Number Of Ingredients 9

5 egg whites
¼ cup white sugar
½ teaspoon salt
5 egg yolks
¼ cup white sugar
½ cup molasses
1 teaspoon lemon zest
2 teaspoons lemon juice
¾ cup cake flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg whites to form moist peaks. Gradually beat in 1/4 cup white sugar and salt. Beat until very stiff and shiny.
  • Beat egg yolks and 1/4 cup white sugar together until very light and fluffy. Beat in molasses, grated lemon rind and lemon juice. Stir in cake flour. Fold meringue gently into batter. Pour batter into an ungreased 9 inch tube pan.
  • Bake for 45 minutes. Remove cake from oven, and invert until cool. Loosen edges, and remove cake from pan.

Grandma "B" wasn't the Duncan kids grandmother, she wasn't any ones. She never married or had children. But she was adopted into the clan and that's all she was ever known by. This recipe is from and for her.

4 eggs separated
1/2 c molasses
1 tsp lemon juice
6 Tbsp sugar
1 c sifted cake flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp mace
1/2 tsp baking soda

Steps:

  • 1. Beat egg yolks very lightly, gradually beat in molasses. Beat egg whites until foamy. Add lemon juice and beat until stiff but not dry. Gradually beat in sugar. Fold into egg yolk mixture.
  • 2. Sift dry ingredients into separate bowl then, fold into egg mixture.
  • 3. Lightly spray pan and pour batter into it. Bake at what she calls a slow oven 325 to 350 for 20-25 minutes. Test to see if done. She didn't think this needed frosting but use your own judgement.

1/2 cup sugar
1/2 cup molasses
1 tablespoon orange rind, grated
1 1/2 teaspoons lemon rind, grated
2 teaspoons lemon juice
1 cup sifted cake flour
1/2 teaspoon salt

Steps:

  • Beat egg yolks until thick and lemon colored. Gradually add sugar and molasses beating after each addition, then beat 3 minutes longer.
  • Stir in orange rind, lemon rind, and juice.
  • Add sifted flour and salt 1/3 at a time. Beat well after each addition.
  • Beat egg whites until stiff, and fold into cake batter.
  • Bake at 325F for 35-40 minutes in an ungreased 9-inch tube cake pan.

1 c. cake flour (sifted)
½ tsp. salt
5 eggs (separated)
½ c. sugar
½ c. Original Molasses
1 tbsp. orange rind (grated)
1 ½ tsp. lemon rind (grated)
2 tsp. lemon juice

Steps:

  • Cook Time: 50 Minutes Yield: 12 Servings Heat oven to 325 degrees. Sift together flour and salt. Beat egg yolks with rotary or electric beater until thick and lemon-colored. Gradually beat in sugar and molasses. Then, by the clock, beat with rotary or beater (low speed) an additional 3 minutes. Stir in orange rind, lemon rind and juice. Add flour mixture, 1/3 at a time, mixing each addition until smooth. When all flour has been added, beat until light and fluffy. Beat egg whites until stiff enough to stand in peaks, but not dry; fold (by hand) into batter. Bake 45 minutes in an ungreased, 9-inch tube cake pan. Turn cake pan upside down on wire cooler. Tips If cake has not dropped out of pan when cold, loosen from sides with spatula.
