MOM'S BAKED HAM AND PINEAPPLE GRAVY

1 fully cooked ham
1 large can round pineapple
1 small jar marachino cherries drained
1 Tbsp ground cloves
1 c brown sugar
1/4 c butter
1 6 oz can pineapple juice
1 c white wine
2 c water
1/4 c flour
1/2 c water

Steps:

  • 1. Place ham in roasting pan on a rack. Take the round pineapple and drain reserving the juice and with toothpicks place them on the ham. In the middle of the pineapple rounds place a marachino cherry.
  • 2. Place butter, reserved pineapple juice, the canned pineapple juice, wine, brown sugar and 2 cups water in roaster. Roast at 350 degrees until the internal temp of ham is 140 degrees.
  • 3. Place the pan drippings in a saucepan. bring to a boil. Mix the flour and water together and whisk into the gravy until thickened

1 (8 pound) fully cooked bone-in ham
½ cup brown sugar
1 (6 ounce) can apple juice
½ cup all-purpose flour
½ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place ham in a large roasting pan, cut-side down. Press brown sugar evenly onto ham. Pour apple into roasting pan and cover with a lid or aluminum foil.
  • Bake in the preheated oven until ham is heated through, about 80 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Let ham rest for 10 minutes before transferring to a serving plate. Pour remaining pan juices into a saucepan.
  • Combine flour and milk in a jar with a lid; shake until mixture is blended.
  • Bring pan juices to a boil. Slowly whisk flour mixture into the saucepan until gravy is thick, about 5 minutes.

I have been making sweet gravy for so long and I can't remember how I got started. It is one of those recipes that just has always been there. Kids absolutely love it, well so do the grown ups. My husband who doesn't really have a sweet tooth thinks it is the best gravy I make. His first question when I say I am going to bake...

1 whole, shank or butt smithfield low sodium ham
1 can(s) water packed pineapple rings
1 c brown sugar, firmly packed
1 jar(s) maraschino cherries
GRAVY
1/4 c all purpose flour
1/4-1/2 c water
kosher salt and freshly ground black pepper to taste
few dash(es) kitchen bouquet or gravy master for color

Steps:

  • 1. Preheat oven to 325-degrees. Trim ham and score. Place in an open roasting pan with 1 cup water.
  • 2. Bake 12 minutes per pound. Meanwhile, drain pineapple, reserving juice. Mix pineapple juice and brown sugar to make the glaze for the ham.
  • 3. The last hour of baking remove ham from oven and arrange pineapple rings and cherries. Secure with toothpicks. Pour half the glaze over ham and return to oven.
  • 4. Baste several more times with the glaze, using it all up.
  • 5. Remove ham from oven and transfer to either a cutting board or serving platter. While ham is resting skim as much grease as possible from ham drippings in pan.
  • 6. Mix water and flour together along with salt and pepper in a jar or Tupperware shaker. Slowly add to the remaining drippings in the pan. Stirring to make sure all flour is dissolved. Bring to a boil to thicken. If gravy is too thick, add water to thin to desired consistency. If too runny make up a bit more flout and water. Add a couple dashes Kitchen Bouquet or Gravy Master to get desired color.
  • 7. Serve with mashed potatoes and wait for the oohs and ahhs.

GRANDMA'S HAM

This is an easy delicious ham that my grandma has made every year for Christmas, I got to make it for the first time last year for my family and it is always wonderful and beautiful.

1 (12 pound) whole ham
1 liter ginger ale (such as Vernors®)
1 cup brown sugar
1 (8 ounce) can pineapple slices, drained, reserve juice
toothpicks
1 (4 ounce) jar maraschino cherries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.
  • Pour ginger ale into the roasting pan. Rub brown sugar over the ham. Attach pineapple slices to outside of ham with toothpicks. Secure a cherry into the middle of each pineapple slice again using toothpicks. Pour reserved pineapple juice into pan with ginger ale. Tent aluminum foil over the ham.
  • Bake ham in preheated oven for 4 hours. Remove aluminum foil and continue baking another 30 minutes.

1 fully cooked bone-in ham (6 to 8 pounds)
Whole cloves
1 can (20 ounces) sliced pineapple
1/2 cup packed brown sugar
12 maraschino cherries

Steps:

  • Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. Drain pineapple, reserving 1/4 cup of the juice. Combine brown sugar and reserved pineapple juice; pour over ham. Arrange pineapple slices and cherries on ham. Bake, uncovered, 30-45 minutes longer or until a thermometer reads 140° and the ham is heated through.

1 boneless fully cooked ham (4 to 6 pounds)
3/4 cup water, divided
1 cup packed brown sugar
4-1/2 teaspoons soy sauce
4-1/2 teaspoons ketchup
1-1/2 teaspoons ground mustard
1-1/2 cups undrained crushed pineapple
2 tablespoons plus 1 teaspoon cornstarch

Steps:

  • Place ham on a rack in a shallow roasting pan. Bake at 325° for 1-1/4 to 2 hours or until a thermometer reads 140° and ham is heated through. , Meanwhile, in a saucepan, combine 1/4 cup water, brown sugar, soy sauce, ketchup, mustard and pineapple. 2 cups cubed peeled potatoes
1 large carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed fully cooked ham
2 tablespoons chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/2 cups 2% milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. 3 tablespoons drippings, from ham
1 medium sliced onion, that was cooked with the ham
2 tablespoons butter
6 cloves garlic, finely chopped
1/3 cup dry red wine
2 tablespoons all-purpose flour
1 cup water
1 teaspoon ground rosemary or 1 tablespoon of chopped fresh rosemary
3/4 cup crushed pineapple, drained
1/3 cup golden seedless raisins
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken broth
1 tablespoon Dijon mustard

Steps:

  • After roasting ham, remove ham to a platter, pour off fat and juices from roaster reserving 3 tablespoons and discarding the remainder.
  • Return the 3 tablespoons of fat/juices to the roasting pan.
  • Discard the crisp outer layers of onions, leaving the soft portions in the pan.
  • Add butter and garlic and cook over moderately low heat, scraping the onion and browned bits from the bottom of the roaster.
  • Cook until the garlic is fragrant, about 2 minutes.
  • Add the wine and stir, cook for 1 minute.
  • Add 1 cup of water and then whisk in flour making sure that the flour does not go lumpy.
  • Add rosemary, pineapple, raisins, salt and pepper and whisk until well mixed.
  • Stir in chicken broth and mustard and bring to boil over moderately high heat.
  • Continue to boil, whisking occasionally until gravy thickens, about 3 to 4 minutes.
  • If gravy is too thin, mix a bit more flour with cold water and add slowly to the gravy until you achieve the desired consistency.
  • Transfer the gravy contents to a blender and puree' until smooth.
  • Pour gravy into a small saucepan to keep warm over very low heat.
  • Serve gravy when ready to eat.
