BERRY SAUCE

A fantastically versatile recipe for a thick berry sauce that goes perfect with cheesecake, waffles, ice cream, and more.

Number Of Ingredients 6

2 cups frozen mixed berries*
2-6 tablespoons granulated sugar (, to taste)
1 teaspoon lemon juice
5 grates of lemon zest
1 tablespoon water
1/2 tablespoon cornstarch

Steps:

  • In a medium-sized saucepan over medium heat, place berries, 2 tablespoons sugar, lemon juice, and zest. Cook for about 5 minutes, mixing occasionally until the liquid (which is the juice released from the fruit) thickens. At any point, you can add water if the sauce it too thick, or more sugar to make it sweeter.
  • In a small cup, whisk together cornstarch and water until smooth, then add it to the saucepan. Let the mixture simmer for a few minutes longer until it reaches the desired consistency. Sauce will thicken further as it cools.

2 tablespoons sugar
Grated zest 1 lemon
Grated zest 1 lime
1 cup water
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly squeezed lime juice
1/4 teaspoon pure vanilla extract
1/2 pint raspberries, rinsed
1/2 pint blueberries, rinsed
1/2 pint strawberries, rinsed, tops trimmed, halved or quartered, if large
1 pint vanilla frozen yogurt

Steps:

  • In a small saucepan, combine the sugar, citrus zests, and water. Bring to a simmer and cook until the sugar has dissolved. Remove from the heat and add the citrus juices and vanilla. Combine the berries in a bowl. Pour the warm syrup over the berries and marinate at room temperature for 30 minutes. Serve marinated berries over a scoop of vanilla frozen yogurt.

MIXED BERRY COULIS

8 ounces (230 g) fresh strawberries, rinsed and hulled
1 cup (115 g) raspberries, fresh or frozen
1 cup (115 g) blackberries, fresh or frozen
3 to 4 tablespoons (45 to 60 g) sugar

Steps:

  • Slice the strawberries and toss them in a bowl with half of the raspberries and half of the blackberries. Purée the remaining berries in a blender or food processor with 3 tablespoons (45 g) of sugar. Mix the berry purée with the sliced berries. Taste, then add the remaining tablespoon of sugar if you wish. Serve chilled or at room temperature.
  • Variation
  • Add a splash of liqueur, such as Grand Marnier, Cognac, or kirsch to the sauce.
  • Storage
  • This sauce can be stored in the refrigerator for up to 3 days.
