MOLLY'S CARROT CAKE WITH SPICED CREAM CHEESE FROSTING



Molly's Carrot Cake with Spiced Cream Cheese Frosting image

Nonstick cooking spray, for the cake pans
2 1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/2 teaspoons kosher salt
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon hawaij (see Cook's Note)
1 1/2 cups neutral oil, such as canola
1 cup packed brown sugar
3/4 cup granulated sugar
4 large eggs
1 tablespoon vanilla bean paste or extract
2 cups shredded carrots
2 tablespoons sesame seeds, toasted
1/2 cup (1 stick) unsalted butter, at room temperature
8 ounces cream cheese, at room temperature
3 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
1/2 teaspoon hawaij
Pinch of kosher salt
Rainbow carrots, peeled into ribbons with a peeler, to decorate
1 rosemary sprig, leaves picked, to decorate

Steps:

  • For the carrot cake: Preheat the oven to 350 degrees F. Grease two 8-inch cake pans with nonstick cooking spray and line with parchment. Set aside.
  • Combine the flour, cinnamon, salt, baking powder, baking soda and hawaij in a large bowl. In a separate large bowl, whisk together the oil, brown sugar and granulated sugar. Whisk in the eggs one at a time, mixing well after each. Whisk in the vanilla.
  • Add the dry ingredients to the wet ingredients using a wooden spoon or rubber spatula and mix until about 90% incorporated. Add the carrots and sesame seeds and mix to incorporate (and by this time, all of the flour mixture should be incorporated as well).
  • Pour the batter into the prepared cake pans and bake until a toothpick inserted into the center comes out clean, about 30 minutes. Cool for 10 minutes in the pans and then turn onto a wire rack to cool completely.
  • For the spiced frosting: Add the butter and cream cheese to a large bowl. Mix with a hand mixer until smooth and combined. Add the powdered sugar and mix until light and fluffy. Then add the heavy cream, vanilla, hawaij and salt. Mix until combined and smooth.
  • Cover the cakes with frosting and stack. Use the carrot ribbons to roll into rose shapes and place on top of the cake. Decorate with the rosemary and serve!

You can take that issue up with Ms. Katzen. Note: CG forgot to tell you when I first posted this recipe that SIL omitted the orange glaze and just lightly sprinkled powdered sugar on top of the cake instead. --fyi--

1 cup butter, at room temperature
1 cup sugar (white or light brown-I used a combination)
3 eggs
2 cups unbleached flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup poppy seed
1 cup milk
1 teaspoon vanilla extract
3 tablespoons fresh lemon juice
1 teaspoon grated lemon rind
1/2 cup orange juice
1 -2 tablespoon sugar
1 tablespoon fresh lemon juice
2 -3 tablespoons dry sherry (optional) or 2 -3 tablespoons orange liqueur (optional)

Steps:

  • Preheat oven to 350°F (175°C). Butter a 10 inch tube or bundt pan.
  • CAKE: Cream the butter and sugar in a large mixing bowl. Add eggs, one at a time, beating well after each.
  • Sift together the dry ingredients in a separate bowl.
  • Add the dry ingredients to the butter/egg mixture alternately with the poppy seeds and milk; beginning and ending with the dry mixture.
  • Stir batter just enough to blend thoroughly, adding the vanilla, lemon juice and lemon rind at the end.
  • Spread the batter into the prepared pan, and bake for about 40 minutes, or until a toothpick inserted in the cake comes out clean.
  • Cool for 10 minutes, then invert onto a pretty cake platter. Allow to cool completely before adding the orange glaze and/or slicing.
  • ORANGE GLAZE: Combine the ingredients in a small saucepan and bring to a boil. Lower heat and simmer uncovered for about 3 minutes.
  • Pour the hot glaze onto the cooled cake. Let stand at least 10 minutes before slicing.

1 cup mashed sweet potatoes
1/4 cup white wine or orange juice

GOOEY MOLLY CAKE (FAT FREE!)

A sticky, moist fruit cake miraculously made without butter or eggs. This is the ultimate guilt-free sweet treat

Number Of Ingredients 15

250g stoned dates, roughly chopped
300ml water
85g plain flour
85g wholemeal plain flour
3 tsp baking powder
2 tsp mixed spice
1 tsp cinnamon
500g mixed dried fruit
80 ml orange juice
(Optional iced fruit topping)
50g sifted icing sugar
1/2 tbsp apricot jam
1/2 tbsp water
3 chopped dried apricots
4 chopped glacier cherries

Steps:

  • Preheat the oven to 180C/160C fan/gas 4. Place the dates in a saucepan, and add the water. Bring the mixture to the boil, reduce the heat and simmer for 5 minutes. Turn off the heat and set aside.
  • Sieve the plain flour, wholemeal flour and baking powder into a large mixing bowl. Add the mixed spice and cinnamon.
  • Pour the wet date mixture into the dry mix, then add the dried fruit and the orange juice. Stir gently with a wooden spoon until well combined.
  • Spoon the mixture into a greasproof paper-lined loaf tin, or divide it between 6 smaller tins. Bake for 40-45 minutes if making one large loaf, or 30 minutes for the mini mollies. A skewer stuck in the centre of the cake should come out clean.
  • Leave the cake to cool on a wire rack for at least an hour. To make the iced topping (if using), melt the jam and water together in the microwave. Add wet mixture to the icing sugar, and stir well. Drizzle over the cake, and sprinkle the chopped apricots and cherries on the top. Alternatively, decorate with ready to roll icing, cut into shapes.

This wonderfully moist and fruity cake contains no refined sugar or fat. It's also free of eggs and dairy products, which means it's suitable for vegans, or anyone trying to cut down a little. Once tested, all who have tried it want the recipe.

250 g stoned dates, roughly chopped
300 ml water
85 g plain flour
85 g whole wheat flour
3 teaspoons baking powder
1 teaspoon ground mixed spice
500 g mixed dried fruit, chopped (figs, sultanas, apricots etc. chopped, I tend to use the three listed above with some red berries)
50 g ground almonds
80 ml orange juice

Steps:

  • Pre-heat oven to 170oC/Gas Mark 3 and line 2 loaf tins with baking parchment (this will make two flattish cakes, for a full-sized cake use just one tin).
  • Put the dates and water in a pan and bring to the boil. Remove the pan from the heat and set aside.
  • Sieve the plain flour, baking powder and mixed spice into a bowl. Add the wholemeal flour, mixed fruit and ground almonds. Stir to combine. Stir in the wet date mixture and the orange juice. Mix well.
  • Spoon into the tin(s). Bake for 50 minutes (170C / gas mark 3) or until a skewer comes out clean. Turn out onto a wire rack and cool.
  • Serve in slices with a nice cup of tea.

MOLLY'S HIGH COUNTRY GARDEN CARROT CAKE

This recipe is so named because my daughter helped me make it, and we used carrots pulled from our garden right before baking. This is also a cake for high altitude (I'm at a little over 5000 feet, so beware if you are 7000+). What I did was take highly rated carrot cake recipe and adjust it for altitude and personal taste (added nutmeg, for example). It did fall a bit in the middle, but I think that's because I couldn't resist opening the oven door at one point (bad!). Nonetheless, everyone said it was the best carrot cake they'd eaten, and it was super moist. I've since edited the amount of vegetable oil down a bit because that might have been what made it a touch heavy. If you want to prepare it the way I did originally, use 1 1/2 cups of oil. Also, I use half grapeseed and half canola oil. I'm convinced the grapeseed oil contributes to an exceptionally moist cake. For the cream cheese frosting, I used recipe #6536 by riffraff, but I've included it here to save time. Frosting was absolutely delicious and I made no changes except to use orange food color (as you can see from the photos).

1/8 cup butter, softened
2 teaspoons vanilla
2 cups powdered sugar
2 tablespoons milk (or cream)

Steps:

  • Preheat oven to 375 degrees. Grease and flour a 9x13 inch pan.
  • In a large bowl, beat together eggs, oil, sugar and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, salt, cinnamon and nutmeg. Add flour mixture to egg mixture. Stir in grated carrots and pecans or raisins if using. Pour into prepared pan.
  • Bake for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack and let cool. Turn the cake over onto a platter and let cool completely before frosting.
  • For frosting, beat cream cheese and butter together with a mixer. Add vanilla and powdered sugar, and beat until combined. If necessary, add a tablespoon or two of milk or cream until the frosting is the consistency you like for spreading.
