MOZZARELLA BEEF WRAPS

- Heat oven to 230C/fan 210C/gas 8. Season steaks, place a few basil leaves on each and split the mozzarella between them. Bring the sides of the steaks together to make an open parcel, securing the edges with a cocktail stick. If making up to a day ahead, cover and chill.
- Heat a heavy-based roasting tin on a high heat, add the oil and brown the beef on all sides - this should take about 1 min in total and the meat will still be rare in the middle.
- Add the peppers, their oil and the olives to the tin, pour over the vinegar, then roast for 2-3 mins for medium rare, longer for well done. Cover with foil and leave to rest for up to 5 mins. Scatter over remaining basil before serving.

EASY EGGPLANT, MOZZARELLA & HAM WRAPS
This is a delicious recipe I found years ago in a local paper. I have served it as an appetizer and as a light supper. The recipe didn't specify amounts so I have always eyeballed and have never been disappointed.

- Preheat oven to 450.
- Sprinkle eggplant slices with kosher salt and allow to sweat for about 10 minutes.
- Pat slices with a paper towel to remove as much moisture as possible.
- Grill eggplant until pliable.
- Remove eggplant from grill and allow to cool slightly.
- Top each slice of eggplant with a slice of ham and a slice of mozzarella.
- Roll up and secure with a toothpick.
- Arrange rolls in a baking dish coated with cooking spray.
- Top with chopped tomatoes and parmesan cheese.
- Bake until bubbly.

Steps:
- Cut fresh mozzarella into 1/4 inch width and 3 inch length. Wrap a genoa salami around the mozzarella. Next roll up the cheese and salami in the romaine lettus leaf. Place in backing dish. slice the roma tomato and place on top of each wrap drizzle with olive oil and sprinkle fresh garlic. Bake in oven 350 for 15 minutes.
