I'm from White Castle country and these are pretty close to the real thing. My kids enjoyed them years ago when I would make this for them.

1 lb ground beef
1/3 cup breadcrumbs
3 tablespoons water
1/4 teaspoon fresh ground pepper
1 egg
1 (1 ounce) envelope Lipton Onion Soup Mix
1 (24 count) package pepperidge farm party rolls
hamburger dills, for topping

Steps:

  • In a large bowl combine ground beef, bread crumbs, water, pepper, egg and onion soup mix. Mix thoroughly.
  • Roll mixture out 1/2-inch thick, to a 10-by-6-inch rectangle between 2 sheets of waxed paper. Turn out onto cookie sheet, removing paper from both sides. Using finger or spoon handle, poke holes in meat.
  • Bake in preheated 400-degree oven 10 minutes. Remove. Pour off any fat. Cut meat into 20 squares to fit rolls. Place one piece of meat into a roll and top with hamburger dills if desired. Serve hot.
  • Makes 5 hearty servings.

Pretty close to the real thing (but nothing beats the real thing). While the real White Castle burgers are actually patties, this recipe comes out more like a loose meat sandwich with the flavors of a White Castle Sliders. Mmmmm! God, I miss these....why can't they be nationwide?

2 pound(s) ground chuck
2 env. - dry onion soup mix
2 cup(s) shredded american or cheddar cheese (i used shredded velveeta)
2 - egg
2 - 4 tablespoon(s) mayonnaise
1 - 2 teaspoon(s) water
1 jar(s) hamburger dill pickle slices
3 trays - pepperidge farm mini buns (or whatever mini buns you can find in a foil tray)

Steps:

  • Freeze buns until hard. While still frozen, take buns out of foil containter & slice in 1/2 (through the buns). Place back in foil/bag. Place back in freezer until ready to use.
  • Preheat oven to 350 degrees F.
  • In skillet, brown meat until only slightly pink. Mix in 1 envelope of onion soup mix. Cool; 30 minutes.
  • Mix all remaining ingredients (except pickles & buns) together, starting with only 2 Tbsp of mayo & if needed add more; mix well.
  • Take all buns out of freezer, spread meat mixture onto bottom 1/2 of all buns.
  • Place one pickle slice on top of meat mixture.
  • Replace top buns on top. See note.
  • NOTE: At this point you can either cook all or some & place the rest back in freezer for future use. Then continue with step 6.
  • Bake 10 - 15 minutes. When ready to serve cut buns/burgers apart. NOTE: If working from frozen burgers, cook 15 - 30 minutes.

These will do when you can't get the real thing. Cocktail sandwiches are filled with a creamy, flavorful corned beef mixture and topped with a pickle.

1 (12 ounce) can corned beef, chopped
1 (8 ounce) container sour cream
1 (1 ounce) envelope dry onion soup mix
2 (8 ounce) packages dinner rolls
1 (16 ounce) jar dill pickle slices, drained

Steps:

  • In a medium bowl, mix together corned beef, sour cream and dry onion soup mix.
  • Cut rolls in half horizontally. Spread bottoms with the corned beef mixture. Replace tops.
  • Microwave 30 to 45 seconds on high heat, until hot and moist. Top with dill pickle slices before serving.
