MOM'S FRENCH SALAD DRESSING

My mom was born in 1920, and this was always the salad dressing we had, as there weren't many bottled varieties at the time. I still make this blast-from-the-past recipe. -Bonnie Hawkins, Elkhorn, Wisconsin

1 can (10-3/4 ounces) condensed tomato soup, undiluted
1-1/2 cups canola oil
1 cup cider vinegar
1/2 cup sugar
2 tablespoons grated onion
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1 teaspoon paprika
1 teaspoon salt, optional

Steps:

  • Place the first 8 ingredients in a jar with a tight-fitting lid; add salt, if desired. Shake well. Refrigerate leftovers.

This dressing recipe has been in our family for 4 generations. We keep passing it on since its so good, and pass it on to our guests who want it as well.

1 cup vegetable oil
¾ cup white wine vinegar
1 cup white sugar
½ cup ketchup
½ teaspoon salt
2 teaspoons Worcestershire sauce
1 onion, chopped

Steps:

  • Prepare dressing in a large jar with a tight fitting lid. Add the oil, vinegar, sugar, ketchup, salt, Worcestershire sauce and onion. Shake until the sugar is dissolved. Refrigerate and shake well before using.

Oil, for sauteing
2 onions, chopped
2 ribs celery, chopped
1 apple, chopped
2/3 loaf white bread, toasted and broken into pieces
2 eggs
1 1/2 cups milk
1 teaspoon dried sage
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium-sized saute pan, heat the oil over medium heat. Add the onion, celery, and apple and saute until just tender. Remove from the heat and add the onion mixture to the bread in a large mixing bowl. In a medium mixing bowl, beat the eggs with the milk, sage, salt, and pepper. Pour over the bread mixture and stir to combine and moisten the bread. Transfer to a casserole dish and bake for about 1 hour or until browned on top. Serve.

2 heads romaine lettuce, thinly sliced
2 tomatoes, large diced
1 cucumber, large diced
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons sour cream
1 teaspoon fresh oregano, chopped
1 clove garlic, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Combine the romaine, tomatoes, cucumber and onions in a large bowl.
  • Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
  • Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

I grew up in the south, and this is the only dressing I knew existed until I was grown. I eat others now, but I still use this one a lot. It's sweet-tart, creamy. Very good.

Simple and sweet, only three ingredients. To be clear, this is NOT an Italian-style dressing. This is a mild, sweet, natural-tasting dressing with NO kick (that's how I like it). Still tastes good if you replace the sugar with Truvia, though not so good with low-fat mayonnaise.

WARNING: This salad dressing might not fit your tastes. Proceed with caution! :) My brother and I had one choice of dressing for our salads growing up...Mom's. I've tried for years to get her to give up the recipe but all she would say is "Sissy, I don't measure. You have to make this one from your memories." This is my attempt to create the dressing I grew up with and loved! It's not for everyone but it sure is a hit in our family. (My brother pretty much refuses to eat any salad without it.)
