces genoa salami
8 ounces provolone cheese
8 ounces muenster cheese
8 ounces prosciutto
1 loaf good French bread

Steps:

  • Mix first seven ingredients and let stand at room temperature overnight.
  • Have all meats/cheeses sliced very,very thinly. The following day, slice a loaf of GOOD French bread horizontally. Scoop out some of the center of the loaf and drizzle wth olive oil, from the olive salad you made the night before, on both sides of the bread. On the bottom half, spread some of the olive salad. Then, layer the salami, Provolone, prosciutto, and Muenster, alternating until all are gone. Put more of the olive salad in the top of the loaf, and wrap the assembled sandwich in tinfoil (seam side UP) and bake @ 350 for 15-20 minutes.
  • This makes a LOT of relish, so if you like, it's easily halved.

You must admit, it is pretty amusing. :) From the Family Recipe Box, dated 3/1/85. The sandwich keeps well, chilled, and is good for taking along on picnics and camping trips.

1 large round loaf French bread (or oval "peasant" loaf, or sourdough)
1 (6 1/2 ounce) jar marinated artichoke hearts, drained, liquid reserved (you can use the hearts whole or roughly chopped)
1/2 cup mayonnaise
3 large ripe tomatoes, sliced
3 ounces thinly sliced salami
1/2 lb thinly sliced unsmoked turkey breast
1/4 lb cheese slice, any kind (provolone and fresh mozzarella are my faves)
1 (2 1/2 ounce) can sliced ripe black olives, drained
1 purple onion, thinly sliced (amount to taste)

Steps:

  • Cut loaf of bread in half horizontally and hollow out the soft bread from both halves, leaving a shell about 3/4-inch thick.
  • Reserve soft bread for another use.
  • In small bowl, combine artichoke liquid with mayonnaise and spread onto bread shells.
  • In bottom half, layer ingredients at least three times until mounded high, beginning and ending with tomatoes.
  • Place top half of bread over mound of ingredients.
  • Wrap entire loaf tightly with plastic wrap.
  • This must be assembled at least 2 hours before serving, but can be assembled up to 8 hours before serving.
  • Refrigerate.
  • Before serving, place sandwich (wrapped in plastic) on a hard surface and SIT ON IT! This smashes the ingredients together and makes it easier to serve. Do not omit this step, strange as it seems, as this step is what makes the sandwich delicious.
  • Slice the loaf into wedges or slices to serve.
  • Note: I usually roughly chop the artichoke hearts, myself. Also, regarding the artichoke juice mixture: you can add only half of it to the mayo, if you like - how much of the spread you're going to need depends on the size of loaf you've gotten.
  • Note #2: other good additions I've made to the sandwich include strips of roasted red and yellow pepper, whole fresh basil leaves (placed on top of the tomatoes) or pesto into the mayo, pepperoncini and/or sliced sweet red cherry peppers, pancetta, and more salami or other hard sausage than the recipe calls for.
  • Note #3: any leftover mayo mixture, by the way, makes a great salad dressing! I once accidentally used the juice from a jar larger than the recipe called for and the mixture was far more than I needed -- so to thicken it up a bit I added a bit of lowfat sour cream, and made the leftover mixture (much to my husband's delight) available as salad dressing. Yum!

I culled this recipe from a Mardi Gras website. The olive salad gives this sandwich its authentic taste. I made this as part of a Mardi Gras lunch at work and even folks who do not like olives enjoyed it. The mixture of pickled cauliflower, carrots, celery, and pepperoncini is called gardeniera and can be found in the relish/pickle section of your grocery. Also, I omitted the salt. Cooking time for this one is really refrigeration time for the compiled sandwich. I let the olive salad flavors meld for 1 week. It was worth it!

  • To Make the SANDWICH.
  • Split a muffoletta loaf or a round loaf of Italian bread horizontally. Remove some of the center soft bread.
  • Spread each half with equal parts of olive salad/oil.
  • Place meats and cheeses evenly on bottom half and cover with top half of bread.
  • Wrap tightly with plastic wrap and refrigerate for up to 4 hours. Cut in quarters for huge sandwiches, or eighths for more manageable sections.
  • To Make the OLIVE SALAD.
  • To pit the olives crush each olive on a cutting board with your hand or use the end of a funnel.
  • Combine all ingredients except oil in processor. Pulse 4-5 times. You want this to be coarse chopped.
  • Add olive oil. Put into a bowl or jar, cover and let the flavors marry for about one week.

  • Take one loaf fresh Italian bread (one big round for a traditional Muffaletta or individual sub loaves will do fine for smaller sandwiches).
  • Cut the loaf (or loaves) in half, and scoop out a little of the inside to make some room.
  • Make the olive salad by combining the olives and roasted pepper, garlic and vinegar.
  • Drizzle some of the olive oil and juice from the olive salad on each side of the open loaf-- use plenty.
  • On the bottom, place some salami, olive salad, provolone, mild cheese, and mortadella.
  • Top with the other half loaf.
  • Wrap tightly with plastic wrap and set a heavy skillet on top of loaf or individual loaves.
  • Chill for 1 hour.
  • This helps compress for easier slicing and absorption of flavors.
  • Slice into wedges (or eat the individual loaves).
  • *The roasted red peppers are Italian-style, available at many Italian delis or in the ethnic aisle in the grocery store.

Steps:

  • If using home made olive salad, make it by mixing all ingredients together.

  • Remove about 1/2 inch of soft white bread from top layer of each half to make room for the filling, starting about 1/2 from sides.
  • Drain olive salad, reserving liquid.

For the olive salad:
1 gallon large pimento stuffed green olives, slightly crushed and well drained
1 quart jar pickled cauliflower, drained and sliced
2 small jars capers, drained
1 whole stalk celery, sliced diagonally
4 large carrots, peeled and thinly sliced diagonally
1 small jar celery seeds
1 small jar oregano
1 large head fresh garlic, peeled and minced
1 teaspoon freshly ground black pepper
1 jar pepperoncini, drained (small salad peppers) left whole
1 pound large Greek black olives
1 jar cocktail onions, drained
For the sandwich:
1 round loaf Italian bread
1/4 pound mortadella, thinly sliced
1/4 pound ham, thinly sliced
1/4 pound hard Genoa salami, thinly sliced
1/4 pound Mozzarella cheese, sliced
1/4 pound Provolone cheese, sliced
1 cup olive salad with oil

Steps:

  • For the olive salad: Combine all ingredients in a large bowl or pot and mix well. Place in a large jar and cover with 1/2 olive oil and 1/2 Crisco oil. Store tightly covered in refrigerator. Allow to marinate for at least 24 hours before using. For the sandwich: Split a Muffuletta loaf or a loaf of Italian bread horizontally. Spread each half with equal parts of olive salad and oil. Place meats and cheeses evenly on bottom half and cover with top half of bread. Cut in quarters.

1 cup chopped Vidalia onion
1/2 cup drained small Spanish pimiento-stuffed green olives
1/4 cup olive oil (preferably extra-virgin)
1/4 cup sliced fresh basil or 1 tablespoon dried
2 tablespoons drained capers
1 tablespoon red wine vinegar
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
1 24-inch long French or sourdough baguette, split lengthwise
12 ounces assorted sliced deli meats and cheeses (such as ham, mortadella, salami, provolone cheese and mozzarella cheese)

Steps:

  • Combine first 7 ingredients in processor and chop finely. Transfer to bowl. Let stand 1 hour at room temperature.
  • Spread 1/2 cup muffuletta relish over each cut side of bread. Place meats and cheeses on bottom half of bread. Cover with top half of bread. Cut diagonally into 4 sandwiches.

For the olive salad
■1 1/2 cups chopped pitted green olives
■1/2 cup chopped pitted kalamata olives
■1/4 cup pimento, minced
■1/2 cup blanched chopped cauliflower
■1 carrot, peeled and minced
■1/2 stalk celery, minced
■4 pepperoncinis, stemmed and minced
■4 cloves garlic, minced
■1 tablespoon dried oregano
■1 tablespoon chopped fresh Italian parsley
■1 teaspoon crushed red pepper flakes
■1/4 - 1/2 cup olive oil
■fresh ground black pepper
For the muffuletta
■1 round whole loaf fresh baked sourdough bread (about 8 - 10 inches in diameter)
■8 - 10 thin slices Genoa salami
■4 - 5 thin slices capicola or any dry-cured ham or Virginia or honey ham
■4 - 5 thin slices Mortadella (with pistachios is nice)
■4 - 5 thin slices Provolone cheese
■4 - 5 thin slices Swiss cheese

Steps:

  • For the olive salad Mix all the ingredients together and refrigerate at least over night but a week is better as everything pickles and the flavors meld. Notice there isn't any salt added. The olives take car of the sodium. Store the unused portion in glass jars. It will keep in the fridge for about 6 months. For the muffuletta Cut the loaf in half cross ways to form a big sandwich bun. Spoon out some of the olive oil from the olive salad and paint the bottom half of the loaf with it. Then layer on the cold cuts and the cheeses and top with a heap of the olive salad. Let the sandwich rest for about 5 minutes so that the oil wicks into the bread a tiny bit. You can toast it in the oven for just a couple of minutes to soften the cheese if you like but don't. Cut the thing into quarters and eat. Greatest sandwich in the world! Right?
