2 large eggs, beaten
2/3 cup 2% milk
1-1/2 cups shredded cheddar cheese
1 cup crushed saltines (about 30 crackers)
1 cup finely shredded carrots
1/2 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
2 pounds lean ground beef
1/2 cup packed brown sugar
1/2 cup ketchup
2 tablespoons Dijon mustard
Minced fresh parsley, optional

Steps:

  • In a large bowl, combine the eggs, milk, cheese, saltines, carrots, onion, salt, garlic powder and pepper. Crumble beef over mixture and mix well. Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 50 minutes. , For glaze, in a small saucepan, bring the brown sugar, ketchup and mustard to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until heated through. Spoon over meat loaf. , Bake 10-15 minutes longer or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before slicing. If desired, top with minced fresh parsley.

MEATLOAF
2 lb ground beef
1 egg
1/2 c rolled oats
1/2 c ketchup
1/2 tsp mustard
1 small green pepper
1/2 c chopped onion
1 tsp worcestershire sauce
salt and pepper
2 - 3 dash(es) any spice you like! i go to the spice cupboard and give them all a sniff then decide
MEATLOAF TOPPING
1/2 c ketchup
1/2 tsp mustard
1 - 1/2 Tbsp brown sugar
1 - 1/2 Tbsp molasses
1 dash(es) steak sauce
MEATBALLS
USE THIS RECIPE FOR MEATBALLS TOO! WHEN MAKING MEATBALLS SUBSTITUTE PLAIN BREAD CRUMBS INSTEAD OF ROLLED OATS.

Steps:

  • 1. In a large bowl mix all the meatloaf ingredients. Take off the jewelry and get your hands into it
  • 2. Spray an oblong shallow pan with non stick cooking spray, shape the mixture into a loaf and center in pan leaving plenty of room all around. Do not use a loaf pan
  • 3. Mix sauce in a cup or small bowl and pour over meatloaf
  • 4. Bake at 350 degrees for 35 minutes. When you smell it... check it. Meatloaf is done when you can see the hot sizzle of the sauce creating a dark circle. Don't let it turn black.
  • 5. To make meatballs instead of meatloaf, substitute plain bread crumbs for rolled oats. Do not make any topping. Roll mixture into small balls and place on a baking sheet Bake at 350 for 15 minutes Remove from oven and drain off grease. Place meatballs a large pan of your favorite sauce

DINER MEATLOAF AND MEATBALLS MIXTURE

This is the recipe that my Mother used for both her meatloaf and meatballs prior to cooking. Very simple, quick and few ingredients needed. Freezes easily!!!! I usually double the recipe and freeze half of the amount. Good for OAMC.

1 onion, minced
1/2-3/4 cup saltine crackers, crushed
1 teaspoon salt
1/2 teaspoon pepper
1 egg, beaten
1/2 cup milk
1 lb ground beef

Steps:

  • Combine onion, saltine crackers, salt, pepper, egg and milk.
  • Add ground beef and mix to combine.
  • At this point, you can shape into loaves, wrap in plastic wrap, place in freezer bag and freeze for later use.
  • If using for meatballs, spread mixture out on plastic wrap in a flat square; put in freezer bag and freeze. I use defrost level in microwave to defrost 1 lb ground beef.
  • For meatloaf, we simply pour a layer of ketchup over the loaf and bake for 45 minutes to 1 hour at 350 degrees Fahrenheit.
  • For meatballs, shape into desired size; brown in fry pan with 1 tablespoon oil. Add meatballs to tomato/spaghetti sauce or chili sauce with grape jelly sauce.
  • Variation: Feel free to add garlic powder or minced garlic and/or Parmesan cheese.

The main point of this Italian meatball-inspired meatloaf is to show you what happens when you make meatloaf like your grandparents did. During the Great Depression, this type of dish was a popular strategy for stretching what little meat you had into as filling a meal as possible.

1 tablespoon olive oil
1 tablespoon butter
1 onion, diced
salt to taste
4 cloves garlic, minced
1 ½ cups very dry white bread crumbs
1 ½ cups milk
2 pounds ground chuck
½ cup chopped fresh flat-leaf parsley
2 ounces grated Parmesan cheese
2 large eggs, beaten
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
3 cups tomato sauce, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Heat olive oil and butter together in a large skillet over medium-high heat. Saute onion with a pinch of salt in hot oil and butter until onion is golden brown and soft, 5 to 10 minutes. Add garlic and saute until fragrant, about 30 seconds. Remove skillet from heat and cool onion mixture to room temperature.
  • Place bread crumbs in a large bowl. Add milk and stir with a fork until combined. Let sit until all of the milk is absorbed into the breadcrumbs, 15 to 20 minutes.
  • Combine ground chuck, cooled onion mixture, parsley, Parmesan cheese, eggs, 2 teaspoons salt, black pepper, and cayenne pepper in a bowl. Grab a handful of breadcrumbs and squeeze very gently to remove excess milk. Repeat with remaining breadcrumbs, transfer breadcrumbs to ground chuck mixture, and discard excess milk. Stir ground chuck mixture until evenly combined.
  • Turn chuck mixture out into prepared baking dish, and shape meat into a 3x4x10-inch meatloaf. Pour tomato sauce over the loaf and into the bottom of the dish.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let meatloaf rest for at least 10 minutes before slicing.

4 slices white bread - soaked with water, squeezed out and broken into tiny pieces
3 eggs
1/2 cup grated Romano cheese
1 teaspoon dried parsley
1/4 cup minced onion (optional)
salt and pepper to taste
3 tablespoons ketchup
4 tablespoons steak sauce

Steps:

  • In a large bowl, combine the ground beef, bread, eggs, cheese, parsley and onion and season with salt and pepper to taste. For meatballs: Form mixture into golf size balls and brown in a large skillet over medium heat for 5 to 10 minutes, or until well browned. Add to your favorite spaghetti sauce and simmer until meatballs are completely cooked through, about 15 to 20 minutes. For meatloaf: Preheat oven to 350 degrees F (175 degrees C). Add 3 tablespoons ketchup to mixture, mix well, form into a loaf and place in a 9x13 inch baking dish. Bake at 350 degrees F (175 degrees C) for 75 to 90 minutes. For burgers: Add 3 to 4 tablespoons steak sauce to mixture, mix well and form into patties. Saute in a large skillet over medium heat for 10 to 15 minutes, or to desired doneness.

I adore meatloaf and with a bit of tweaking to my favorite recipe and shaping them into meatballs, we both are happy. But, he still does not know it is meatloaf. I use leftovers to make meatball subs.

3 celery ribs, finely chopped
1/4 cup carrot, grated
1/2 large onion, finely chopped
1 lb lean ground beef
1 lb lean ground chicken (can substitute lean ground turkey)
1 tablespoon Worcestershire sauce, divided
1/2 cup Italian seasoned breadcrumbs
1/3 cup ketchup
2 teaspoons creole seasoning (Tony Chachere's Original Creole Seasoning)
1 teaspoon all purpose Greek seasoning (Cavender's All Purpose Greek Seasoning)
1 teaspoon garlic powder
2 large egg whites, lightly beaten
1 (8 ounce) can tomato sauce
2 tablespoons chili sauce, Heinz
1 tablespoon ketchup
1 tablespoon light brown sugar, packed
1 teaspoon Worcestershire sauce
1/8 teaspoon crushed red pepper flakes (optional)

Steps:

  • Heat olive oil in a medium nonstick skillet over medium heat; add celery, carrot and onion, and sauté 7 minutes or just until tender.
  • Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into 2" meatballs using an ice cream scoop. Place the meatballs in a foil lined baking dish and bake for 30 minutes at 350 degrees.
  • Stir together 1 tablespoon Worcestershire sauce, tomato sauce, brown sugar, chili sauce, 1 tablespoon ketchup and red pepper flakes until blended; pour evenly over meatballs, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.

32 frozen (do not thaw) miniature potato nuggets (from 28-oz bag)
1/3 cup packed brown sugar

Steps:

  • Heat oven to 350°F. Line broiler pan with foil; spray foil with cooking spray.
  • In large bowl, mix beef, bread crumbs, 1/3 cup of the ketchup, the parsley, onion, salt, pepper and egg. Shape meat mixture into 32 (1 1/4-inch) meatballs, placing 1 potato nugget in center of each. Place meatballs in pan.
  • Bake 25 to 28 minutes or until thoroughly cooked.
  • In large serving bowl, mix remaining 2/3 cup ketchup and the brown sugar. Add hot cooked meatballs, tossing to coat completely. Serve immediately.
