2 tablespoons olive oil
1 cup diced onion
1 cup diced green bell pepper
1 tablespoon minced fresh garlic
1 pound ground beef, 80/20
½ teaspoon dry mustard
2 teaspoons chili powder
2 teaspoons kosher salt
¼ teaspoon freshly ground black pepper
½ cup uncooked long grain white rice
2 tablespoons tomato paste
1 14.5-ounce can diced tomatoes with juice
1 cup water
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese, optional and not shown in our photo

Steps:

  • In a skillet that has a tight fitting cover, heat olive oil over medium high.
  • Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
  • Add rice and cook for two minutes letting rice absorb liquid.
  • Add tomato paste and cook for one minute.
  • Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
  • After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
  • If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

This beef, veggies and rice casserole is easy to make and a family favorite.

1 cup water
1 cup uncooked instant rice
1 pound lean ground beef
2 onions, chopped
1 large green bell pepper, chopped
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
1 (8.75 ounce) can whole kernel corn, drained
salt and pepper to taste
3 slices processed American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
  • In a medium saucepan, bring 1 cup of water to a boil. Stir in instant rice, cover and remove from heat. Let sit for 5 minutes.
  • In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
  • Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
  • Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
  • Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.

1 lb ground beef
3 large onions, sliced
1 large green bell pepper, chopped
1 can(s) (16 oz) tomatoes
1/2 c uncooked rice
2 tsp salt
1 to 2 tsp chili powder

Steps:

  • 1. In a large skillet, cook and stir meat, onions and green pepper until meat is brown and vegetables are tender. Drain well.
  • 2. Stir in tomatoes, rice, salt, chili powder and pepper. Heat thoroughly.
  • 3. Pour into ungreased 2 quart casserole dish. Cover and bake at 350 for 1 hour.

6 to 8 red potatoes, cubed
1 white onion, chopped
2 bell peppers, chopped
2 tablespoons fresh rosemary leaves, minced
Olive oil
Salt and black pepper

Steps:

  • Preheat a grill to between 300 and 350 degrees F.
  • Put potatoes, onion, bell peppers, and rosemary in a large bowl and toss to combine. Coat with olive oil and toss again. Add salt and pepper, to taste.
  • When grill is preheated, place a medium skillet over the fire. Pour the contents of the bowl into the skillet. Continually stir potatoes until cooked thoroughly, approximately 25 minutes. Carefully remove hot skillet from grill and serve.

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
2 cups sour cream
2 cups shredded cheddar cheese, divided
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine potatoes, soup, sour cream, 1-3/4 cups cheddar cheese and Parmesan cheese. Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheddar cheese. , Bake, uncovered, until bubbly and cheese is melted, 40-45 minutes. Let stand 5 minutes before serving.
