1 tablespoon olive oil
1 large yellow onion (peeled and diced)
1.5 pounds lean ground beef
3 cloves garlic (minced)
1 tablespoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
32 ounces canned tomato sauce
1 pound elbow macaroni
1 1/2 cups cheddar cheese (shredded and divided)
Fresh parsley (finely chopped, for garnish)

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.
  • While the pasta cooks, place a large skillet over medium heat. Add olive oil. Once the oil is hot, saute the onion until translucent.
  • Add the ground beef and brown completely. Add in the garlic, Italian seasoning, salt, and pepper. Stir until fragrant.
  • Add the tomato sauce and cook for 5 minutes.
  • Pour in the drained pasta and stir to combine completely. Add 1 cup of cheese and mix until the cheese has melted into the sauce.
  • Pour into a 9-inch x 13-inch baking dish and top with the remaining 1/2 cup of cheese.
  • Place in the oven for 20 minutes. Serve hot with parsley as garnish.

1 pound ground beef
1 onion, chopped
1 stalk celery, chopped
8 ounces egg noodles
1 (15 ounce) can chili
1 (14.5 ounce) can peeled and diced tomatoes
1 (15 ounce) can whole kernel corn, drained
¼ cup taco sauce
1 (1 ounce) package taco seasoning mix

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a large skillet over medium heat, combine the ground beef, onion and celery and saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat and set aside.
  • In a separate saucepan, cook noodles according to package directions. When cooked, drain the water and stir in the meat mixture, chili, tomatoes, corn, taco sauce, and taco seasoning mix. Mix well and place entire mixture into a 10x15-inch baking dish.
  • Bake in the preheated oven until thoroughly heated and bubbling, about 20 minutes.

2 pounds ground beef
1 medium green pepper, chopped
1 medium onion, chopped
9 cups cooked wide egg noodles
1 pound process cheese (Velveeta)
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (11-1/2 ounces) condensed chicken with rice soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup milk
1 teaspoon salt
1/4 teaspoon pepper

Steps:

1 lb ground beef
1 (15 ounce) can tomato sauce
1 onion, diced
1 garlic clove, minced
1 (12 ounce) package wide egg noodles
1 (8 ounce) package cream cheese, softened at room temperature
16 ounces sour cream
4 -5 green onions, sliced
1 dash salt and pepper
8 ounces grated cheddar cheese
1/4 cup grated parmesan cheese

Steps:

  • Brown ground beef,onion, garlic,S&P. Drain beef,return to pan add tomato sauce bring to boil turn to low and simmer for 5 to 10 minutes. Boil noodles according to package directions.
  • In a medium bowl mix cream cheese, sour cream and onions to combine.
  • Spray a 9x13 baking dish with cooking spray.
  • Lightly cover bottom of pan with some of the meat mixture. Begin layering starting with noodle, meat than dollop the top of meat mixture with cream cheese mixture. Repeat layers ending with meat mixture.
  • Bake covered 350 for 45 to 50 minutes or until bubbly and hot in middle. Uncover sprinkle with cheddar and parmasean cheeses return to oven continue to bake uncovered until cheese is melted.

My Mother in Andrews N.C. has made this recipe for years. She makes it every when any of the family may get together. This is my take on this Family Favorite. She calls it her version of baked beans. I never take any home when I take this to any family get together or church socials.

1 green bell pepper (diced)
1 medium onion (diced)
2 tablespoons brown sugar
2 (8 ounce) cans pork and beans
1/2 cup ketchup
1 teaspoon salt
1 teaspoon black pepper
1 lb elbow macaroni (optional)

Steps:

  • In a skillet brown off ground beef and drain
  • put ground beef in a slow cooker with the rest of ingredients and stir together.
  • Place lid on and cook on low for 6 hours.

This recipe was passed down from my grandmother, to my mother and now I make it frequently. It's a big hit with hubby. It is also another one of those recipes that show how they stretched a pound of hamburger to feed a family. A salad goes along nicely with this.

1 lb ground beef
1 (10 3/4 ounce) can condensed tomato soup
2 (14 1/2 ounce) cans cut green beans
4 cups mashed potatoes (or more)
1 egg
1 -2 tablespoon dehydrated onion (to taste)
1/2 teaspoon salt and pepper (to taste)

Steps:

  • Preheat oven to 350.
  • Brown the ground beef. Drain.
  • Empty tomato soup into a casserole dish. (I use an oval pyrex 11X81/2X3).
  • Pour 1/2 of can of green bean juice into soup. Drain rest of green beans and add to dish.
  • Add dehydrated onion, salt, and pepper.
  • Mix.
  • Add drained ground beef into soup mixture. Mix well.
  • Beat egg and add to mashed potatoes. Mix well.
  • Top meat mixture with mashed potatoes.
  • Don't cover green bean mixture completely, leave a little area all around to allow mixture to bubble and not bubble over.
  • Try to make peaks with the potatoes for and extra special look.
  • Bake 30-45 minutes or until potatoes are browned.
