MOM'S COUNTRY GRAVY
This is my mother's recipe I grew up with. It is very tasty and is great with biscuits and sausage.

Steps:
- Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

- Pour drippings into a 2-cup measuring cup. Skim and discard fat. Add enough broth to the drippings to measure 2 cups; transfer to a small saucepan and bring to a boil., In a small bowl, whisk flour and milk until smooth; gradually stir into drippings mixture. Stir in the bouillon granules, poultry seasoning and white pepper. Return to a boil, stirring constantly; cook and stir for 2 minutes or until thickened.

MOM'S SPAM GRAVY
My mom starting making this when i was a kid it happened one morning when she discovered she didn't have any ham or bacon to make breakfast gravy with.It's a staple in our home. It's great with biscuits and also over mashed potato's.

Steps:
- In a large deep skillet cook and brown your chopped up Spam.
- Once spam is nicely cooked and browned add your bisquick mix stir making sure to brown the mix with the meat drippings leave spam in the skillet while doing this.
- Once bisquick is mixed and browned add your milk slowly stiring till you get the consitiancy that you want. Add black pepper to taste do not add salt cause the spam has enough salt in it to season the dish.
- *note if you cooking for more than 3 or 4 people you can double this recipe. Also note i do not use cooking oil when cooking the spam i use a cooking spray because the spam makes its own grease but it you want to add a little oil to yours you can.
