Cranberry Orange Relish is the best kept Thanksgiving secret of all time! It's light and bright and cuts through the heaviness of holiday meals while adding a gorgeous pop of color and flavor to every bite. I hope you give this super easy recipe a try this holiday season!

Number Of Ingredients 6

1 large orange (unpeeled (~2 cups with rind ON))
½ Granny Smith apple (cored and sliced (~1 cup))
12 ounces fresh cranberries (rinsed, about 3 cups)
½ cup granulated white sugar
¼ cup dark brown sugar
1 teaspoon lime zest (~ ½ a lime)

Steps:

  • Use a knife to cut the orange into 8 even pieces, keeping the peel on.
  • Place the orange pieces and the Granny Smith apple slices into a food processor or blender. Pulse 4 to 5 times to begin the chopping process.
  • Add the fresh cranberries, granulated white sugar, dark brown sugar, and lime zest into the food processor.
  • Pulse the mixture about 8 to10 times until it looks finely chopped. Do not over process the mixture. You don't want a puree.
  • Scoop into a large dish or bowl that can handle about 4 cups of relish. Cover and refrigerate for an hour to overnight to allow the flavors to meld.
  • Best when served cold.

This is one of my mom's age old recipes. It was always on our holiday table. When it's ready to eat, you just put a little on the side of your plate and eat it the way it is.

1 pkg whole fresh cranberries (i think they come in 16 oz. packages)
1 whole fresh lemon
1 whole fresh orange
2 c sugar

Steps:

  • 1. Using a grinder or a food processor, (not a blender) grind the cranberries and alternate with chunks of orange and lemon, including the rinds. Add sugar to the mixture. Mix well. This is best if made about 2 days ahead of time and kept refrigerated. (Gives the flavors time to blend well!) **Mom says that a grinder works best, but you can use a food processor (just pulse it) if you take care not to let it turn to mush. The idea is to have a coarse "relish" consistency. This recipe is not only delicious, but really looks pretty.

2 cups rinsed raw cranberries
2 peeled and cored tart green apples, cut into thick slices
1 large, whole (peel ON) seedless orange, cut into sections
1 to 2 cups granulated sugar (depending on how sweet you would like your relish to be)

Steps:

  • Prepare your grinder: If you are using an old fashioned grinder, use the medium-sized grinder plate and set the grinder on the edge of a table with a large bowl or pan to catch the fruit mix as it is ground. Old fashioned grinders tend to leak juice down the grinder base, so you may want to set up a bowl underneath to catch the drips. If you don't have an old fashioned grinder, you can use the grinder attachment to a KitchenAid mixer, or you can use a food processor. If you use a food processor, be careful not to over-pulse! Or you'll have mush instead of relish. You can also just chop very finely by hand, but that's difficult, especially with the cranberries.
  • Push fruit through grinder: Push the cranberries, orange sections, and apple slices through the grinder. Include the orange peel! Alternate the fruit as you push it through the grinder so that different fruits get ground together. If you do not have a grinder, pulse fruit in a food processor.

MOM'S THANKSGIVING CRANBERRY JELLO MOLD

A MUST for us! A neighbor in Omaha had given this to my Mom in the early'60's and she has made it every Thanksgiving since. Now I make the holiday, so I make the mold! It's very easy. Keep in mind that this has walnuts just in case you have guests who are allergic to nuts. Enjoy! *You can make this 2 days before serving so I will make it on the Tuesday before Thanksgiving and keep it in the mold in the refrigerator and just unmold it before serving.

Number Of Ingredients 8

1 (16 ounce) can whole berry cranberry sauce
2 (3 ounce) packages Jello gelatin, black cherry flavor
2 cups water, hot
1 cup water, cold
2 medium red apples, peeled, finely chopped
1/2 cup celery, finely chopped
1/2 cup walnuts, chopped
parsley sprig, for garnish (optional)

Steps:

  • In a large bowl, dissolve the packages of jello in the hot water.
  • Add the cold water and the cranberry sauce. Blend well and chill.
  • Before mixture sets, add apples, celery and nuts and mix well.
  • Pour into a jello 3 cup mold sprayed lightly with a vegetable oil.
  • Chill until it sets and invert on a plate when ready to serve. You can garnish with parsley sprigs.

BECKY'S MOM'S CRANBERRY SAUCE

Becky's mom's recipe is so good that even anyone who says they do not like cranberries will love it! This sauce is fantastic. It should be made at least 2 weeks before use. However, I've made it the day before and it was still really good.

1 cup sugar
⅓ cup brandy-based orange liqueur (such as Grand Marnier®)

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Stir together the cranberries, sugar, and liqueur in a baking dish.
  • Bake in preheated oven for 1 1/2 hours, stirring every 20 minutes. Store refrigerated in a tightly-covered container.
