MINI MEATLOAF

Tender and juicy oven baked mini meatloaf topped with a sweet and tangy glaze. Easy to make and filled with flavor. The perfect amount for one!

Number Of Ingredients 12

1 tablespoon olive oil
2 ounces chopped onions
1 clove garlic (, minced)
1 teaspoon dried thyme
½ teaspoon kosher salt
¼ teaspoon coarsely ground black pepper
6 ounces ground beef
½ teaspoon Worcestershire sauce
1 large egg
3 tablespoons breadcrumbs
¼ cup ketchup
1 tablespoon molasses

Steps:

  • Heat oven to 350° F (177°C).
  • Heat oil in a medium-sized skillet over medium heat. Add the chopped onions and cook for 2 minutes.
  • Add in the chopped garlic, dried thyme, salt, and pepper. Cook, stirring occasionally for an additional minute. Remove skillet from the heat and set aside.
  • Place the ground beef in a medium-sized bowl. Pour the seasoned vegetables over the meat. Add in the Worcestershire sauce, the egg and the breadcrumbs. Using a large spoon, mix the meat and all of the ingredients together until fully combined. Shape into an oval and transfer to a lightly greased small baking dish.
  • Bake in the preheated oven for 30 minutes.
  • Remove the meatloaf from the oven and whisk together the ketchup and molasses in a small bowl. Spoon over the top of the meatloaf and bake for an additional 15 minutes.
  • After removing the meatloaf from the oven, cover with aluminum foil or a plate and let the meatloaf rest for at least 10 minutes before slicing.

This is super quick and easy to make and it's not dried out, it's undeniably moist and flavorful. My brother came up with this but I've tweaked it a little bit and haven't made meatloaf in the oven since! I hope you enjoy it.

Number Of Ingredients 11

1 1/2 lbs lean ground beef
1/2 cup onion, minced
1 medium carrot, grated
1 egg
1/4 cup milk
1/4 cup ketchup
1/8 cup mustard
2 pieces white bread, torn up into small pieces
salt & pepper, to taste
2 tablespoons ketchup
2 teaspoons barbecue sauce

Steps:

  • In large bowl mix the onion, carrot, egg, milk, ¼ cup ketchup, mustard, bread, salt and pepper, then mix in the ground beef.
  • Place into large glass dish and shape. (a large pie plate works good).
  • Cover with a paper towel and microwave on high for 15 minutes. (Turn four times while microwaving if you don't have a carousel).
  • Remove from microwave, throw away the paper towel and remove most of the grease from the dish.
  • Spread meatloaf with additional ketchup and a little barbecue sauce as desired. (I use about 2 tablespoons ketchup and 2 teaspoons barbecue sauce).
  • Cover with a new paper towel and microwave on high for 5 minutes.
  • Remove from dish and place on serving plate.
  • Slice and enjoy!

1 1/2 lbs ground beef or 1 1/2 lbs ground turkey
8 ounces tomato sauce
1 egg, slightly beaten
1 cup quick-cooking rolled oats
1/4 cup minced onion
1/2 teaspoon minced garlic
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup catsup
1 teaspoon Worcestershire sauce
1 tablespoon brown sugar
1 tablespoon brown sugar

Steps:

  • Combine first 8 ingredients in a bowl and mix with hands until well mixed.
  • Pat into a 9 x 5 loaf pan.
  • Cook in microwave on full power 6 minutes.
  • While cooking for the first 6 minutes, combine sauce elements into small bowl and whisk until mixed. At the end of the first 6 minutes pour sauce over the loaf and continue cooking for an additional 5-7 minutes. (For a firmer loaf. decrease tomato sauce to 6 ounces).

¼ cup brown sugar
1 teaspoon prepared mustard
2 eggs, lightly beaten
1 onion, minced
¼ cup minced green bell pepper
¼ teaspoon garlic powder
½ cup saltine cracker crumbs
1 teaspoon salt
¼ teaspoon ground black pepper
2 pounds extra lean ground beef

Steps:

  • In a small bowl, mix together the tomato sauce, brown sugar, and mustard; stir until the brown sugar has dissolved.
  • In a large mixing bowl, mix the eggs, minced onion and green pepper, garlic powder, cracker crumbs, salt, and black pepper; mix in the ground beef and half the tomato sauce mixture, stirring until the meat loaf is thoroughly combined. Place the meat mixture into a 2-quart microwave-safe baking dish. Spread the remaining tomato sauce mixture over the meat loaf.
  • Cook in microwave oven on High setting until set, the juices run clear, and meat is no longer pink inside, 10 to 15 minutes depending on power of microwave oven. An instant-read meat thermometer, inserted into the center of the loaf, should read 165 degrees F (75 degrees C). Drain any grease from the dish as soon as loaf is cooked; allow to stand, uncovered, 10 to 15 minutes before serving.

1 pkg lipton onion-mushroom soup mix
1 1/4 c pepperidge farm dry stuffing
3/4 c water
1/3 c ketchup
2 lb ground beef
2 large eggs
1 c diced and sauteed onion/bell pepper mix (optional)

Steps:

  • 1. Combine soup mix, stuffing, water, and ketchup in a large bowl and allow to sit for 10-15 minutes. Then mix in all remaining ingredients. Shape into a loaf or a ring in a 9" glass pie plate. Cover with waxed paper.
  • 2. Cook in microwave for about 20 -24 minutes. If no turntable, turn meatloaf a quarter turn every 5 minutes. (This time is for a 900-1000 watt oven. If yours is a 1200 watt oven, less time is required.)
  • 3. Allow to stand about 10-12 minutes before slicing.
