You can make mini fruit pizzas to resemble cards or dice by using square and rectangular cookies, strawberries cut vertically to look like hearts and blueberries for the dots on the die.

1 cup unsalted butter, softened
2 cups white sugar
2 eggs
½ teaspoon vanilla extract
4 cups all-purpose flour
1 tablespoon baking soda
¼ teaspoon salt
¼ cup buttermilk
1 (8 ounce) package cream cheese, at room temperature
1 cup frozen whipped topping, thawed
1 cup confectioners' sugar
1 pint strawberries, sliced from top to bottom
1 pint blueberries

Steps:

  • In a large bowl, cream together the butter and white sugar until smooth. Beat in the eggs one at a time until each is blended in. Stir in the vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture, alternating with the buttermilk, mixing just until blended. If the dough is really sticky, you may need more flour. Cover and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into squares and rectangles using a pizza cutter or knife. Place cookies about 2 inches apart on ungreased cookie sheets.
  • Bake for 6 to 8 minutes in the preheated oven, until the edges begin to brown lightly.
  • While the cookies are baking, make the frosting. In a medium bowl, beat the cream cheese and confectioners' sugar until soft and creamy. Stir in the whipped topping until well blended.
  • Spread a thin layer of the frosting onto each cookie. Make heart cards by placing strawberry slices onto the rectangular cookies, and dice by placing blueberries onto the square cookies. Refrigerate until serving, or serve immediately after frosting. They are best when served cold.

1/2 cup butter (1 stick) or 1/2 cup margarine (1 stick)
1/2 cup powdered sugar
2 teaspoons vanilla
1 cup flour
3 teaspoons water
1 (8 ounce) package cream cheese (room temperature)
1 (8 ounce) container Cool Whip
cut up fruit (your choice, strawberries, blueberries, peaches, kiwi or cantaloupe are a few choices)

Steps:

  • Cookie Dough:.
  • Preheat oven to 300.
  • Combine all ingredients, you might have to add a little extra water if mixture is to dry.
  • After all ingredients are mixed roll into 3/4 inch balls, and place in an ungreased mini muffin tin.
  • Press dough into bottom of tin. Bake for 25 to 30 minutes.
  • After cookies come out of oven set aside and let cool completely, when cooled take them out of tin.
  • Topping:.
  • Combine cream cheese and Cool Whip until smooth.
  • Put Cool Whip frosting in a large Ziploc bag, and clip corner with scissors. Frost each of the cookies.
  • Then add fruit on top.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1 tablespoon Gold Medal™ all-purpose flour
1/3 cup butter, softened
1 egg
3 cups small flower-shaped cut assorted fresh fruit
2 cups whipped cream
1/2 cup Betty Crocker™ Rich & Creamy cream cheese frosting (from 1-lb container)
1 teaspoon vanilla

Steps:

  • Heat oven to 375°F. In medium bowl, stir together cookie mix, butter and egg until soft dough forms. On floured surface, roll out dough until 1/4 inch thick. Cut dough with 3-inch round cutter; place rounds on ungreased cookie sheet.
  • Bake 5 to 7 minutes or until edges are light golden brown. Cool on cookie sheet 2 to 3 minutes. Remove from cookie sheet to cooling rack. Cool completely, about 10 minutes.
  • Using small cookie cutters or a paring knife, cut fruit into small flower shapes. Set aside.
  • In medium bowl, beat together whipped cream, cream cheese frosting and vanilla with whisk. Spread over each cookie pizza. Stack a variety of fruit flowers on top of each. Serve immediately.
