Number Of Ingredients 11

1 cup water
3/4 cup sugar
3 tablespoons lime juice
1-1/2 teaspoons chopped fresh mint
3/4 teaspoon aniseed
Pinch salt
5 cups cubed watermelon (about 1/2 melon)
3 cups cubed cantaloupe (about 1 medium melon)
3 cups cubed honeydew (about 1 medium melon)
2 cups peach slices (about 2 peaches)
1 cup fresh blueberries

Steps:

  • In a small saucepan, bring the first six ingredients to a boil. Boil for 2 minutes; remove from the heat. Cover and cool syrup completely. , Combine the fruit in a very large bowl; add syrup and stir to coat. Cover and chill for at least 2 hours, stirring occasionally. , Drain before serving. Spoon into watermelon bowl or 8-qt. serving bowl.

Ok, this may sound a bit different, but this is REALLY good. Light and healthy. A simple dressing and a wonderful summer dish. Great for picnics as it can easily be served chilled which is best, or room temp which makes it perfect for picnics.

Number Of Ingredients 8

2 seedless cucumber (peeled & sliced in 1/4-inch rounds and then halved)
2 cups honeydew melon (cut in bite size cubes)
2 tablespoons red onions, minced fine
2 tablespoons of fresh mint, fine chopped
2 tablespoons key lime juice (regular lime juice can be substituted)
1/2 teaspoon honey
salt
pepper

Steps:

  • Salad -- In a large bowl, add the mint, red onion, lime juice, honey, cucumber and honeydew melon and toss well. The liquid from both the melon and cucumber will be enough to combine with the simple dressing. Season with salt and pepper to taste. Chill at least 15 minutes.
  • Serve -- Just ENJOY! A light refreshing salad.

½ lime, juiced
¼ cup chopped fresh mint leaves
3 tablespoons chopped fresh cilantro
1 pinch white sugar, or to taste

Steps:

  • Gently combine honeydew, lime juice, mint, cilantro, and sugar together in a bowl. Refrigerate at least 2 hours before serving.

Quality produce makes this dish, Charentais melon, heirloom tomatoes and salty prosciutto marry beautifully. Ideal as a sharing platter starter for a summer dinner party

about 500g different-coloured heirloom tomatoes , chopped into large chunks (smaller ones left whole or halved)
1 Charentais melon , segmented and cut into chunks roughly the same size as the tomatoes
12 slices prosciutto - the best you can afford
handful mint , leaves picked, shredded
crusty bread , to serve
1½ tbsp sherry or red wine vinegar
3 tbsp olive oil
1 tsp honey

Steps:

  • To make the dressing, whisk all the ingredients together in a bowl and set aside.
  • Toss the tomatoes and melon together in a bowl with a little dressing, some sea salt and black pepper. Loosely lay the prosciutto over a platter and pile the tomatoes and melon on top. Drizzle with extra dressing, scatter with mint and serve straight away with crusty bread.
