A vibrant, nutrient-packed smoothie made with detoxifying beetroot and fresh fruit. Subtly sweet, perfectly tart, and ready with just 1 blender, 3 ingredients, and 5 minutes.

1/3 cup peeled + chopped raw beet ((organic when possible))
1 ⅓ cup frozen strawberries ((if fresh, add ice // organic when possible))
1/4 ripe frozen banana ((optional // peeled + sliced))
2/3 cup fresh apple juice
Fresh mint or shredded coconut ((for garnish // optional))

Steps:

  • Add beet, strawberries, banana (optional for sweetness) and apple juice to a blender and blend on high until creamy and smooth, scraping down sides as needed.
  • Taste and adjust flavor as needed, adding more banana for sweetness, apple juice to thin, or strawberries for a more intense fruit flavor.
  • Divide between two serving glasses and enjoy. Optional: Garnish with banana slices, fresh mint, and/or shredded coconut. Best when fresh, though leftovers will keep covered in the refrigerator for up to 2 days. Freeze leftovers in ice cube trays or popsicle molds for an afternoon pick-me-up.

The color alone is enough to make me crave this smoothie. The color also tells me that it's high in anthocyanins, flavonoids that are believed to have strong antioxidant properties. You can use raw or roasted beets.

1/2 cup freshly squeezed orange juice
1 cup mixed frozen berries or blueberries
2 tablespoons granola
1/3 cup diced beet, either raw or roasted (50 grams)
1/4 cup plain low-fat yogurt or low-fat coconut milk
1 teaspoon honey or agave syrup
2 or 3 ice cubes
sliced orange for garnish (optional)

Steps:

  • Place all of the ingredients in a blender and blend for 1 full minute. Pour into a glass, garnish with an orange slice and enjoy

When fresh berries aren't in season, use frozen berries in drinks like this brilliantly colored, high-fiber smoothie. The beet adds a wonderful earthiness, plus antioxidants and fiber.

2 cups mixed frozen red berries such as strawberries and raspberries
1 small red beet, peeled and thinly sliced
1 tablespoon fresh lemon juice
1 tablespoon honey
2 teaspoons unrefined extra-virgin coconut oil

Steps:

  • Put the berries, 1/2 cup cold water, beet, lemon juice, honey and coconut oil into a blender. Blend on high until smooth, turning off the blender and pushing down on the ingredients with a spatula or wooden spoon as needed to help the blending process. Add 1 to 2 tablespoons more water if needed to adjust consistency.
