Spring in South West France is a gastronomic feast.....all our local markets are overflowing with luscious new vegetables and fruits. My favourites are the little "wild woodland" fraises des bois strawberries, which I am growing in my own garden this year. I thought I would share this pretty way of serving these deliciously sweet strawberries with you - I call them a flavour explosion of strawberry essence! If you cannot get fraises des bois, use seasonal and small strawberries instead. You can buy barquette tins quite easily in France, but if you can't find them locally, this recipe will work equally well with ordinary round tart tins, as I have used for the photo. Alternatively you could make one big tart. (Barquette tins are shaped like small gondola boats!)

250 g plain flour
50 g caster sugar
175 g butter, chilled and cut into small pieces
1 large egg, beaten
1 kg wild strawberry
200 g creme fraiche
1 1/2 tablespoons icing sugar
1/2 teaspoon vanilla essence
2 tablespoons caster sugar
1 cup water (1 wineglass)

Steps:

  • First make your pastry. Place the flour and sugar in a food processor and whizz for thirty seconds. Turn the processor back on and add the chilled butter and finally the egg. If the pastry needs a little more liquid add a spot of water until the dough rolls cleanly round the bowl. Wrap your pastry in Clingfilm and chill for half an hour whilst you prepare the tartlet tins and strawberries.
  • Taste one of your strawberries to judge their sweetness. If they are sweet and luscious, as fraises des bois generally are, they will only need hulling, rinsing and a final dressing with the sugar syrup. If they're a little too tart, rinse them, lay them on a plate and sprinkle with caster sugar to give them a bit of a boost.
  • Pre-heat the oven to 200C/400F/Gas 6.
  • Butter your barquette or round tart tins, take the pastry out of the fridge and roll it out. Line each tin and prick the bottoms well. Bake in the oven for about fifteen to twenty minutes, but keep an eye on them, they may need pricking again. Leave to cool.
  • Make a simple sugar syrup by boiling two tablespoons of caster sugar with the water for two minutes or so. Allow to cool. Mix the icing sugar & vanilla essence with the crème fraiche and chill.
  • When you are ready to serve your barquettes/tarts, spread them with crème fraiche mixture; sit the strawberries on top and brush with the glaze.

1/2 cup butter, room temperature
2 1/2 tablespoons sugar
1/2 cup finely chopped walnuts
1 egg, beaten to blend
1 teaspoon almond extract
1 1/3 cups all-purpose flour
2 egg yolks, room temperature
2 1/2 tablespoons sugar
2 tablespoons cornstarch
1/2 teaspoon vanilla
2/3 cup milk
6 tablespoons butter, room temperature
4 cups strawberries, hulled and rinsed
1 cup red currant jelly
1 cup whipping cream
1 teaspoon icing sugar

Steps:

  • Preheat oven to 350°F; butter a 10 or 11 inch tart pan with removable bottom.
  • For pastry: Cream butter with sugar in large bowl; mix in walnuts; blend in egg and almond extract; stir in flour until completely incorporated; press into pan (bottom and side); refrigerate 30 minutes; bake until golden-brown, 15-20 minutes; cool to room temperature.
  • For custard: Beat yolks, sugar, cornstarch and vanilla in medium bowl until pale and thick; heat milk in medium saucepan; beat milk into yolk mixture until smooth; return to saucepan and whisk over medium heat until very thick, about 5 minutes; return to bowl and beat, adding butter 1 tablespoon at a time and beating until melted before adding next tablespoon; beat until cool; refrigerate until chilled.
  • To whip cream: Beat whipping cream with icing sugar until soft peaks form.
  • To assemble: Spread custard evenly over crust; starting from outer edge, arrange strawberries in concentric circles, placing as close together as possible; refrigerate 30 minutes; melt jelly (don't forget - jelly is seedless, if you haven't got any, use apricot jam) in small saucepan over low heat; brush gently over berries, covering completely; refrigerate at least 2 hours; Serve with whipped cream, if desired.

1 1/3 cups flour
3 tablespoons sugar
1/2 teaspoon salt
1/4 cup canola oil
1/4 cup 2% low-fat milk
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda

1/2 cup sugar
1 egg
1/2 cup nonfat vanilla yogurt
1/2 cup white chocolate instant pudding
1/2 lb fresh strawberries
4 fresh kiwi fruits
1 teaspoon confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees
  • Mix the crust ingredients, using only enough milk to get the consistency you want.
  • On a sheet of wax paper, roll the dough out into a large circle. Use the wax paper to gently flip the crust into a 9-inch tart pan. Sprinkle a little flour on the bottom of the crust dough and set aside.
  • Combine all cake ingredients, beginning with the dry. Pour cake batter over the crust dough.
  • Bake for about 15 minutes.
  • Meanwhile, prepare the instant pudding and refrigerate.
  • Next, wash and chop the strawberries, peel and slice the kiwis.
  • Once all components are ready and the crust has cooled to room temperature, you can assemble the tart.
  • Use a spatula to smooth the pudding evenly over the cake layer.
  • Place the fruit on top in any pattern you like. I typically start in the center and work my way outwards. Finally, sprinkle confectioner's sugar on top of the fruit.
  • Serve immediately or refrigerate. It should last a day or two in the fridge.

This recipe from *French Bistro and Cafe Cooking* by Pierre-Yves Chupin has a stunning presentation & would be perfect as an elegant dinner party finale, but is also a surprisingly easy make-ahead fix. Per the intro: "Strawberry tart is a classic dessert & a perennial favorite at Chez Serge in Saint-Owen, France. This version is enriched w/an almond cream filling, giving it a deliciously smooth texture & delicate flavor." This dessert looks amazing & for me would not require such excess, but a rose champange was suggested as ideal to pair w/it. *Enjoy* !

1/2 cup sugar
1 cup ground almonds
8 tablespoons unsalted butter, softened
1 egg
3/4 cup flour
1 tablespoon rum or 1 tablespoon kirsch
7 ounces puff pastry (200 gm)
18 ounces fresh strawberries (1.1 lb or 500 gm)
powdered sugar (for dusting)

Steps:

  • Preheat oven to 350F (180C).
  • Make filling by mixing the sugar & ground almonds together in a bowl. Then blend in the softened butter, egg, flour & rum (or kirsch). Set aside in a cool place.
  • Make bases by rolling out the puff pastry into 4 circles of equal diameter (approx 4-in). Prick the circles well using the tines of a fork, leaving a 1/4-in circular border. Spread almond cream filling over the pastry & allow to sit for a few minutes.
  • Bake for 20 minutes, remove from oven & allow to fully cool. Wash, drain, hull & thinly slice strawberries while bases are cooking & cooling.
  • You are essentially done at this point & can set aside the bases & strawberries for final assembly at your pleasure. To Assemble: Arrange strawberries on the bases in rosette shapes, sprinkle w/powdered sugar & serve immediately. (So easy! Was I right or not?).
