Cranberry Bread image

One day after we had moved to Pensacola, Wendy, Jay, and I went back to Pascagoula to visit a dear friend, Mrs. Higgy. She was baking various breads. What an aroma! That day she shared several recipes with me. This is one of them. Very special because of the lady who gave it to me!

Number Of Ingredients 12

2 c all-purpose flour
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 c granulated sugar
1 egg, well beaten
2 Tbsp butter or margarine, melted
1/2 c fresh orange juice
grated rind of 1 orange
2 Tbsp hot water
3/4 c chopped pecans
1 c cranberries, quartered

Steps:

  • 1. Sift dry ingredients together, and add egg, butter, orange juice, and hot water.
  • 2. Fold in nuts, cranberries, and orange rind.
  • 3. Bake in two greased loaf pans at 350 for 1 hour or until light brown.
  • 4. Cool and wrap in wax paper. Let ripen in refrigerator for 24 hours or more.
  • 5. SANDY'S NOTE: This bread is so good warm with butter. Also, it freezes well.
