OVERNIGHT MACARONI AND CHEESE GRATIN



Overnight Macaroni and Cheese Gratin image

A French recipe that uses Gruyere instead of Cheddar cheese. Great sophisticated side dish for steaks and roasts.

2 cups elbow macaroni
2 cups heavy whipping cream
1 ¼ cups milk
1 cup shredded Gruyere cheese, divided
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until halfway cooked, about 4 minutes. Drain.
  • Combine heavy cream, milk, and Gruyere cheese in a large bowl. Add elbow macaroni and mix well; season with salt and pepper. Cover bowl with plastic wrap and refrigerate for 24 hours.
  • Bring the macaroni mixture to room temperature, 30 minutes to 1 hour. Pour into a 2-quart baking dish. Sprinkle remaining Gruyere cheese on top.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden and crispy, 15 to 20 minutes.

1/4 cup sour cream

Steps:

  • Prepare Dinners as directed on package. Stir in 1/2 cup shredded cheese and sour cream. Top with remaining shredded cheese.

1/4 pound elbow macaroni
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1/2 teaspoon salt
Dash white pepper
Dash red pepper
1 1/2 cups milk
2 tablespoons light cream
1 cup Cheddar cheese, shredded
1/2 cup canned tomatoes, diced
1/2 teaspoon sugar

Steps:

  • Cook macaroni according to directions on the package. Preheat oven to 400 degrees.
  • Melt butter in the top of a double boiler. Blend flour, salt and white and red pepper in gradually. When smooth, add milk and cream, stirring constantly. Cook for a few minutes until it thickens.
  • Add cheese and continue to heat until it melts and the sauce looks smooth. Remove from heat. Add cooked macaroni to the sauce. Add sugar to the tomatoes and add to the sauce.
  • Pour mixture into a buttered baking dish and bake until the surface browns.

Creamy Weeknight Macaroni and Cheese image

Just as quick as the boxed variety, this creamy macaroni and cheese skirts the traditional butter and flour roux with assistance from cream cheese. While the cream cheese adds an important lusciousness, it doesn't do the macaroni and cheese any favors when it comes to its flavor, so it's important to use the sharpest, tangiest Cheddar you can get your hands on. For perfectly coated noodles, make sure to cook the pasta in the sauce for a minute or two.

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
2 cups whole milk
8 ounces cream cheese, cut into 1-inch pieces
12 ounces sharp or white Cheddar, grated
3 tablespoons unsalted butter
Freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted water until just barely al dente; drain.
  • Meanwhile, bring milk up to a simmer in a large pot. (The pot should be large enough to hold all the pasta when cooked.) Reduce heat to low, add cream cheese, and whisk until it's completely blended and no lumps remain. Add Cheddar cheese and butter, whisking until everything is completely melted. Season with salt and a generous amount of pepper.
  • Add cooked pasta and stir to coat. Continue to cook over medium-low heat until the sauce has thickened and is coating each piece of pasta nicely, 2 to 3 minutes; sauce will continue to thicken as it cools. Season again with more salt and pepper before serving.
