3/4 cup whole wheat flour
3/4 cup flour
1/2 teaspoon baking powder
1 cup oats (old fashioned or quick)
1 cup packed light brown sugar
1/2 cup salted butter, softened
1/2 cup creamy peanut butter
1/4 cup honey
2 large eggs
2 teaspoons vanilla
1 cup raisins
1/2 cup sunflower seeds

Steps:

  • Preheat oven to 300°F.
  • In a medium bowl, combine flours, baking powder, and oats. Mix well with wire whisk and set aside.
  • In a large bowl, beat sugar and butter with an electric mixer at medium speed to form a grainy paste. Blend together the peanut butter, honey, eggs, and vanilla. Scrape down sides of bowl.
  • Add the flour mixture, raisins, and sunflower seeds. Blend at low speed just until combined. Do not overmix.
  • Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake for 18 to 22 minutes until bottoms turn golden brown. Immediately transfer cookies to cool flat surface.

I've been searching for a good Oatmeal Cookie recipe for a while but the ones I came across always had some ingredient that I was allergic to. I got this recipe from one of my students when I gave them a gag homework assignment. They were to find me an oatmeal cookie recipe that doesn't have nuts or shortening as I am allergic to both. Who knew that it would be one of the few assignment they completed that week (smile). I got many entries but, if I was grading this assignment, this child would definetly get an A+ but, how could you loose with a recipe from Mrs. Fields? This recipe makes a lot of cookies.

Number Of Ingredients 9

2 cups white sugar
2 cups brown sugar
2 cups salted butter, softened
4 eggs
2 teaspoons vanilla
3 1/2 cups flour
5 cups oatmeal (not the instant type)
2 teaspoons baking soda
2 teaspoons baking powder

Steps:

  • Pre-heat over to 350 degrees.
  • Cream sugars, butter and vanilla together until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Sift flour, baking soda and baking powder together.
  • Add dry ingredients to wet ingredients; combine until dry ingredients are moist.
  • Stir in oatmeal.
  • Add raisins, chocolate chips, nuts, if desired. They are great on their own.
  • Drop by rounded teaspoonful on ungreased cookie sheets.
  • Bake in a 350 degree oven for 10-12 minutes. DO NOT OVERBAKE! You definetly want them chewy.

Given to me my a friend, who knows a friend, etc........way back in 1987. The grinding of the oatmeal is critical. Bake these cookies on the second level from the bottom of the oven.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tablespoon vanilla extract
2 ½ cups rolled oats
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 ounces semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets or line with parchment paper.
  • Cream butter, sugars, eggs and vanilla until very smooth and fluffy.
  • In a separate bowl, mix together flour, salt, baking powder, and baking soda. In a food processor, blend oatmeal until fine. Add to flour mixture.
  • Stir butter mixture into flour/oatmeal mixture. Blend well.
  • Add chocolate chips and walnuts. Stir until blended. Roll into golf balls size and bake for 8-10 minutes. You do not want to over bake these.

1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups packed dark brown sugar
1 1/4 cups granulated sugar
1 cup butter, softened

1 cup creamy peanut butter

Steps:

  • Preheat oven to 300 degrees F.
  • Mix dry ingredients and set aside.
  • On medium speed, in large bowl, blend sugars; add butter, mix till grainy consistency. Add eggs, peanut butter and vanilla extract; beat till fluffy. On low speed, add flour mixture until barely mixed into butter mixture.
  • Drop by rounded tablespoonsful, 2 inches apart on ungreased cookie sheet. Use a wet or flour coated fork to gently press a crisscross pattern on top of each cookie.
  • Bake until the edges of the cookies are lightly browned, approximately 18 to 20 minutes. Remove to cool on a flat surface.

1/2 cup butter
1/2 cup brown sugar
1/2 teaspoon vanilla
2 ounces Plain Hershey Bar, grated
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup sugar
1 egg
1 1/4 cups oatmeal
1 cup flour
1/2 teaspoon baking powder
1 (6 ounce) bag chocolate chips

Steps:

  • Cream butter and both sugars.
  • Add egg and vanilla - mix well.
  • Take 1 1/4 cups oatmeal - put small amounts in blender and blend until it turns to powder - set aside.
  • Grate Hershey bar - set aside. Combine oatmeal, flour, salt, baking powder, and baking soda.
  • Add this to butter/sugar mixture and mix well.
  • Add chips and grated chocolate.
  • Shape dough into golfball sized cookies.
  • Bake on ungreased cookie sheet for 6 mins. at 375.
