Nonstick cooking spray, for the baking dish
2 sticks (1 cup) salted butter
1/4 heaping cup unsweetened cocoa powder
1 cup boiling water
2 cups all-purpose flour
2 cups granulated sugar
1/4 teaspoon kosher salt
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 large eggs
One 10-ounce bag mini marshmallows (about 6 cups)
1 3/4 sticks (14 tablespoons) salted butter
6 tablespoons whole milk
1/4 heaping cup unsweetened cocoa powder
4 cups sifted confectioners' sugar
1 cup chopped toasted pecans
1 tablespoon vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with cooking spray.
  • In a saucepan, melt the butter. Whisk in the cocoa powder, then the boiling water. Let it bubble up for a few seconds, then turn it off and set it aside.
  • In a large bowl, mix together the flour, granulated sugar and salt. Pour the chocolate mixture over the flour mixture and stir a few times to start to cool the chocolate.
  • In a separate small bowl, mix the buttermilk, baking soda, vanilla and eggs. Pour over the flour-chocolate mixture and mix until everything is combined. Pour into the prepared baking dish and bake until a toothpick inserted in the center comes out clean, about 20 minutes. Remove from the oven and turn on the broiler.
  • Sprinkle the marshmallows over the cake, then return the dish to the oven to broil until the marshmallows start to turn golden, about 1 minute. Set aside to cool.
  • For the icing: Melt the butter in a saucepan, then whisk in the milk and cocoa powder. Whisk in the confectioners' sugar in 4 to 5 additions. Stir in the nuts and vanilla.
  • Pour the icing all over the marshmallows, allowing some marshmallows to remain visible. Let the icing set, then deliver or serve.

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Combine flour and cocoa; gradually add to creamed mixture until blended. Fold in the pecans., Transfer to a greased 13x9-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool for 3 minutes (cake will fall in the center). Spoon the marshmallow creme over cake; carefully spread to cover top. Cool completely., For frosting, in a small bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in the cocoa, vanilla and enough milk to achieve frosting consistency. Fold in pecans. Spread over marshmallow creme layer. Store in the refrigerator.

Steps:

  • In a large sauce pan over low heat, melt 1 cup of the butter with the cocoa. Stir often. Remove from heat and add white sugar, beat well. Beat in eggs one at a time.

Steps:

  • Preheat the oven to 275 °F.
  • Grease a Bundt pan with 2 teaspoons of the butter, then lightly dust with the cocoa.

  • Warm the bourbon and coffee in the top of a double boiler or a stainless steel bowl set over a pan of simmering water for 5 minutes.

Steps:

  • Preheat the oven to 350 degrees F and lightly grease a 9 by 13-inch cake pan.

CAKE INGREDIENTS
2 c flour
2 c sugar
2 tsp baking soda
1/4 tsp salt
1/3 c cocoa
1 c buttermilk ( or 1 tbsp vinegar to 1 cup milk, let sit for an hour)
1 c vegetable oil
1 c boiling water
1 tsp vanilla
2 eggs
ICING INGREDIENTS
1 c sugar
2 Tbsp light corn syrup
1/4 c milk
2 Tbsp butter
1/2 pkg chocolate chips (6 oz.)
1 tsp vanilla
miniature marshmallows
1/3 c chopped nuts, optional

Steps:

  • 1. Turn the oven on to 350 degrees. Grease and flour a 9x13 inch pan.
  • 2. Mix together flour, sugar, soda, salt and cocoa. Then, add buttermilk, oil, boiling water, vanilla and eggs. Beat thoroughly and pour into the greased and floured pan. (If the batter seems a little thin, you are right on track! :-) Bake 35-45 minutes, testing with a toothpick to determine doneness.
  • 3. Start the icing 5 minutes before the cake is done. Combine sugar, corn syrup, milk and butter in a saucepan and boil 2 minutes (no longer) then add the chocolate chips, vanilla, and nuts. Mix until the chocolate chips are melted.

6 large eggs, separated, room temperature
1 cup sugar

  • Chocolate Cookie Crust:Preheat oven to 300 degrees. Lightly spray bottom and sides of a 10-inch springform pan with cooking spray.

Cake will deflate in center as it cools. Wrap tightly in plastic; refrigerate at least 3 hours and up to overnight.
  • Chocolate Pudding:Whisk together sugar, cocoa, cornstarch, and salt in a medium saucepan. Whisk in egg yolks and milk.   • Whipped Cream Topping:In the bowl of a mixer fitted with the whisk attachment, beat cream on medium-high speed until soft peaks form, about 1 minute. 1 cup butter
2 cups white sugar
½ cup unsweetened cocoa powder
4 eggs
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
¼ cup coarsely chopped walnuts
¼ teaspoon salt
½ cup miniature marshmallows
½ cup butter
⅓ cup milk
¼ cup unsweetened cocoa powder
½ teaspoon vanilla extract
4 cups confectioners' sugar

Steps:

  • Put 1 cup butter or margarine into large mixing bowl. Microwave on high 1 to 1 1/2 minutes until melted.
  • Stir in 2 cups white sugar and cocoa. Add eggs and vanilla; beat vigorously until well-blended. Stir in flour, nuts and salt. Let batter "rest" for 10 minutes.
  • Pour into an 11 3/4 x 7 1/2 pan. Place on a plastic trivet or inverted saucer in oven. Microwave on medium 9 minutes, rotating dish 1/2 turn after 3 minutes.
  • Microwave on high 3-5 minutes rotating dish 1/2 turn once, until top is mostly dry with moist spots and pick comes out clean. Sprinkle marshmallows evenly over top of cake. Let stand about 5 minutes until marshmallows are slightly melted.
  • To Make Frosting: Melt 1/2 cup butter in large bowl. Stir in 1/3 cup milk, 1/4 cup cocoa and 1/2 teaspoon vanilla. Add 4 cups confectioners' sugar and beat vigorously until smooth. Spread evenly over marshmallows. Let stand on flat surface 30 minutes until slightly warm or cool completely. Makes 16 very rich servings as this is a very dense cake.

¼ cup dark rum
5 (1 ounce) squares unsweetened chocolate
1 cup butter
2 eggs

Steps:

  • Place coffee and rum in a saucepan and heat to simmer. Add the chocolate and the butter or margarine. Cook, stirring, occasionally, until both are melted. Remove from the heat.
  • In a large bowl, beat the eggs. Gradually beat in the sugar until the mixture is thick. Beat in the vanilla and the chocolate mixture. In another bowl, stir together the flour, baking soda, and salt. Beat into the chocolate mixture.
  • Turn the batter into a greased and floured tube pan. Bake in a preheated 275 degrees F (135 degrees C) oven for 1 1/2 hours, or until the cake tests done with a toothpick. Transfer to a rack to cool. Makes 16 servings.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a medium-size mixing bowl, mix the flour, baking powder, 1/3 cup cocoa powder and 1/4 teaspoon salt together and set aside.
  • In a large bowl, cream together 1 cup of butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the 2 teaspoons vanilla. Add the flour mixture and mix until combined. Finally, fold in 1 cup chopped nuts.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into the cake comes out clean. Remove from oven and spread marshmallows on top. Return to oven for 10 minutes or until marshmallow are melted. Allow to cool before frosting.
  • To Make Frosting: In a medium mixing bowl, combine 1/2 cup butter, 1/3 cup cocoa, confectioners sugar, evaporated milk, vanilla and pinch of salt. Mix until smooth and spread on cake, then sprinkle with 1 cup chopped nuts.

2 teaspoons baking soda
1 teaspoon salt
1 cup unsalted butter, cut into pieces
6 ounces unsweetened chocolate, finely chopped
1/2 cup brewed espresso or very strong coffee
1 1/2 cups sugar
1/2 cup bourbon
4 large eggs
2 teaspoons vanilla extract
For glaze
6 tablespoons unsalted butter, cut into pieces
6 tablespoons (packed) golden brown sugar
2 teaspoons instant espresso powder
6 tablespoons whipping cream
1 1/2 cups powdered sugar, sifted
2 tablespoons bourbon
Vanilla ice cream

Steps:

  • Make cake:
  • Preheat oven to 350°F. Butter 12-cup Bundt pan. Mix flour, baking soda and salt in medium bowl. Combine butter, chocolate and brewed espresso in heavy medium saucepan. Stir over low heat until chocolate and butter melt (mixture may look curdled). Remove from heat. Add sugar and bourbon. Whisk until sugar dissolves and mixture is smooth. Using electric mixer, beat eggs and vanilla in large bowl until blended. Gradually beat in chocolate mixture. Add flour mixture and stir just until blended. Transfer batter to pan; smooth top.
  • Bake cake until tester inserted near center comes out clean and cake begins to pull away from sides of pan, about 45 minutes. Cool in pan on rack 15 minutes. Invert cake onto rack; cool completely.
  • For glaze:
  • Stir butter, golden brown sugar and instant espresso powder in small saucepan over medium heat until butter melts. Stir in cream. Simmer 1 minute. Remove from heat. Gradually add powdered sugar, whisking until smooth. Mix in bourbon. Cool slightly. Place cake atop rack on baking sheet. Slowly drizzle glaze over cake, allowing glaze to run down sides of cake and cover as much of cake as possible. Spoon any glaze drippings from baking sheet over cake. Let stand 30 minutes. (Can be prepared 2 days ahead. Cover with cake dome. Let stand at room temperature.)
  • Serve cake with vanilla ice cream.

FROSTING
1 stick butter
1/3 c cocoa powder
1/2 c buttermilk
16 oz confectioners sugar
1 tsp vanilla extract
1 pinch salt
3/4 c chopped nuts

Steps:

  • 1. Preheat oven to 350º Lightly grease 9x13 baking pan
  • 2. CAKE DIRECTIONS: Sift flour, sugar, baking soda and salt into a medium mixing bowl. Set aside Melt butter in small sauce pan; when melted, add cocoa and water and bring to a boil Add boiling cocoa mixture to dry ingredients and stir until just combined Add buttermilk, eggs, and vanilla and stir until smooth Pour into greased pan and bake 35-40 minutes until toothpick inserted in center comes out clean Remove from oven onto cooling rack !!DO NOT REMOVE CAKE FROM PAN!! Sprinkle marshallows evenly onto hot cake

2 stick butter or margarine
1/2 c cocoa, unsweetened
2 c granulated sugar
4 eggs, slightly beaten
1 1/2 c all-purpose flour
1/8 tsp salt
1 1/2 c chopped pecans
1 small bag miniature marshmallows (you can tell that i've had this recipe for a long time because it calls for a .29 package!)
CHOCOLATE FROSTING
1 box sifted confectioners' sugar
1/2 c milk (recipe calls for whole milk, but i use 2%)
1/3 c cocoa, unsweetened
1 stick butter or margarine, softened

Steps:

  • 1. Melt butter and cocoa together.
  • 2. Remove from heat and stir in sugar and beaten eggs. Mix well.
  • 3. Add flour, salt, chopped nuts, and vanilla; mix well. DO NOT USE A MIXER; BEAT BY HAND WITH A WOODEN SPOON.
  • 4. Spoon batter into a greased 13"x9"x2" pan and bake at 350 for 35 to 45 minutes.
  • 5. Spread marshmallows on top of hot cake. Put the cake back in the oven just long enough for the marshmallows to melt together.
  • 6. Chocolate Frosting: Combine sugar, milk, cocoa, and softened butter.
  • 7. Mix until smooth and spread or drizzle over marshmallows on hot cake.
