1 package (8 ounces) cream cheese, softened
2 tablespoons sugar
2 large eggs, beaten
1 cup 2% milk
2 tablespoons butter, melted
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/8 teaspoon pepper
2 cups frozen corn
1 can (14-3/4 ounces) cream-style corn
1 cup yellow cornmeal
1 cup shredded Monterey Jack cheese
3 green onions, thinly sliced
Optional: Coarsely ground pepper and thinly sliced green onions

Steps:

  • In a large bowl, beat cream cheese and sugar until smooth. Gradually beat in eggs. Beat in the milk, butter, salt, cayenne and pepper until blended. Stir in the remaining ingredients., Pour into a greased 3-qt. slow cooker. Cover and cook on low for 4-5 hours, until a toothpick inserted in the center comes out clean. If desired, top with additional pepper and green onions.

After many years of experimenting, I developed this recipe for corn bread. It has become a favorite with my family and often accompanies our meals of chili, soup or meat dishes. You can adjust the "heat" by the number of jalapeno peppers you use. -Archie Timmons Milwaukie, Oregon

Number Of Ingredients 10

1-1/2 cups cornmeal
1/2 cup all-purpose flour
6 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 large eggs
1 cup buttermilk
1/4 cup olive oil
3 jalapeno pepper, seeded and finely chopped

Steps:

  • In a bowl, combine the first six ingredients. In another bowl, whisk the eggs, buttermilk and oil. Add to the dry ingredients and stir just until moistened. Stir in jalapenos. Pour into a greased 9-in. square baking pan., Bake at 400° for 20-22 minutes or until a toothpick inserted in the center comes out clean. Cut into squares or wedges. Serve warm.

Number Of Ingredients 8

1 c flour
1 c yellow cornmeal
2/3 c sugar
1 tsp salt
3 1/2 tsp baking powder
1 large egg, slightly beaten
1 c milk
1/3 c vegetable oil, corn oil or canola oil

Steps:

  • 1. Preheat oven to 375 degrees. Grease an 8x8 square pan. (Oster Oven: 350 degrees for 18.5 minutes)
  • 2. Combine dry ingredients in a mixing bowl. Add egg, milk, and oil until just blended.
  • 3. Bake at 375 degrees for 25 minutes or until golden brown. Do not over bake. Oster instructions above.

Super Moist Corn Bread with Maple Butter image

Goes great with chili or hearty soups. The maple butter compliments the corn bread, so it's almost like a dessert.

1 1/2 c yellow corn meal
1 Tbsp baking powder
1 tsp baking soda
1 tsp salt
1/3 c sugar
1 can(s) creamed corn
1 c sour cream
3 eggs
1/4 c canola oil
MAPLE BUTTER
1/2 c butter, softened
2 Tbsp powdered sugar
2 or 3 Tbsp pure maple syrup

Steps:

  • 1. Preheat oven to 350, spray 8 inch square pan with cooking spray. In a large mixing bowl combine corn meal, baking powder, baking soda, salt and sugar. Stir to combine completely.
  • 2. Add creamed corn, sour cream, eggs and oil. Mix until completely mixed. Pour into prepared pan.
  • 3. Bake 40 to 45 minutes or until toothpick inserted in center come out clean, and lightly browned on top. Let cool at least 20 minutes before serving. Serve warm with maple butter if desired.
  • 4. To make maple butter: cream together 1 stick of soften butter (1/2 cup), 2 tablespoons powdered sugar and 2 to 3 tablespoons of pure maple syrup.

1 can (8-1/4 ounces) cream-style corn
1 package (8-1/2 ounces) corn bread/muffin mix
1 cup (8 ounces) fat-free plain yogurt
1/4 cup reduced-calorie stick margarine, melted

Steps:

  • In a large bowl, combine all the ingredients. Pour into an 8-in. square baking dish coated with cooking spray. , Bake at 350° for 35-40 minutes or until edges are lightly browned and a toothpick inserted in the center comes out clean. Let stand for 10 minutes before cutting. Serve warm.
